1 1/2 ounces light rum
1/2 ounce Midori melon liqueur
1 ounce cream of coconut
3 ounces pineapple juice
1 dash cream
1/2 ounce dark rum (optional)
pineapple, wedge (optional)

Steps:

  • Fill blender with 3 oz of crushed ice.
  • light rum, Midori, cream of coconut, pineapple juice, cream (and dark rum if desired).
  • Blend at medium speed for approximately 15 seconds until smooth.
  • Pour into a goblet or large wine glass and garnish with a pineapple wedge or spear.

This is one of my new favorite mixed drinks.. it's superb! If you like Midori Melon Liqueur & like Pina Colada's... this is the drink for you!!! The quintessential summer cocktail, especially if you're lounging pool-side!

1 ounce Midori melon liqueur
1/2 ounce rum (Bacardi)
1 1/2 ounces pineapple juice

  • Mix in blender until smooth & serve immediately.

2 teaspoons fresh lime juice

  • In a blender, purée the melon with rum, Midori and lime juice, scraping the sides occasionally, until the mixture is smooth but still frozen. Divide the mixture between 2 stemmed glasses.
