½ cup crunchy peanut butter
⅓ cup softened unsalted butter
¾ cup brown sugar
3 eggs
1 tsp vanilla extract
2 cups all purpose flour
2 tsp baking powder
¼ tsp salt
½ cup creamy peanut butter
1 tsp vanilla extract
⅓ cup milk
2½ cups confectioners' sugar
of your choice, or your favorite hot drink ice cream

Steps:

  • Preheat your oven to 350 degrees F and grease a 13-inch baking tin or casserole.
  • Sift together flour, baking powder, and salt then set it aside.
  • In a large bowl, mix together sugar and butter.
  • Add in eggs, crunchy peanut butter, and vanilla. Continue creaming.
  • Fold in the sifted flour mixture into the peanut butter mixture until evenly incorporated.
  • Transfer the mixture into your greased baking tin or casserole.
  • Bake for 30 minutes, or until a cake tester comes out clean. Set aside onto a cooling rack and allow to cool down completely.
  • Combine all ingredients together and beat until smooth and the sugar has dissolved.
  • Spread on top of cooled peanut butter bars. Cut into equal pieces and serve along with your favorite hot drink or ice cream!

This recipe comes from my good friend Beth, in Kanasas City. I have not made them yet, but she is a wonderful cook and says these bars are delicious!

Number Of Ingredients 14

1/2 cup peanut butter
1/3 cup shortening
1 1/2 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup milk
2/3 cup creamy peanut butter
1/2 cup shortening
3 cups confectioners' sugar
1/4 cup milk
1/4 cup semi-sweet chocolate chips
1 teaspoon shortening

Steps:

  • In a mixing bowl, cream peanut butter, shortening and brown sugar.
  • Beat in eggs and vanilla.
  • Combine the flour and salt; gradually add to creamed mixture.
  • Add milk; mix well.
  • Transfer to a greased 15 x 10 x 1 baking pan.
  • Bake at 350 for 16-20 minutes or until a toothpick inserted near the center comes out clean. (I always bake it for 16 minutes.)
  • Cool.
  • For frosting, in a mixing bowl, cream peanut butter, shortening and confectioners' sugar.
  • Gradually beat in enough milk to achieve spreading consistency.
  • Frost bars.
  • Melt chocolate chips and shortening; stir until smooth.
  • Drizzle over frosting.
  • Refrigerate.

These are exactly like the ones I grew up with in the 80's! You can half the recipe and use a 9x13; I like to make a bunch and either freeze them or gobble them. (I have five kids...they usually get gobbled! ;) Sometimes I leave off the chocolate chip layer, put the PB frosting directly on top of the bars, and smother with Texas sheet cake icing instead. YUM!

1 cup margarine or 1 cup butter
1 cup sugar
1 cup brown sugar
2/3 cup peanut butter
2 eggs
1 teaspoon vanilla extract
1 1/2 teaspoons baking soda
2 cups all-purpose flour
2 cups rolled oats
4 cups chocolate chips
2 cups powdered sugar
1/2 cup peanut butter
1/2 cup milk

Steps:

  • Preheat oven to 350 degrees.
  • Cream butter and white sugar and brown sugar. Blend in peanut butter, eggs, vanilla, and baking soda. Add flour and oatmeal. Mix well.
  • Spread batter in greased 15"x10"x1" pan. Bake for 20 minutes.
  • Remove pan from oven turn the oven off. Sprinkle chocolate chips over the top of bars. Return to oven and allow to sit for 8 minutes or until chocolate is melted. Spread to smooth chocolate, and allow to cool.
  • To make the peanut butter icing: Mix together powdered sugar, remaining peanut butter, and milk until it makes a spreadable consistency. Cover the bars and enjoy!
