2 ripe but firm bananas
6 ounces dark chocolate, chopped, or semisweet chocolate chips
2 tablespoons vegetable oil
1/2 cup granola, chopped pecans and walnuts, or sprinkles (optional)

Steps:

  • 1. Line a baking sheet with nonstick foil or parchment paper.
  • 2. Cut the bananas in half and insert a Popsicle stick into each half, as shown. Place them on the baking sheet and freeze for 15 minutes.
  • 3. Meanwhile, melt the chocolate with the oil in a Pyrex measuring cup in the microwave (check it every 30 seconds) or in a half-full pan of simmering water (about 2 minutes). Stir until smooth.
  • 4. Roll each banana half in the chocolate, then quickly sprinkle with your topping (if using).
  • 5. Freeze until the chocolate sets, 30 minutes. Serve or freeze in an airtight container for up to a week.

6 ounces 1 cup semisweet chocolate chips
1 Tablespoon sprinkles, coconut, nuts, or any desired topping

Steps:

  • Insert a toothpick into each banana piece. Arrange bananas, toothpick side up, on a parchment lined baking sheet. Freeze until firm, about 2 hours.
  • In a medium microwave-safe bowl, heat chocolate chips in 10 second increments, stirring between each until melted and smooth. Working quickly, dip each banana piece in chocolate, shake off excess, and cover with desired topping. Chocolate should set quickly, but if necessary, freeze or refrigerate pops to harden coating before serving.
  • Store in the refrigerator up to 1 day.

2 cups cold milk
2 Tbsp. chocolate syrup
2 bananas, each cut into 3 pieces

Steps:

  • Beat pudding mix and milk in medium bowl with whisk 2 min.
  • Spoon half the pudding evenly into 6 (3-oz.) paper or plastic cups; drizzle each with 1 tsp. chocolate syrup. Insert wooden pop stick lengthwise into center of each banana piece; place, banana side down, in pudding in center of each cup. Cover with remaining pudding.
  • Freeze 4 hours or until firm. Remove pops from cups before serving.

8 wooden craft sticks
3 tablespoons finely chopped lightly salted peanuts
6 ounces good quality dark chocolate (60 to 70 percent cocoa solids), chopped

Steps:

  • Peel, then cut each banana in half crosswise and insert a craft stick into each half. Place on a tray, cover with plastic wrap and place in the freezer until frozen, about 3 hours.
  • Place the peanuts in a shallow dish or on a plate. Melt the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the bottom of the top pan. Pour the melted chocolate into a tall glass. Dip each frozen banana into the chocolate, turning it to coat, and immediately roll in the peanuts. Place on a tray covered in waxed paper. Serve immediately or wrap individually in plastic wrap or waxed paper and freeze for up to 2 weeks.
