Frosted Toast Crunch cereal is not just for breakfast-it's also a tasty crust for our creamy and delightful cheesecake cupcakes.

2 cups Frosted Toast Crunch™ cereal, crushed
1/4 cup butter, melted
2 packages (8 oz each) cream cheese, room temperature
1/2 cup granulated sugar
2 eggs
2 teaspoons grated lemon peel
2 tablespoons fresh lemon juice
1 teaspoon vanilla
Whipped cream topping (from aerosol can)
Fresh raspberries
Powdered sugar

Steps:

  • Heat oven to 325°F. Place paper baking cup in each of 12 regular-size muffin cups; lightly spray paper cups with cooking spray.
  • In medium bowl, mix crushed cereal and melted butter. Press about 1 tablespoon crumb mixture firmly in bottom of each muffin cup. Set aside.
  • In large bowl, beat cream cheese and granulated sugar with electric mixer on medium speed 3 minutes or until light and fluffy. Beat in eggs, one at a time, just until blended. Add lemon peel, lemon juice and vanilla; beat just until blended. Spoon filling evenly into muffin cups, filling each about three-fourths full.
  • Bake 25 minutes or until filling is set and edges are lightly browned. Cool 10 minutes; remove from pan to cooling rack. Cool completely. Refrigerate until chilled, about 2 hours.
  • To serve, remove paper cups from cheesecakes. Garnish with whipped cream topping, raspberries and powdered sugar. Store covered in refrigerator.

1 box Betty Crocker™ Super Moist™ yellow cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1 cup crushed Frosted Toast Crunch™ cereal
1/3 cup butter, softened
3 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla
1/4 teaspoon ground cinnamon
24 pieces Frosted Toast Crunch™ cereal

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.
  • In large bowl, beat cake mix, water, oil, eggs, 1 teaspoon vanilla and 1/2 teaspoon cinnamon with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes. Fold in crushed cereal. Divide batter evenly among muffin cups.
  • Bake 18 to 22 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.
  • In medium bowl, beat butter and powdered sugar with electric mixer on low speed until combined. Beat in milk, 1 teaspoon vanilla and 1/4 teaspoon cinnamon on medium speed until fluffy.
  • Pipe or spread frosting on cupcakes. Garnish each cupcake with 1 cereal piece.

½ cup butter
1 cup sugar
1 egg
1 and ¾ cup flour
¾ teaspoon baking powder
½ teaspoon salt
½ teaspoon nutmeg
1 teaspoon cinnamon
½ teaspoon baking soda
1 cup milk
2 cups cinnamon toast crunch cereal
1 batch vanilla buttercream frosting

Steps:

  • Preheat oven to 350 degrees.
  • Steep 1 cup of cereal in milk for 15 minutes.
  • Stir together butter, sugar, and egg in a stand mixer. In a separate bowl, combine flour, baking powder, salt, nutmeg, cinnamon, and baking soda.
  • Slowly incorporate dry ingredients into butter mixture.
  • Remove cereal from milk. Add milk to batter and continue stirring.
  • Divide batter into lined muffin tin.
  • Bake for 20 minutes.
  • Pulse remaining 1 cup cereal in a food processor and stir crumbs into vanilla buttercream frosting.
  • Allow cupcakes to cool and frost.

3 eggs
1/3 cup oil
¾ cup buttermilk
1 teaspoon vanilla extract
¾ cup sour cream
Vanilla Cake Mix (not white cake mix)
1 ½ teaspoon cinnamon
There used to be cereal pieces in the batter, but that has been removed due to comments saying it's better without it
8 oz cream cheese (softened)
½ cup butter (softened)
1 teaspoon vanilla
3 cups powdered sugar
2/3 cup Cinnamon Toast Crunch powder
Crush the cereal in a bag and then sift out 2/3 cup

Steps:

  • 1. Preheat oven to 350 degrees and line pans with 20-22 cupcake liners.
  • 2. In a large bowl, gently combine eggs, oil, buttermilk and vanilla.
  • 3. Mix in sour cream.
  • 4. Add cake mix and cinnamon and mix until smooth.
  • 5. Stir in lightly crushed cereal.
  • 6. Fill cupcake liners ¾ full and bake for 15-18 minutes, or until an inserted knife comes out clean.
  • 7. Buttercream: Beat cream cheese and butter until fluffy. Add Cinnamon Toast Crunch powder. Add vanilla and powdered sugar. Adjust the consistency using milk if it is too thick.
  • 8. Pipe onto cooled cupcakes and top with cinnamon sugar and Cinnamon Toast Crunch squares.

1 (18 1/4 ounce) package yellow cake mix
1 (3 1/3 ounce) package vanilla instant pudding mix
1 1/4 cups whole milk
3/4 cup vegetable oil
3 large eggs
1 tablespoon ground cinnamon
cooking spray

Steps:

  • Place baking rack in center of oven and preheat to 350ºF.
  • Line cupcake pans with liners and spray top of pan with cooking spray.
  • Place cake mix, pudding mix, milk, oil, eggs and cinnamon in a large mixing bowl.
  • Blend with mixer on low for 30 seconds. Scrape down sides of bowl and increase to medium for 1-1/2 to 2 minutes.
  • Spoon 1/3 cup of batter into each liner (about 3/4 full). Place pan(s) in oven on middle rack.
  • Bake cupcakes till they are golden brown, (about 18 to 22 minutes). Cool on wire racks for 5 minutes. Slowly and carefully turn pan on it's side and remove cupcakes. Cool 15 minutes and frost with Cinnamon Cream Cheese Frosting (Recipe #166183) (or buy some cream cheese frosting, add cinnamon to taste, ice cupcakes and sprinkle tops with cinnamon sugar).
