Fruit Cake Made With Pillsbury Bread Mix Recipes
FRUITCAKE (FROM QUICK BREAD MIX)
Use 3 boxes of Quick Bread Mix. Pumpkin, Date, Nut, Cranberry are some of the choices. You can mix and match any of these and end up with a great fruitcake. Makes 11 mini loaves.

- Combine bread mix and water. Mix well. Add remaining ingredients. Mix. Spoon into greased and floured pans. Bake 1 hour at 350*.

Steps:
- Heat oven to 350°F. Grease bottom only of 9x5- or 8x4-inch loaf pan with shortening or cooking spray. In large bowl, beat sugar and butter with spoon until light and fluffy. Stir in buttermilk and eggs until well blended.
- In small bowl, mix flour, nuts, baking powder, baking soda and salt. Add to buttermilk mixture; stir just until dry ingredients are moistened. Pour into pan.
- Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan. Cool completely, about 1 hour. Wrap tightly and store in refrigerator.

- Heat oven to 350°F. Grease and flour bottom and sides of 12-cup Bundt® or 10-inch tube pan. In large bowl, combine water, oil and eggs; beat well. Add all remaining ingredients except corn syrup; stir with spoon until combined. Pour into greased and floured pan.
- Bake at 350°F. for 1 hour 25 minutes to 1 hour 45 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 30 minutes. Remove from pan. Cool 1 hour or until completely cooled.
- Wrap tightly in plastic wrap or foil. Refrigerate at least 8 hours. Store in refrigerator for up to 2 weeks or in freezer for up to 3 months.
- Just before serving, heat corn syrup until warm. Brush over fruitcake. If desired, decorate with additional candied fruits and nuts or as desired.
