This is my son's favorite cake, and when he asks for it for his special birthday cake, he usually gets it! It's easy to make, and a good dessert to take to potlucks or social functions. There's always someone who wants the recipe, and I'm more than happy to oblige.

CAKE:
1-1/2 cups sugar
2 cups all-purpose flour
2 large eggs
1 teaspoon vanilla extract
2 tablespoons lemon juice
2 teaspoons baking soda
3/4 teaspoon salt
1 can (16 ounces) fruit cocktail with syrup
TOPPING:
1/2 cup packed brown sugar
1/2 cup sweetened shredded coconut
SAUCE:
1/4 cup evaporated milk
3/4 cup sugar
1 teaspoon vanilla extract
1/2 cup butter, cubed
1/2 cup sweetened shredded coconut
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine all cake ingredients; mix well. Pour into a 13x9-in. pan and sprinkle with topping ingredients. Bake at 350° for 35-40 minutes. Meanwhile, combine all sauce ingredients in a medium saucepan and bring to a boil. When cake is done and still warm, pour sauce over cake. Cool to room temperature.

1 egg
1 cup fruit cocktail, drained
1 cup white sugar
1 cup all-purpose flour
1 teaspoon baking soda
⅛ teaspoon salt
1 cup white sugar
½ cup evaporated milk
½ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9-inch square pan.
  • With an electric mixer, mix egg, fruit cocktail, 1 cup sugar, flour, soda, and salt in order given. Pour into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.
  • To make sauce: bring to a boil 1 cup sugar, evaporated milk, and butter or margarine. Serve hot on cake.

1 cup all-purpose flour
2/3 cup sugar
1/2 cup chopped walnuts or pecans
1/2 cup golden raisins
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg
1 can (8-3/4 ounces) fruit cocktail, undrained
Confectioners' sugar, optional
BUTTER SAUCE:
1/3 cup sugar
1/4 cup butter, cubed
1/4 cup evaporated milk or half-and-half cream
1/4 teaspoon vanilla extract

Steps:

  • In a medium bowl, combine flour, sugar, nuts, raisins, baking soda, cinnamon and salt. In a small bowl, beat egg; add fruit cocktail. Stir into dry ingredients just until moistened. Pour into a greased and floured 8-in. round baking pan. Bake at 325° for 55-60 minutes or until cake tests done. Cool in pan for 5 minutes before removing to a wire rack. Cool completely. Dust with confectioners' sugar if desired. For sauce, combine sugar, butter and milk in a small saucepan; bring to a boil. Cook and stir for 3 minutes. Remove from the heat; stir in vanilla. Serve warm over the cake. Refrigerate leftover sauce.

Steps:

  • Adjust an oven rack to medium position. Preheat oven to 350 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.
  • In a large mixing bowl, stir together all cake ingredients until well combined. Pour into prepared baking dish and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Meanwhile, make the topping by combining all the ingredients in a saucepan and bring to a boil over medium heat. Continue to boil, stirring constantly, for 2 minutes. Pour over hot cake and smooth evenly with an offset spatula.
  • Top individual slices of cake with a dollop of Reddi Wip and Maraschino cherries.

1 ½ cups white sugar
1 (15.25 ounce) can fruit cocktail with juice
1 ¾ cups all-purpose flour
1 ½ teaspoons baking soda
1 cup white sugar
½ cup butter
⅔ cup evaporated milk
1 cup flaked coconut
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, and baking soda; set aside.
  • In a large bowl, combine the eggs, sugar and fruit cocktail. Beat in the flour mixture. Spread batter into prepared pan.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Prick the top with a fork and spread on topping while still hot.
  • To make the topping: In a saucepan, combine 1 cup sugar, butter, evaporated milk and coconut. bring to a rolling boil over medium heat.

My mom made this cake for us when I was growing up in the 50's and 60's. I made it for my family and it became a favorite of theirs too! Easy to make and very moist without the use of oil.

1 medium can(s) fruit cocktail, in syrup
1 c white sugar
1 egg
1 c flour
1 tsp baking soda
1/2 tsp salt
TOPPING,
1/2 c chopped walnuts
1/2 c brown sugar, firmly packed

Steps:

  • 1. Place fruit cocktail, including juice, into large bowl. Add white sugar and egg. Mix well, and then add dry ingredients.
  • 2. Mix until well blended and spoon into a well greased 9" square cake pan.
  • 3. Stir together chopped nuts and brown sugar. Add to top of cake batter. Lightly pat down. Bake until done, about 40 minutes at 350 degrees until lightly browned. Toothpick test does not work with this recipe.

1 can(s) fruit cocktail, in syrup

FROSTING
3/4 c sugar

2/3 c butter

Steps:

  • 1. Combine flour, sugar, baking soda, baking powder,and salt, Then add fruit cocktail with juice and 2 eggs. Bake in greased and floured 13x9 pan at 350 degrees for 1 hour and 15 minutes.
  • 2. Mix sugar, milk, vanilla, and butter. Mix well, place on medium burner and when it comes to a rolling boil, lower heat and cook 7 minutes or til thickened. Add nuts and coconuts. Pour over warm cake.

2 cups flour
1 1/2 cups sugar
2 teaspoons baking soda
1/2 teaspoon salt
2 well beaten eggs
1 (17 ounce) can fruit cocktail, juice included
1/2 cup brown sugar
1/2 cup chopped pecans
2/3 cup canned evaporated milk
3/4 cup sugar
1/2 cup butter
1/2 teaspoon vanilla

Steps:

  • Mix together by hand the flour, sugar, soda, salt, eggs and fruit cocktail with juice.
  • Do not over mix and do not beat.
  • Pour into a 9x13 cake pan sprayed with pam.
  • Sprinkle 1/2 cup brown sugar and 1/2 cup chopped pecans over top of cake.
  • Bake at 325 degrees for 40 minutes.
  • Remove and place on a rack to cool.
  • While cooling (15 minutes) in a medium pan bring to a slow boil the evaporated milk, sugar and butter.
  • Once the butter is melted and the slow boil is reached remove from heat and stir in the vanilla.
  • With a carving fork poke"lots" of holes in the cake and slowly pour butter sauce evenly all through cake.
