FROZEN CHOCOLATE PIE
When I serve this dessert to company, they often think it has ice cream in it. It does have a smooth texture like an ice cream pie. I've been making this recipe for years - it's a refreshing end to a meal anytime!

- In a large bowl, beat cream cheese, sugar and vanilla until smooth. Add cocoa alternately with milk; mix well. Fold in whipped topping. , Pour into pie shell. Freeze for 8 hours or overnight. Sprinkle with chocolate curls or chips if desired. Serve directly from the freezer (pie does not need to be thawed to cut).

Steps:
- In a bowl, combine cracker crumbs and 3 tablespoons of sugar. Stir in margarine. Press onto the bottom and up the sides of an ungreased 9 inch pie plate. Refrigerate for 30 minutes.
- In a microwave-safe bowl, combine 1/2 cup chocolate chips and 2 tablespoons milk. Microwave, uncovered, on high for 1-2 minutes or until melted. Stir to blend; set aside.
- In another bowl, beat cream cheese and remaining sugar. Stir in chocolate mixture and remaining milk; beat until smooth. Set aside 1/2 cup whipped topping for garnish. Fold remaining whipped topping into chocolate mixture. Spoon into prepared crust. Freeze for 4 hours or until firm. Garnish with the reserved whipped topping and remaining chocolate chips.

- Microwave morsels in medium, uncovered, microwave-safe bowl on Medium-High (70%) power for 1 minute. Stir. Morsels may retain some of their original shape. If necessary, microwave at additional 10-15 second intervals, stirring just until smooth. Cool to room temperature.
- Beat melted chocolate, cream cheese and vanilla extract in large mixer bowl until light in color. Fold in whipped cream. Spoon into crust. Refrigerate until firm. Top with sweetened whipped cream, chocolate curls or nuts, if desired.

- Preheat oven to 325°. In a small bowl, combine crushed wafers and butter or margarine until well blended. Press into bottom and up sides of a 9-inch pie plate.Bake for 10 minutes. Cool completely on a wire rack. Chill while preparing filling.In a small saucepan over low heat, melt chocolate set aside.In a small mixer bowl at high speed, beat egg whites and cream of tartar until soft peaks form. Gradually add 1/4 cup of the sugar and beat until stiff and glossy set asideIn a large mixer bowl at medium speed, beat cream cheese, remaining 1/4 cup sugar and vanilla until smooth. Beat in egg yolks, one at a time, until smooth. At low speed, beat in chocolate until well blended.By hand, fold in beaten egg whites until no streaks remain. Gently fold in whipped cream and nuts. Spoon into crust and swirl top. Freeze for 1 hour or until top is set. Cover with plastic wrap, then foil and freeze overnight.Uncover and let stand for 30 minutes before serving. Steps:
- Combine cocoa, sugar, cornstarch and salt in a medium saucepan. Blend in milk until smooth.
- Cook and stir over medium heat until mixture comes to a boil.
- Boil and stir for 3 minutes. Remove from heat. Blend in butter and vanilla. Pour into pie shell. Carefully press plastic wrap directly onto pie filling. Chill 3 to 4 hours. Serve with sweetened whipped cream or topping and chocolate curls, if desired.
- Note: Cook time is cooling time. You can also use a cooled crumb crust for shell.
