- Preheat oven to 375°. Cream butter and brown sugar until light and fluffy. Beat in eggs, molasses and vanilla. In another bowl, whisk together flour, baking soda, salt and spices; add to creamed mixture alternately with buttermilk, beating well. , Drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Bake until set, 7-9 minutes. Remove to wire racks; cool completely., For frosting, beat butter, shortening and ginger until light and fluffy; beat in vanilla. Gradually beat in confectioners' sugar and milk. Spread over cookies. If desired, decorate with sprinkles. Store in airtight containers.

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg; beat in molasses and buttermilk. Combine the flour, baking powder, baking soda, cinnamon, ginger and salt; gradually add to creamed mixture and mix well. Stir in the walnuts, raisins and dates. Chill for 2 hours or until easy to handle. , On a floured surface, roll out dough to 1/4-in. thickness. Cut with a 2-1/2-in. round cookie cutter. , Place on greased baking sheets. Bake at 350° for 12-15 minutes. Cool completely. , For frosting, beat all ingredients in a small bowl until smooth. Spread over cooled cookies; let dry completely.

- 1. Preheat your oven to 350 degrees.
- 2. Into your stand mixer place 1 C butter and 1 C sugar. Cream together for 2 minutes, then scrape the bottom of bowl and add 1 egg. Cream for an additional 1 minute.
- 3. Add 1 C molasses and mix to combine.
- 4. In a separate bowl toss together 1/2 tsp salt, 1 1/2 tsp baking soda, 2 tsp ginger, 1 tsp cloves, 1 1/4 tsp cinnamon and 4 C flour.
- 5. Add the dry ingredients to the creamed mixture and mix just until combined.
- 6. Spray a cookie sheet with cooking spray and scoop the dough onto the tray in 1 1/2 inch balls.
- 7. Bake for 7-8 minutes, or until the tops of the cookies are cracked. Be sure not to over bake. Allow the cookies to finish baking on the hot sheet, then transfer them to a cooking rack.
- 8. In a medium-sized mixing bowl place 1 C softened butter, 4 C powdered sugar, 1 tsp vanilla 2 Tb milk and a dash of salt. Beat the mixture until smooth and creamy. Add more milk if the mixture is too thick, add more powdered sugar if the mixture is to thin.
- 9. When the cookies have cooled completely frost each one.
- Serve and enjoy!

- When you take the butter out of the refrigerator to make the cookie dough, take out 1/2 cup more (1 stick) and allow to soften as you make the cookies. This softened butter is for the frosting.

The dough will be very thick and heavy, yet slightly crumbly. Cover the dough tightly with plastic wrap and chill for at least 45 minutes and up to 2 days. (If chilling for longer than a few hours, be sure to let the cookie dough sit at room temperature for 20-30 minutes because it will be quite hard.)
- Preheat oven to 350°F (177°C). Line two large cookie sheets with parchment paper or silicone baking mats. Set aside. Remove the cookie dough from the refrigerator and roll 1.5 Tablespoons of dough into each ball. You’ll have about 20-24 balls, give or take.
