Number Of Ingredients 7

5 flat anchovy fillets, finely chopped
2 small garlic cloves, minced
2 tablespoons fresh lemon juice
1 teaspoon white-wine vinegar
1/4 cup extra-virgin olive oil
3 hearts of romaine (20 to 22 ounces total), torn into pieces
6 ounces Parmigiano-Reggiano, shaved with a vegetable peeler

Steps:

  • Whisk together anchovies, garlic, lemon juice, vinegar, and 1/8 teaspoon pepper. Whisk in oil.
  • Toss lettuce with dressing, then with cheese.

This is a recipe from an older department store in St. Louis, Famous & Barr. A great creamy anchovy-based dressing! Great with a romaine lettuce or salad greens blend.

3 eggs
2 (2 ounce) cans flat anchovy fillets, undrained
½ large sweet onion (such as Vidalia®), sliced
¼ cup water
1 stalk celery
2 tablespoons dry mustard
1 tablespoon freshly ground black pepper
1 clove garlic
1 cup canola oil
1 cup extra-virgin olive oil

Steps:

  • Combine eggs, anchovies, onion, water, celery, mustard, pepper, and garlic in a food processor; pulse until combined. Pour oils in slowly, with the processor running, until dressing is smooth. Refrigerate until serving.

This is another salad dressing that DH and I have been making for years. It is a variation of one by the Frugal Gourmet. We added more blue cheese. We enjoy it and hope you will too! (Jeff Smith's original recipe calls for 1/4 cup bleu cheese and 2 Tablespoons lemon juice. It is part of his Buffalo Chicken Wings recipe and comes from his 1984 book entitled The Frugal Gourmet).

1 tablespoon white wine vinegar
1/2 cup milk
2 tablespoons onions, finely minced
1/4 cup parsley, fresh, minced
1 garlic clove, finely minced
1 cup mayonnaise
1/2 cup blue cheese, crumbled
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper, freshly ground
1 pinch cayenne pepper

Steps:

  • In a small mixing bowl combine the vinegar and milk.
  • Allow to sit for a few minutes to curdle.
  • Add the remaining ingredients.
  • Mix well.
  • Serve over your favorite salad greens.
  • Refrigerate leftovers for up to one week.

olive oil (for frying)
1 1/2 lbs round steaks
1 1/2 cups dry white wine (Chablis type)
2 garlic cloves, crushed
2 tablespoons chopped yellow onions
1 tablespoon glace de viande
1/4 teaspoon dried whole rosemary
2 tablespoons softened butter
2 tablespoons blue cheese (mixed well with the butter)
salt and pepper
chopped parsley (to garnish)

Steps:

  • Heat a large frying pan. Add the olive oil and the steaks to you perfection. (I like mine rare, very rare.) Remove to a warm plate and add the wine and the garlic and onion. Sauté just a minute and deglaze the pan by scrapping the bottom with a wooden spoon. Allow the wine to reduce be half and then add the glace de viande and the rosemary. Simmer for a moment and add the butter mixed with the cheese. Mix with a wire whip until smooth.
  • Place a bit of the sauce on each plate and then a piece of the stake on top of the sauce. Add the salt and pepper at the very last, as salt will dry out the meat during the cooking process. Garnish with parsley.

This dressing is delicious on a Nicoise style salad of steamed green beans, fresh tomatoes, hard boiled eggs and baby greens. I love it on steamed broccoli also. Be adventurous and try this.

2 anchovies packed in oil, minced
1 teaspoon Dijon mustard
2 tablespoons red wine vinegar
5 tablespoons extra-virgin olive oil

3 green onions, chopped
3 tablespoons chopped olives, of choice from olive bar

Steps:

  • In a large wooden salad bowl, mash the anchovies with a fork until they form a paste. Whisk in mustard and vinegar. Drizzle in the olive oil while whisking to create an emulsion. Adjust the seasonings with and salt and black pepper, to taste. Add the escarole, green onions and olives to the bowl and gently toss to coat the leaves with the dressing. Serve immediately.

1/2 cup crumbled Maytag or other blue cheese (about 3 ounces), divided
1/2 cup half and half
2 tablespoons sour cream
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • In a medium bowl, whisk together the mayonnaise, 1/4 cup blue cheese, half and half, sour cream, lemon juice, Worcestershire, and salt, until smooth. Gently stir in the remaining 1/4 cup blue cheese and season with pepper to taste. Use now or store in the refrigerator for up to 3 days.
