This is another great holiday bread to make that belonged to my mother. She sometimes served this one, and it is a very old recipe. This bread is good the first day, but better the second. You may use dates instead of raisins if you wish.

2 cups sifted all-purpose flour
4 teaspoons baking powder
½ teaspoon salt
½ cup white sugar
¾ cup chopped walnuts
1 cup raisins
1 tablespoon orange zest
1 egg
1 cup milk
2 tablespoons butter, melted

Steps:

  • Grease an 8 x 5 inch loaf tin thoroughly. Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, beat the egg well. Mix in milk and melted butter or shortening.
  • Sift flour, baking powder, and salt together into a mixing bowl. Add sugar, nuts, raisins and orange rind; mix well. Blend egg mixture into fruit and nut mixture until flour is just moistened. Turn batter into greased loaf tin, and allow to stand for 20 minutes.
  • Place pan in the center of the oven. Bake for 55 to 60 minutes. Turn bread out on wire rack, and cool for several hours before slicing.

This is really easy, I got the recipe from a Pillsbury Cook Book. Perfect for a Brunch. They say it serves 10...but...make it and see how many it serves at your house!!

Number Of Ingredients 6

1 (11 ounce) can French bread, loaf crusty
1 cup dried apricot, chopped
1/2 cup dates, chopped
1/2 cup almonds, slivered
1/2 cup powdered sugar
1 -2 teaspoon milk

Steps:

  • Heat oven to 350 degrees. Spray cookie sheet with cooking spray. Carefully unroll dough onto cookie sheet. Sprinkle with apricots, dates and almonds evenly over dough. Starting with long side, roll up; seal edges. Fold ends under; seal.
  • Bake 26 to 30 minutes or until deep golden brown. Immediately remove loaf from cookie sheet; place on serving plate or cutting board. Cool for 10 minutes.
  • Meanwhile, in a small bowl, blend powdered sugar and enough milk for desired drizzling consistency (I added just a little splash of almond extract!) stir until smooth.
  • Drizzle icing over slightly cooled loaf. To serve, cut diagonally into slices with serrated knife.

1 loaf (1 pound) frozen bread dough, thawed
1/3 cup chopped walnuts
1/4 cup golden raisins
1/4 cup raisins
1/4 cup dried cranberries
1/4 cup chopped dates
1 large egg white
1 tablespoon honey

Steps:

  • Turn bread dough onto a floured surface; roll out to 1-in. thickness. Sprinkle the walnuts, raisins, cranberries and dates over dough; fold over and knead well until the fruit and nuts are evenly mixed into dough. Shape into a round loaf and place in a greased 9-in. round baking pan., Cover and let rise until doubled, about 30 minutes. Beat egg white and honey; brush over loaf. With a sharp knife, make 2 shallow crosses across top of loaf. Bake at 350° for 20-25 minutes or until golden brown. Transfer to a wire rack.

1 1/4 cups plain yogurt(regular, not Greek)
2 large eggs
3 tablespoons sunflower oil
1 teaspoon vanilla extract
2/3 cup dried fruit(raisins, cranberries, chopped apricots etc)
1 cup chopped nuts or seeds(walnuts, pecans, flax seeds, sesame seeds etc)
2 cups self-rising flour
1/2 cup plus 2 tablespoons granulated sugar
1 teaspoon baking powder

Steps:

  • Preheat oven to 350F.
  • Prepare a loaf pan by buttering the inside of it. Cut a piece of parchment paper to fit along the bottom of the pan and up the ends.
  • Fit the paper inside. Set aside.
  • In a medium bowl, spoon the plain yogurt.
  • Separately, in a small bowl, mix the eggs with a fork. Add them to the yogurt, together with sunflower oil and vanilla, and mix everything with a fork.
  • In a large bowl, place all dry ingredients: dried fruit, nuts, seeds, flour, sugar, and baking powder. Mix.
  • Pour the yogurt mixture into the dry ingredients.
  • Use a spatula or a wooden spoon to mix everything. Spoon the mixture into the baking pan prepared earlier.
  • Bake the bread for about 40-45 minutes or until golden and risen. Test the bread with a skewer or a toothpick in the middle. It should come out clean.
  • Leave the loaf to cool down and remove it from the pan by pulling the ends of the parchment paper.

  • Combine the flour, salt and yeast in a large bowl. Stir to combine and add the dried fruit and nuts. Stir to distribute all the ingredients well. Add the water and stir everything together. The dough should be shaggy and a little sticky. Just stir and turn the dough over until there are no traces of dry ingredients.
  • Cover the bowl and let the dough rest in room temperature for 12 to 18 hours. The longer you let it sit, the more flavor is developed. After 18 hours, the dough will have risen and may be a shade darker than it was when you started.
  • Place a piece of parchment paper on the countertop and dust very generously with flour. Wet your hands and fold the dough over on itself a few times to release the air inside the dough. (Wetting your hands will help prevent the dough from sticking to you.) Shape the dough into a round and place it on the floured parchment paper, seam side down.
  • Dust more flour on the top of the dough and cover the dough by inverting the mixing bowl over the top. (Alternately, you could use a clean kitchen towel to cover the dough, but I find this often sticks to the dough, ruining both the appearance of the bread and the towel.) Let the dough rest like this for up to 2 hours. After the dough has rested for 1 to 1 ½ hours on the countertop, place a lidded cast iron Dutch oven into your oven and pre-heat the oven to 425ºF for 30 minutes.
