FISH IN FOIL
The 'no smell' fish recipe that is the ONLY one I make for my family (I hate fish, they LOVE it!). Take foil packets to table for service, and keep them around for the discarding of bones and skin. Then when dinner's done, haul those babies to the outside trash.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
- Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. Place packets on baking sheet.
- Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.

GRILLED HADDOCK {WITH LEMON CREAM SAUCE}
This deliciously tender Grilled Haddock (with lemon cream sauce) is a wonderfully light and tangy way to enjoy this fabulous sustainable cod relative! The haddock has a slightly less dense meat than cod, but also a note of sweetness that combines superbly with my easy lemon cream sauce for white fish!!

- Rinse and pat your haddock dry using paper towels.
- On a countertop lay out a section of tinfoil for each fillet you will be having. Lightly coat with brushed olive oil or use non stick cooking spray on the inside of each foil sheet.
- Arrange 2-3 lemon slices (depending on the size of your fillets) in a line down the center of each packet.
- Season each fillet (salt, pepper, dill weed) then set the haddock fillets on the lemon slices. Wrap each fillet in the foil being sure it is completely sealed with the seam facing upward.
- Place foil packs on grill over a medium heat. Cook for approximately 8-10 minutes, depending on the thickness of your haddock. Remove from heat and check your fillets for the fish to be done.
- Bring a small saucepan with the olive oil to medium high heat. Once the oil begins to shimmer, add the minced onion and saute for 2-3 minutes or until tender.
- Reduce heat to low, and add in the heavy cream. Once the cream is warmed, add the butter and cook until it is melted. Add the lemon zest and juice, then continue cooking for another 2 minutes.
- Add in the grated Parmesan cheese and stir until it is fully melted. Spoon the lemon cream sauce over your grilled haddock and enjoy!

EASY GRILLED FISH FILLET IN FOIL PACKETS
This super easy method for grilling fish is pretty foolproof, and you can use any fresh fish that's available to you in your area. It's almost 90 degrees today, which means I'm grilling tonight. In fact I use my outdoor grill just about every night in the summer to make quick, easy, healthy dinners.

Steps:
- Place the fish in the center of the foil, season with salt and pepper and drizzle with olive oil.
- Place a slice of lemon on top of each piece of fish, then a sprig of herbs on each.
- Fold up the edges so that it's completely sealed and no steam will escape, creating a loose tent.
- Heat half of the grill (on one side) on high heat with the cover closed.
- When the grill is hot, place the foil packets on the side of the grill with the burners off (indirect heat) and close the grill.
- Depending on the thickness of your fish, cook 10 to 15 minutes, or until the fish is opaque and cooked through. My porgy fillets took about 12 minutes.

FOIL BAKED FISH WITH VEGGIES
Simple to make with easy cleanup, foil baked fish with veggies is a deliciously healthy dinner recipe that takes minutes to make!

- Preheat oven to 375 degrees. Take 4 pieces of aluminum foil, about 10" each, and place on a large glass baking dish, folding up the edges to make a "packet".
- Evenly distribute the tomatoes, zucchini and onion in each of the 4 packets. Place the fish on top.
- Drizzle each packet with olive oil and sprinkle evenly with salt, pepper, garlic powder and basil.
- Squeeze lemon juice on top.
- Using another piece of foil, place on top of the fish/veggies and seal the edges tightly. Repeat with other foil packets.
- Bake for 25-30 minutes until vegetables are tender and fish is white and flaky.
- Serve over rice, grain, or with baked potato.

BAKED HADDOCK IN FOIL
Wrapping the haddock in tin foil pouches keeps it from drying out and lets all the flavors bake into the fish. This one is a hit with everyone in my family!

- Preheat oven to 400 degrees F
- Lay 4 good sized pieces of tin foil out (large enough to contain the fish when folded).
- Place 1/4 cup fresh spinach on each of the pieces of foil.
- Place the haddock fillets on top of the spinach and sprinkle with salt, pepper and the lemon juice.
- Spread 1/2 tbsp of garlic on each then top with a couple slices each of tomato, pepper and onion.
- Fold the foil up into pouches.
- Bake for 20 minutes or until cooked through.
- Let sit to cool the foil for 5 minutes before unwrapping.
- Enjoy!
