Light summer meal. Serve with crusty roll and a tall glass of cold mint cherry limeade. Lovely refreshing weeknight meal. Also can be prepared up to 2 days ahead for those busy nights.

- Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain and transfer to a bowl; refrigerate until chilled.
- Whisk mayonnaise, Dijon mustard, sour cream, orange juice, curry powder, salt, and pepper together in a bowl until dressing is smooth; cover with plastic wrap and refrigerate until chilled, at least 30 minutes.
- Mix pineapple, chicken, celery, apple, grapes, and green onions together in a bowl. Stir orzo and dressing into pineapple mixture. Gently fold oranges into salad and top with pumpkin seeds.

The amounts listed are only a guideline since I don't even bother measuring please feel free to adjust all ingredients to suit taste but please try not to omit anything all the ingredients blend together perfectly! You could use all mayonnaise but I prefer half mayonnaise and yogurt or sour cream for a lighter texture, if you are making this in advance then add in the diced apple just before serving. If you are a curry-lover then try adding in 1/2 to 1 teaspoon curry powder into the mayo mixture, I think you will be quite surprised at the taste! This is one of the best recipes for chicken salad!... For a luncheon, double or triple the complete recipe and serve this on a bed of lettuce with tomato wedges around the chicken salad then sprinkle more toasted almonds on and around the chicken salad... your guests will rave!

- 2. Slice chicken breasts in half creating 6 pieces, season with salt and pepper.

- Chocolate Chip Granola: First up, make your granola. Preheat the oven to 170c / 340f. Line a baking sheet with parchment paper.
- Mix the oats, crushed nuts, desiccated coconut and sunflower seeds together in a bowl. In the microwave melt the coconut oil and then stir in the honey and vanilla extract. Pour this mixture into the dry ingredients and mix until it has all combined.
- Spread the granola onto the parchment on the baking tray and press down with the back of a spoon. Bake in the oven for 20-30 minutes until the granola is golden brown and starting to crisp. Stir and toss the granola two or three times during cooking to ensure that it all bakes evenly.
- Remove from the oven and put aside to cool. Once the granola has cooled add the chocolate chips and goji berries or any other dried fruit. The granola can be stored in an airtight container for up to 2 weeks.
