Easy French Toast Bake with Fruit is perfect for weekend and holiday breakfast! Make it the night before and pop in the oven the next morning!

Steps:
- Coat a 9-inch x 13-inch baking pan with cooking spray.
- Arrange bread pieces in a single layer in the baking pan.
- Whisk together the eggs, egg whites, milk, and vanilla in a mixing bowl. Pour over bread.
- In a small bowl, stir together brown sugar and cinnamon until evenly combined.
- In a medium bowl, toss fruit with half of the brown sugar mixture.
- Arrange the fruit on top of the bread in an even layer. Sprinkle the remaining brown sugar over everything.
- Cover with plastic wrap and chill overnight in the fridge. (for a minimum of 4 hours)
- Remove bake from the fridge and uncover.
- Preheat oven to 350 degrees F. Bake for 45 minutes. Remove from oven and cut into 8 slices. Top with extra fresh fruit if desired.

FRENCH TOAST CASSEROLE
Steps:
- Cut up the bread slices into bite-sized bits.
- Put the bread pieces, sugar, and cinnamon in a large bowl.
- In another bowl, mix in all of the wet ingredients (milk, coffee creamer, eggs, melted butter, maple syrup, and vanilla).
- Gently pour the liquid onto the bread pieces.
- Fold over carefully until all of the bread has absorbed the liquid.
- Use a large spoon and gently transfer the wet bread into a large resealable freezer bag.
- Squeeze all the air out and seal. Lay flat and freeze.
- If you are using the oats and cinnamon topping, put that in a medium-sized resealable bag and staple it to the large bag above the seal.
- On the day of baking, move from the freezer to the fridge the night before or thaw for 30 minutes so you can pour it out of the bag into a 9x13 glass oven-friendly container.
- Sprinkle the oats topping and bake at 400° for 30-40 minutes until the top is golden brown.
- Allow it to cool for 5-10 minutes.
- Pour maple syrup over the entire casserole or over individual portions when serving.
- Cool completely.
- Put a lid on the container and save it in the fridge for 5 days.
- Reheat before serving.

- Preheat an oven to 250 degrees F (120 degrees C).
- Combine the thawed strawberries with their juice and the blueberries in a bowl; set aside. Beat together the softened cream cheese and confectioner's sugar until smooth; set aside. Whisk the milk, eggs, vanilla, and cinnamon in a shallow bowl.
- Melt butter over medium heat in a large skillet or griddle. Dip bread into egg mixture, coating thoroughly. Cook until well-browned on both sides, about 5 minutes. Place cooked slices on baking sheet and place in oven to keep warm until ready to serve.

- Lightly grease 9x13 pan.
- Cut the bread in 3/4-inch slices.
- Layer in the pan, fitting snugly. In a bowl, lightly beat the eggs, sugar and vanilla.
- Stir in the milk.
- Pour over bread; turn bread slices over.
- Cover and refrigerate overnight.
- In the morning, pre-heat the oven to 375 degrees.
- In a bowl, combine the flour, brown sugar and cinnamon.
- Cut the butter in bits, add to the mix and rub together to make a crumb topping.
- Remove the pan from the fridge, carefully turn the bread pieces over and scatter mixed berries evenly over the bread.
- Sprinkle with crumb topping.

Steps:
- Pre-heat oven to 350 degrees F.
- Cut a pocket in each slice of bread by using a serrated knife to cut to about a half inch of the sides& bottom of each slice.
- Mix together the fruit spread& cheese& fill pockets with a tbsp of the fruit/cheese mixture each.
- Mix the eggs, milk, vanilla, cinnamon& nutmeg together in a bowl or baking pan large enough to hold all the slices in a single layer.
- Soak the slices on one side for a few minutes, repeat once with the other side.
- Heat a large fry pan on med/low heat and add 1 tsp each of the butter& oil.
- Cook the bread two at a time for approx. 5-7 minutes; turn the slices a number of times until both sides are evenly browned.
- Place on baking sheet in oven for 2-3 minutes to finish. DON'T OVERBAKE!
- Meanwhile, repeat steps 5, 6 & 7 with the remaining slices.
- Serve warm& top with pure maple syrup. These are also delicious plain.

- Cook the fruit, sugar, wine and liqueur for 15 minutes, then strain well. Add a little corn syrup for a thicker sauce.
- Mix together the eggs, vanilla, almond extract, cinnamon, sugar, and cream. Dip the bread in the mixture to coat thoroughly. Heat the butter in a pan over high heat, and cook the bread until golden brown on both sides. Serve with Fruit Sauce.
