10 Bartlett pears
1 egg white, beaten
Granulated sugar or white coarse sugar crystals (decorating sugar)
12-inch cake platter or serving bowl
13 to 15 kumquats
1 stem blueberry juniper, cut into 6-inch sprigs
Fresh lemon leaves, if desired

Steps:

  • Brush half of each pear with egg white; sprinkle with sugar. Let stand about 15 minutes or until dry.
  • Arrange pears on platter. Arrange kumquats among pears. Fill in spaces with juniper and lemon leaves.

1 medium firm banana, sliced
2 tablespoons lemon juice
1 reduced-fat graham cracker crust (9 inches)
3 cups low-fat strawberry frozen yogurt, softened
1 can (8-1/4 ounces) reduced-sugar fruit cocktail, drained
1-1/2 cups reduced-fat whipped topping
1/2 cup fresh raspberries
1/4 cup coarsely chopped pecans, toasted

Steps:

  • In a small bowl, combine banana slices and lemon juice; let stand for 5 minutes. Drain well. Arrange banana slices over bottom of crust. Spread with frozen yogurt. Top with fruit cocktail and whipped topping. Freeze until firm. Remove from the freezer 10 minutes before serving. Garnish with raspberries and pecans.

1 to 2 tablespoons corn syrup
1 pint fresh strawberries, halved
2 cups fresh pineapple chunks
2 oranges, sectioned
Fresh mint leaves, optional

Steps:

  • In a large bowl, combine melon cubes and corn syrup. Cover and refrigerate overnight. Just before serving, stir in remaining fruit. Garnish with fresh mint leaves if desired.

2 cans (8 ounces each) crushed pineapple, drained
1 can (11 ounces) mandarin oranges, drained
5 large ripe bananas, sliced
2 cups sliced fresh strawberries
2 cups water
1 can (12 ounces) frozen lemonade concentrate, thawed
1 can (12 ounces) frozen orange juice concentrate, thawed
1 cup diet lemon-lime soda

Steps:

  • In a blender, place half of the pineapple, oranges, bananas and strawberries; cover and process until smooth. Pour into a large bowl. Repeat. Stir in the remaining ingredients. Pour or spoon 1/2 cup into each of 24 glasses or plastic cups. Cover and freeze for at least 2 hours. , Remove from the freezer 15 minutes before serving. May be frozen for up to 1 month.

12 ounces frozen orange juice concentrate, thawed
5 -6 bananas, sliced
20 ounces crushed pineapple
20 ounces sliced peaches
10 ounces frozen sliced strawberries
1 1/2 cups sugar
1 cup water

Steps:

  • Prepare orange juice according to container directions in a large serving bowl; stir in bananas, crushed pineapple, peaches and strawberries, set aside.
  • Add sugar and water to a saucepan; bring to a boil. Pour over fruit; stir.
  • Freeze 24-48 hours in freezer-proof bowl; stir 2-3 times as it freezes.

1 (8 1/2 ounce) can sliced peach halves in syrup
1 (11 1/2 ounce) can peach nectar
1 (10 ounce) package frozen sliced strawberries in syrup, thawed
1 medium cantaloupe

Steps:

  • Drain peaches, reserving the juice.
  • Chop peaches. Add chopped peaches, nectar and strawberries to medium bowl and stir.
  • Divide mixture evenly among 3 ice shaver tubs and cover with lids.
  • Place tubs in freezer and freeze until firm (about 6 hours.).
  • Cut cantaloupe into 8 wedges.
  • Place a chilled bowl under the ice shaver to catch shavings.
  • Remove frozen mixture from 1 tub and shave with ice shaver.
  • Using ice cream scoop, place 1 scoop of shaved fruit mixture in each cantaloupe wedge. Serve immediately.
  • Save the 2 remaining tubs of frozen fruit mixture to make this breakfast treat again or to enjoy for a snack or dessert.
