Steps:
- In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
- Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Steps:
- Slice star fruit crosswise with slicer into 1/16-inch-thick slices.
- Bring sugar and water to a boil in a 2-quart heavy saucepan, stirring until sugar is dissolved.
- Add star fruit, then remove from heat and let stand, uncovered, 15 minutes.
- Preheat oven to 200 F with rack in the middle.
- With a strainer set over a pan or bowl, strain and drain 15 minutes.
- Reserve syrup for another use.
- Arrange star-fruit slices in 1 layer on silpat in 11x17" pan. Use parchment paper if you don't have siplat.
- Bake until dry, 1 to 1 1/4 hours.
- Immediately transfer chips to a rack to cool.

Steps:
- Prepare Lemon-Water Solution by combining Lemon & Water in Spray Bottle (any unused portion can be stored the fridge for future use.)
- Layer sliced fruit on your Dehydrator tray/screen. Do not overlap fruit.
- For non-citrus fruits, spray generously with lemon water solution (you only need to do the tops).
- Place trays in Dehydrator and set temperature to 115-120 degrees (you can do it higher, but the nutrient loss will be greater).
- If your Dehydrator has a timer, set timer for approximately 10-12 hours and check fruit regularly for desired doneness. Rotate trays if necessary and set-timer so that the fruit will not over dehydrate.
- Store finished fruit in an airtight container (ie. mason jar, ziplock bag, etc...). Keeps best in fridge, and even longer if using a food sealer.

- Heat oven to 200 degrees F. Combine sugar and spice in a small bowl and mix until evenly combined.
- Stem fruit and, using a mandoline, slice lengthwise into paper-thin slices, about 1/16-inch thick. Line 2 baking sheets with parchment paper or silicone baking mats and evenly space fruit on the sheets.
- Sprinkle sugar mixture over fruit and bake until lightly brown and dry and crisp around edges, about 2 hours. Let cool on baking sheets. Chips can be stored at room temperature in an airtight container for up to 10 days.

- Preheat the oven to 200 degrees F.
- Mix the sugar and cinnamon in a bowl; reserve.
- Place each type of sliced fruit on a separate silicone-lined baking sheet. Sprinkle with some of the cinnamon-sugar.
- Bake the apples until the edges curl, about 2 hours. Transfer to a cooling rack. The chips will crisp as they cool.
- Bake the mango and pineapple slices for 30 minutes, then flip and sprinkle with more cinnamon-sugar. Continue to bake, flipping the mango and pineapple slices every half hour, for 2 1/2 more hours. Transfer to a cooling rack. The chips will crisp as they cool.
- Serve the fruit chips with the cheese cups.
