APPLE BATTER PUDDING
This is much nicer than it perhaps sounds, its proper stick to your ribs material and makes a quick cheap supper time pudding, it is in fact a sweet type of Yorkshire pudding. The golden syrup and evaporated milk are essential if you want the full experience especially as the pudding itself is not very sweet. Old fashioned pudding goodness mmmm!

Steps:
- Heat the oven to 180C/160C fan/gas 4 and butter a deep baking dish (about 20 x 30cm and 5cm deep). Tip the flour, baking powder, sugar, lemon zest and a pinch of salt into a large bowl. Put the melted butter, milk, eggs and passion fruit pulp in a jug and whisk together. Pour the wet ingredients into the dry and mix together using a spatula until you have a smooth batter. Pour the batter into the prepared dish.
- For the sauce, whisk the sugar, lemon juice, passion fruit pulp and lemon curd together in a heatproof bowl with 300ml boiling water from the kettle. Carefully pour the sauce directly over the batter in the dish, then bake for 40-45 mins until the top is set and golden, and the sauce is bubbling up at the edges. Serve warm with vanilla ice cream.

BREAD AND BUTTER PUDDING
This simple bread pudding is an easy way to use up those bits and pieces that seem to lie around the pantry. Save a fortune and make this tasty pudding. I like to serve this with custard sauce but it goes well with whipped cream, ice cream, or also great on its own.

- Butter the bread on both sides and cut into triangles. Arrange a single layer of buttered bread in the bottom of the greased pan, slightly overlapping the triangles. Sprinkle with 1/2 of the sugar and all of the currants. Arrange the remaining bread on top, then sprinkle with remaining sugar.
- Beat milk, eggs, and nutmeg together. Pour over the bread and press down firmly to compress the pudding and help the bread absorb the milk mixture.
- Bake in the preheated oven until golden brown and set, about 30 minutes.

- Heat the oven to 190ºC/375ºF/Gas 5. Butter the baking dish, sprinkle it with sugar, and turn the dish so it is evenly coated, discarding excess sugar. Peel, core and slice the pears in crescents. Sprinkle the slices with the lemon juice so they don't discolor and spread them in the baking dish.
- Make the batter: Put the sugar in a bowl, add the eggs and whisk for 1-2 minutes until light and frothy. Stir in the flour and salt just until smooth. Don't beat the batter at this stage as this will make the pudding tough. Stir in the milk, and strain the batter over the pears to remove any lumps of flour.
- Bake the pudding for 55-65 minutes until it is puffed and brown. It should be firm in the center and will have started to pull away from the sides of the dish. Let it cool for 5-10 minutes, then sprinkle with the alcohol. (The aroma from the hot alcohol is a treat in itself.) Dust it generously with confectioners' sugar and serve warm.
