Plain cupcakes are for the birds: Dress yours up like an adorable parrot with just a few slices of fruit.

Number Of Ingredients 11

8 ounces cream cheese, at room temperature
1 stick unsalted butter, cubed, at room temperature
2/3 cup confectioners' sugar, sifted
1/2 teaspoon vanilla extract
Pinch of kosher salt
3 drops green food coloring
24 cupcakes in brightly colored liners
1 mango, peeled, cut into 72 small slices (1 1/2 inches tall and 1/3 inch wide)
48 small blueberries
3 bananas, cut into 48 (1/4-inch-thick) rounds
24 red seedless grapes, split lengthwise

Steps:

  • Put the cream cheese and butter in a large bowl and beat with an electric mixer until fluffy and smooth. Gradually beat in the confectioners' sugar, vanilla, salt and food coloring.
  • Spread 1 tablespoon of the frosting on each cupcake. Fan 3 mango slices along the top edge for the crest. Use a dab of frosting to secure a blueberry to each banana slice; place two on each cupcake for the eyes. Add 2 grape slices for the beak.

This delicious cake comes together fast, starting with a cake mix. I think the flavor is very subtle, and the cake is quite moist. The original recipe had a syrupy sweet icing on it, but I added the coconut/brown sugar on top instead, and I think it makes this a nice snacking cake. (*NOTE: I used a fruit cocktail I've found that has guava, mango, etc., and found the pieces a little large, so I chopped it up a bit before adding to mixture. The regular fruit cocktail with grapes, etc., should be fine w/o that)

1 (18 1/4 ounce) box yellow cake mix (I use the kind with pudding in the mix, Betty Crocker)
1 (16 ounce) can fruit cocktail, undrained
1 cup coconut, plus
1/2 cup coconut
2 eggs
1/2 cup brown sugar

Steps:

  • Preheat to 325*.
  • Combine cake mix, fruit cocktail with juices, 1 cup of coconut and eggs in a large mixer bowl.
  • Blend, then beat at medium speed for 2 minutes.
  • Pour batter into greased 9x13 pan, or two 8x8 pans.
  • Sprinkle batter evenly with remaining 1/2 cup of coconut, and then 1/2 cup of brown sugar.
  • Bake at 325* for 45 min (if 9x13 pan; about 30-35 min for two pans).
  • Serve warm or room temp; stays moist for several days.

1 package strawberry cake mix (regular size)
2 cups sour cream
2 large eggs
1/3 cup strawberry preserves
1 can (16 ounces) vanilla frosting, divided
Red food coloring, optional
Red nonpareils and pink jimmies, optional

Steps:

  • In a large bowl, combine the cake mix, sour cream and eggs. Beat on low speed for 30 seconds; beat on medium for 2 minutes. , Place 27 paper or foil liners in heart-shaped or standard muffin tins. (If using standard tins, tuck a 1/2-in. foil ball or marble between the liner and cup to form a heart shape.) Fill cups half full with batter. Using the end of a wooden spoon handle, make an indentation in the center of each; fill with 1/2 teaspoon preserves. Top with remaining batter. , Bake at 350° for 22-27 minutes or until a toothpick inserted in the cake portion comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , If desired, place a third of the frosting in a small bowl; tint pink with red food coloring. Frost cupcakes with white frosting; if desired, pipe edges with pink frosting. Decorate with nonpareils and jimmies if desired.

Steps:

  • In a large mixing bowl, combine all ingredients. Place the paper muffin cups in the muffin tins. Pour the batter into the cups. They should be two-thirds full. Bake for 20 to 25 minutes or until done in a preheated 350 degree oven.
