- Hold one grape cluster by the stem and brush lightly with egg whites. Transfer to a rack set over wax paper, then sprinkle with sugar, using fingers, turning cluster to lightly coat. Gently shake off excess sugar. Repeat with remaining clusters. Let grapes dry, uncovered, at room temperature, about 2 hours.
SUGAR FROSTED GRAPES
Steps:
- At least 3 hours and up to 7 days before serving, remove the grapes from their stems and place in the freezer. When ready to serve, whisk the egg whites with the lemon juice in a large bowl until frothy. Put the sugar in another bowl.
- Drop the grapes into the bowl of egg whites, then pour the contents of the bowl through a strainer to drain the liquid. Dump the grapes onto a paper towel and roll them around until most of the excess egg white has been absorbed. Working in batches, add the grapes to the sugar and shake them around to coat. Shake off any excess. Transfer to serving glasses and serve immediately.

- Pluck grapes from their stems and rinse in a colander. Pour the gelatin mix onto a plate. Place grapes on the plate one handful at a time and roll around until coated. Transfer to a pretty dish and refrigerate for 1 hour to allow the gelatin to set.

- Place large rack on sheet of foil. Whisk egg whites in medium bowl until frothy. Dip grape clusters into whites to coat. Arrange clusters on rack. Sift sugar over grapes, turning to coat on all sides. Let grapes stand until dry, at least 2 hours and up to 8 hours.
GREEN GRAPES WITH FETA CHEESE & HONEY
Serve this for dessert or arrange it on a leaf of butter lettuce as a salad. I made this and served it over baby spinach leaves. I'm not a big fan of feta cheese, for me a little goes a LONG way. So I made an extra side of the dressing and poured it over the fruit, and used freshly grated parmesan cheese instead. From Eating Well magazine... NOTE: Prep time is cooking time.

- 1. Wash grapes and allow to dry. Snip into small clusters. Whisk egg whites until they run off the whisk in a thin stream; they should remain clear and foamy, not stiffly beaten. Place sugar in its own shallow bowl. Dip each grape cluster into the egg white, shaking off excess.
- 2. Next dip the grapes in the sugar and place on oven tray covered with parchment paper. Leave in a warm place to dry. The grapes can be prepared 2 or 3 weeks before use and can be kept in airtight bags in freezer.
- 3. I use these frosted grapes as a garnish when I am catering. A friend just called and asked me how to prepare them and I thought I would share with y'all too.

- Prepare simple syrup by dissolving equal parts sugar and water in a small sauce pot over medium low heat. Stir continuously until sugar is dissolved. Set aside
- Place all grapes into the pot of simple syrup or in a separate bowl and coat each grape generously with syrup.
- Place parchment paper on a baking sheet and wire rack on top. (This will make for easy clean up.) Using a slotted spoon, place each grape on wired rack. Make sure grapes are not touching. Let sit for an hour on the counter.
- Place 1/2 cup of sugar on a shallow plate and roll each grape in the sugar. Make sure all sides are coated.
