This a Jeff Smith recipe which was published in his cookbook "The Frugal Gourmet". Jeff Smith writes this about the recipe, "I might as well tell you the truth. I threw this one together 5 minutes before we went on the air one morning. I realized that we needed another dish, and I just grabbed what I could. That is not a bad method for creating salads." 1 (15 ounce) can baby corn, drained
1 (16 ounce) can artichoke hearts, drained and quartered
1 bunch asparagus, blanched or 1 (10 ounce) package frozen asparagus, uncooked
salt and pepper
fennel, dressing (see link)
1 head lettuce (green leaf or red leaf)

Steps:

  • Toss the baby corn with the artichoke hearts and cut asparagus. Add salt and pepper and the fennel dressing. Serve over the greens.

2 cups fennel, dressing (see link)
3 -4 small canned spanish or portuguese anchovy fillets
1/4 cup lemon juice
2 eggs, coddled
1/8 lb blue cheese
salt and pepper
crouton

Steps:

  • Place the fennel dressing in a food blender. Add the achovies, lemon juice, eggs and bleu cheese. Blend for just a moment, and pour over your salad. Add salt and pepper. Add croutons, and serve.

The best chicken soup I've ever eaten. This came from "The Frugal Gourmet On Our Immigrant Ancestors" by way of a friend of mine. It's easy to make, although you need to make sure you have all of the spices, and at least for me, they aren't the most common of spices. Having said that, you won't have any problem finding them in the local Safeway.

1 1/4 lbs chicken thighs
8 cups water
1 teaspoon ghee (see Ghee recipe) or 1 teaspoon butter
2 garlic cloves, peeled and minced
1 yellow onion, medium, peeled and chopped
2 celery ribs, chopped
1 1/2 cups carrots, chopped
1/4 teaspoon turmeric
1/2 teaspoon coriander seed, ground
1/4 teaspoon red pepper flakes
1/2 teaspoon cumin, ground
1/2 teaspoon cardamom, ground
1/2 teaspoon dried ginger, ground
2 teaspoons salt
chopped fresh coriander
fresh ground pepper

Steps:

  • In a 4-quart pot, simmer the chicken, covered, in 4 cups of water until tender, about 30 minutes.
  • Remove, cool, debone, and chop the meat and skin coarsely.
  • Save the stock in the pot.
  • Set the meat aside.
  • Heat a large frying pan and add the ghee, garlic, onion, celery, and carrot.
  • Saute just until the onion is tender.
  • Add this to the pot of reserved stock.
  • Add 4 more cups of water to the pot along with all remaining ingredients except the garnishes and chicken.
  • Cover and simmer for 30 minutes.
  • Add the deboned chicken.
  • Simmer for 5 minutes.
  • Garnish with the fresh coriander and black pepper.
  • I like lots of black pepper in this dish!

1/2 cup olive oil
1/2 cup peanut oil
1/2 cup red wine vinegar
1/2 cup white vinegar
1 teaspoon sugar (to taste)
1 tablespoon dry mustard (Coleman's)
1 teaspoon fennel, ground
2 tablespoons lemon juice
1/8 cup dried parsley
salt and pepper

Steps:

  • Blend the oils and the vinegars. Add a little sugar, mustard, and fennel. Add some lemon juice, parsley, salt, and pepper.
