My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

1 ¼ cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
¼ teaspoon salt
1 cup milk
½ teaspoon vanilla extract
4 cups fresh peaches, pitted and sliced

Steps:

  • Melt butter or margarine in a 9 x 13 inch pan. Set aside to cool.
  • Stir together flour, sugar, salt, and baking powder. Mix in milk and vanilla. Pour batter over melted butter. DO NOT MIX OR STIR. Spoon fruit with juice over the batter. DO NOT MIX OR STIR.
  • Bake at 350 degrees F (175 degrees C) for 55 minutes.

1 1/2 cups cranberries
1/2 cup dried tart red cherries
1/2 cup water
2/3 cup granulated sugar
3 tablespoons all-purpose flour
2 pounds large plums, pitted and cut into bite-size chunks and/or medium pears, cored and cut into bite-size chunks
Cobbler Topping:
1 1/2 cups all-purpose flour
1/2 cup regular or quick-cooking rolled oats
2 tablespoons packed brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cream of tartar
6 tablespoons butter
1/2 cup milk plus additional for brushing
Brown sugar
Purchased cinnamon ice cream

Steps:

  • In a 10-inch cast iron skillet or other oven-going skillet combine cranberries, cherries, and water. Stir in sugar and the 3 tablespoons flour. Cook and stir over medium heat until mixture is hot and bubbly. Stir in plums; cover to keep warm. Preheat oven to 375°F. In a large bowl combine the 1 1/2 cups flour, oats, brown sugar, baking powder, salt, and cream of tartar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center of the flour mixture. Add 1 cup milk all at once. Using a fork, stir just until mixture is moistened. Gently fold and press dough against the side of the bowl until it comes together. If the dough sticks to the side of the bowl, sprinkle with a little additional flour. Lightly flatten small portions of dough with your hands. Lay atop filling in skillet. Brush dough lightly with milk. Sprinkle with additional brown sugar. Bake 35 to 40 minutes or until topping is golden brown and filling is bubbly. (If necessary, cover top loosely with foil during the last 10 minutes to prevent over browning.) Let cool for 30 minutes before serving with cinnamon ice cream.

  • For the ice cream: Whip the cream with an electric mixer until stiff peaks form.
  • Pour the condensed milk into a separate bowl and gently fold in the whipped cream until smooth and lump-free. Pour into a pan and sprinkle with the cinnamon cereal. Press a sheet of wax paper to the surface (to avoid crystals) and freeze until solid, up to 6 hours.

Steps:

  • Preheat oven to 375°F Spray an 8x8 baking dish with nonstick cooking spray and set aside.

1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (20 ounce) can canned peaches, with fruit and juice divided

Steps:

  • Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
  • Mix flour, sugar, and milk.
  • When your butter is melted pour your mixture into pan directly on top of butter.
  • Place peach/fruit slices into pan on top of cobbler.

1/2 cup margarine, melted
5 slices white bread, crusts removed and cut into strips

1 1/2 teaspoons cinnamon (optional) or 1 1/2 teaspoons cardamom (optional)

Steps:

  • Mix first 4 ingredients together and set aside.
  • Place drained fruit in a buttered 8x8 pan and top with bread strips.
  • Pour sugar mixture over bread and fruit and sprinkle with cinnamon if desired.
  • Bake at 350 degrees for 35-45 minutes or until golden brown.
  • Great topped with ice cream or whipped cream on top.
  • Note: I dont usually measure the fruit, I just fill the bottom of the pan. Frozen fruit that has been partially defrosted works great as does soft fresh fruit- harder fruits such as apples or pears should be precooked until softened for best results. Drained canned fruit works great for this too. One large can (29 oz) is a perfect amount.
