A different twist for a wonderful cheese ball. I got this recipe from a co-worker's wife. Thanks Maggie!

1 (8 ounce) package cream cheese, softened
2 tablespoons honey
½ (8 ounce) package mild Cheddar cheese, shredded
1 (6 ounce) package dried mixed fruit, chopped
1 cup chopped pecans

Steps:

  • In a medium bowl combine cream cheese and honey; beat until smooth. Stir in cheese and chopped fruit; mix well.
  • Form into a ball and roll in chopped nuts. Chill for at least 3 hours.

Sweet, fruity apricots, figs and cranberries are tucked inside a three-cheese log for a lovely look.

3/4 cup finely chopped pecans
1 package (8 ounces) cream cheese, softened
2 ounces Muenster cheese, shredded (1/2 cup)
1/3 cup shredded fresh Parmesan cheese
1/2 cup Cheddar cold-pack cheese food (from 8-ounce container), softened
1/2 cup chopped dried apricots
1/4 cup chopped dried figs
1/4 cup chopped dried cranberries
Crackers, if desired

Steps:

  • Line square pan, 8x8x2 inches, with 16-inch piece of waxed paper, leaving ends overhanging. Spread pecans evenly over waxed paper in bottom of pan; set aside. Beat cream cheese, Muenster cheese and Parmesan cheese in medium bowl with electric mixer on medium speed until well mixed. Spoon cheese mixture over pecans, using teaspoon; spread evenly. Spoon Cheddar cheese food over cream cheese layer, using teaspoon; spread evenly. Sprinkle with dried fruits; press in lightly.
  • Lift ends of waxed paper to remove cheese mixture from pan and place on smooth surface. Roll up cheese mixture, jelly-roll style. (If cheese is too soft to roll, return to pan and refrigerate about 20 minutes or until firm.) Wrap cheese log in waxed paper; place in resealable plastic food-storage bag. Refrigerate about 30 minutes or until firm. Serve with crackers.

Cherry Cheese Log is a delicious holiday party appetizer made with cream cheese, maraschino cherries, and rolled in pecans.

10 ounces maraschino cherries
24 ounces cream cheese (, 3 blocks (packages) softened)
2 tablespoons sugar
1 orange (, zested)
1/2 teaspoon ground ginger
1 cup pecans (, chopped )

Steps:

  • Drain the cherries, then rinse them very well.
  • Chop the cherries, rinse them again and dry them with a paper towel until the paper towel is not becoming red every time it touches them (the cherries must be very dry and well rinsed).
  • In your stand mixer (or a large bowl with a hand mixer), beat the cream cheese, sugar, orange zest, and ground ginger until well combined then barely fold in the cherries.
  • Scoop the cream cheese mixture onto a large 15x30 piece of plastic wrap.
  • Shape the cream cheese into a log like mixture then close the plastic wrap over it and twist the edges in opposite directions until you have a tight log shape.
  • Refrigerate for at least 1 hour.
  • Remove the cheese from the refrigerate and unroll from the plastic wrap then roll it in the pecan pieces until well coated.

1 cup vanilla yogurt
1/2 cup sour cream
2 tablespoons honey
1/2 teaspoon ground cinnamon
2 cups fresh strawberries, halved
1-1/2 cups green grapes
8 ounces cubed cheddar or Monterey Jack cheese, or a combination of cheeses

Steps:

  • For dip, mix first 4 ingredients. On 12 wooden skewers, alternately thread strawberries, grapes and cheese cubes. Serve immediately or refrigerate.

CHRISTMAS CHEESE LOG

250 g cream cheese (room temperature)
200 g feta
2 tsp dijon mustard
2 tsp lemon juice
1 tsp lemon zest
1 tsp balsamic vinegar
1 clove garlic, crushed
1/2 cup dried cranberries
1/2 cup dried apricots (chopped finely)
3 TBSP chopped fresh herbs (I used parsley & chives)
Ground black pepper to taste (be generous)
3/4 cup pistachios/pecans to coat

Steps:

  • Pre-heat the oven to 180°C/350°F and place the nuts on a baking tray.
  • Bake for 8 minutes (keep a close eye on them around this time as they can burn quickly) and remove from the oven. Chop the nuts coarsley (or use a food processor) and set aside.
  • Using a stand or hand mixer (or a bowl and wooden spoon) combine the softened cream cheese and feta. Add all remaining ingredients except for the nuts and combine.
  • Cut a large piece of baking paper and place on the bench. Tip the cheese mixture onto the baking paper and form it into a log shape. Roll it up in the baking paper, shaping as you go, tuck in the ends of the paper and place in the fridge for 3 hours (or longer) to set.
  • Once the cheese log has set, remove from the fridge. Spread the chopped nuts on a rimmed baking tray, carefully unwrap the log and roll it in the chopped nuts until it is completely coated.
  • Serve on a platter with crackers and toasted bread or wrap tightly in gladwrap and store in the fridge for up to a few days until needed.

  • In a medium bowl, mix the Cheddar cheese, cream cheese, pecans, mayonnaise, lemon juice and garlic. Form into 2 or 3 logs. Sprinkle each log with paprika. Chill the logs until firm, about 2 hours.
  • Slice each log into rounds as needed, and serve with crackers.

1/4 cup shelled pistachio nut
250 g cream cheese (at room temperature)
50 g dried apricots, finely chopped
3 spring onions, finely chopped
50 g sun-dried tomatoes, drained and finely chopped
black pepper
3 tablespoons flat leaf parsley, finely chopped

Steps:

  • Preheat oven to 200°C.
  • Bake the pistachio nuts on a lined baking tray for 5 minutes, or until golden brown.
  • Cool, then chop finely.
  • Beat the cream cheese in a medium size bowl until smooth.
  • Fold in the dried apricots, spring onions, sun dried tomatoes and black pepper.
  • Combine the pistachio nuts with the parsley and spread on a sheet of baking paper.
  • Form the cheese mixture into an 8 inch log and roll in the nut mixture.
  • Wrap in plastic wrap and refrigerate for 2-3 hours or until firm.
  • Serve with a mix of crackers.
