SNOWMAN PUNCH
This creamy and cool punch -- inspired by a Ramos gin fizz -- is a real knockout, complete with a snowman chilling out in drifts of bubbles. To make it ahead, you can assemble the snowman body in advance and pop it in the freezer, adding the scarf just before serving.

Steps:
- Chill a baking sheet in the freezer for 20 minutes. Scoop the vanilla ice cream into the roundest balls you can make with an ice cream scoop and place on the chilled baking sheet. Scoop one ball of vanilla into a ball twice the size of the others. Scoop the orange sherbet into a ball half the size of the medium vanilla balls, leaving a bit of a ruffle around the bottom (this will become the snowman's hat). Reserve the remaining sherbet for another use. Freeze the balls until solid, about 1 hour, or until ready to serve. Chill a large punch bowl in the freezer until it is very cold, about 30 minutes.
- Reserve 1 medium vanilla ice cream ball and pile the rest of the medium balls in the middle of the punch bowl.
- To make the snowman, center the large vanilla ball on top of the snowball pile. Insert 5 chocolate chips in a line down one side of the large ball for buttons (press the pointy tops of the chips into the ball). Top the large ball with the reserved medium ball for the head and press in the 2 remaining chocolate chips for eyes. Add a jelly bean half for a nose. Wrap the candy belt around the neck for a scarf. Top with the orange sherbet ball for a hat. Add the mini marshmallow at the top for a pom-pom. You can assemble the snowman ahead of time and hold the punch bowl in the freezer up to 2 hours if you aren't immediately able to serve.
- Add the liquids in this order: Gin, orange liqueur, sparkling wine and seltzer. Sprinkle with the confectioners' sugar for snow. Serve the punch in coupe cocktail glasses (see Cook's Note), scooping an ice cream ball and some punch into each.

- Frost the tops of the 2-1/2-inch cupcakes with some of the Creamy White Frosting. Put coconut on a small plate. Dip cupcake tops into coconut, rolling gently to coat all frosted areas.
- If necessary, remove paper bake cups from the 1-3/4-inch cupcakes. Frost all sides of the small cupcakes with some of the remaining frosting. Roll small cupcakes in coconut until coated. Spear each small cupcake through the center with a pretzel stick. Place one small cupcake onto the frosted top of each large cupcake, holding it in place with one end of the pretzel stick.
- In a microwave-safe bowl microwave about 3/4 cup of the remaining frosting on 100 percent power (high) for 10 to 20 seconds or until melted but still thick enough to coat. Spear each marshmallow with a fork or skewer and hold over bowl of warm frosting; spoon frosting over marshmallow to coat. Place marshmallow on a sheet of waxed paper; cool slightly to set frosting. Roll marshmallows in coconut until coated. Attach a marshmallow on its side to each small cupcake by spearing it with a pretzel stick and inserting the other end into a small cupcake. Patch with additional frosting.
- Attach miniature chocolate pieces for the eyes and mouths. For the carrot nose, cut orange candies into small triangles. Gently press into the marshmallow.

- Allow eggs, buttermilk, and butter to stand at room temperature for 30 minutes. Meanwhile, grease and flour cavities of two 6-inch ball pans (put together, they make one ball) and cavities of 6 mini ball pans; set aside. In a medium bowl stir together flour, cocoa powder, and salt; set aside.
- Preheat oven to 350°F. In a very large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Gradually add sugar, 1/4 cup at a time, beating on medium speed until well mixed. Scrape sides of bowl and beat on medium speed for 2 minutes more. Add eggs, one at a time, beating well after each addition. Beat in food coloring and vanilla until combined. Alternately add flour mixture and buttermilk to egg mixture, beating on low speed after each addition just until combined. In a small bowl stir together baking soda and vinegar; fold into batter.
- Spoon 2-1/2 cups of the batter into each 6-inch ball pan. Spoon about 1/3 cup batter into each mini ball pan.
- Bake for 12 to 15 minutes for mini ball pans and 30 to 40 minutes for 6-inch ball pans or until wooden toothpicks inserted near the centers come out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool completely on wire racks.
