PEACH COBBLER FOR TWO
Everyone notices a special taste in this cobbler. It's orange peel, which enhances the color and gives this traditional dessert a delicious distinction. Cobblers usually serve a large group, so it's convenient to have a recipe that makes just enough for two. - Betty Clark, Mount Vernon, Missouri

BERRY COBBLER FOR TWO
I just bought a cookbook "Small Batch Baking" and this was the second thing I tried. My ramekins are 7 oz each. I used frozen raspberries because that's what I had, even though the recipe calls for mixed berries I think any frozen fruit could be subbed. If you think your berries are tart adjust sugar to your tastes. This is also super easy to double or triple. I'm single and just don't need a bunch of leftover dessert sitting around trying to get my attention!:)

FRUIT COBBLER
My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

- In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice, and vanilla extract together until thoroughly combined. Spread filling evenly into prepared pan.
- Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick! You could also use a food processor, too. While slowly stirring, slowly drizzle in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this– just flatten the dough in sections and cover most of the berries.
- Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.

- For the peaches: in a medium bowl, mix together the peaches, lemon juice, sugar, cornstarch, cinnamon, nutmeg, and clove. Divide evenly between the ramekins. Bake 8-10 minutes or until peaches are hot and start to bubble.
- Meanwhile, for the batter: In another medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Whisk in the melted butter, buttermilk, and vanilla. Spoon over the baked peaches, spreading the dough to cover as much as you can.
- In a small bowl, combine the cinnamon and sugar. Sprinkle on top of the cobblers. Bake 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean. Cool for 5 minutes then serve immediately with ice cream on top.
