RAINBOW COCONUT SMOOTHIE BOWLS
Steps:
- To make the coconut milk ice cubes, fill an ice cube mold with coconut milk! Freeze overnight. Slice and prep your fruit before you make the smoothie.
- Blend together the coconut milk, bananas, coconut milk ice cubes, coconut meat, hemp seeds, shredded coconut and honey. You want it to be thick so it can be scooped into a bowl, much like an acai bowl or banana "ice cream." This works best with a high powered blender.
- Once the smoothie is in the bowl, layer on your fruit in the rainbow pattern. Cover with shredded coconut. Serve immediately!

- In a large bowl, beat the cream cheese and sugar until fluffy. Halve 9 cherries; chop the remaining cherries. Set aside halved cherries and 18 orange segments for garnish. Add the pineapple, pecans and chopped cherries to cream cheese mixture. Fold in whipped topping and remaining oranges. , Line muffin cups with paper or foil liners. Spoon fruit mixture into cups; garnish with reserved cherries and oranges. Freeze until firm. Remove from the freezer 10 minutes before serving. Top with mint if desired.

- Prepare orange juice according to container directions in a large serving bowl; stir in bananas, crushed pineapple, peaches and strawberries, set aside.
- Add sugar and water to a saucepan; bring to a boil. Pour over fruit; stir.

- Drain peaches, reserving the juice.
- Chop peaches. Add chopped peaches, nectar and strawberries to medium bowl and stir.
- Divide mixture evenly among 3 ice shaver tubs and cover with lids.
- Place tubs in freezer and freeze until firm (about 6 hours.).
- Cut cantaloupe into 8 wedges.
- Place a chilled bowl under the ice shaver to catch shavings.
- Remove frozen mixture from 1 tub and shave with ice shaver.
- Using ice cream scoop, place 1 scoop of shaved fruit mixture in each cantaloupe wedge. Serve immediately.
- Save the 2 remaining tubs of frozen fruit mixture to make this breakfast treat again or to enjoy for a snack or dessert.
