These from-scratch breakfast-sausage patties are an easy and great way to avoid preservatives and additives.

Steps:
- In a small bowl, mix together pork, sage, thyme, maple syrup, pinch of nutmeg, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Divide mixture into 4 patties (about 3 tablespoons each).
- In a medium skillet, heat oil over medium-high. Add patties and cook until browned, about 1 minute. Reduce heat to medium and flip patties. Cover and cook until cooked through, 5 to 8 minutes.

- In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
- Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
- Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).

FROM SCRATCH BREAKFAST SAUSAGE
This is a very flavorful, but no too hot breakfast sausage. Because of the pork I got on sale, it cost me approximately .89 a pound. You can make this as lean or fatty as you like by the cut of pork you use. I have used many different cuts, it all works well. Then leaner cuts may need a little more olive oil added in.

- 1. I prefer to grind my own meat, so this batch was made with country style pork ribs (because they were on sale), which are pretty fatty, but that's what add flavor right? I ground the pork and weighed it out.
- 2. I used a wide shallow bowl so I could spread the sausage out well to evenly distribute the seasoning. I sprinkled all seasonings on and drizzle the olive oil around the pork. Then I "folded" it by hand until completely mixed.
- 3. Refrigerate overnight or longer. Form patties and cook till done. For spicier sausage, add more red pepper flakes. If using a leaner pork you will probably need to add a little liquid to it, apple juice or water.

- Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

- In a small bowl mix together sage, Italian spices, salt, garlic powder, black pepper, brown sugar and cloves.
- In a large bowl add ground pork, ground turkey and spices. Mix well with your hands to combine everything.
- Roll the sausage out into 1/2 inch thickness between 2 layers of wax paper (this is easy cleanup!). Using a biscuit cutter or top of a mason jar, cut out patty shapes. You will need to roll out the sausage meat a few times to use it all. In the end you should end up with around 15-20 patties.
- Spray a large frying pan with nonstick spray and add sausage patties, cooking them over medium high heat until they're browned on both sides (or 160 degrees internally), this takes about 5 minutes on each side or 10 minutes total. I usually have to do 2 batches to cook them all.

- Combine maple syrup, salt, pepper, dried sage, and marjoram leaf together in a small bowl then stir to create a slurry. Pour over pork in a large bowl then mix with hands until just combined - DO NOT OVERMIX or sausage will end up tough. Shape into 12 patties then place onto a plastic wrap covered baking sheet, and cover with more plastic wrap. Refrigerate overnight to let the flavors meld.
- To saute: Let patties sit at room temperature for 10 minutes to take the chill off then saute in a large skillet sprayed with nonstick spray over medium heat (no higher,) for 4-5 minutes a side, or until cooked through.
- To bake: Preheat oven to 400 degrees then line two baking sheets with foil and spray with nonstick spray. Transfer patties to prepared baking sheets then bake for 10 minutes, flip patties, and then bake for 7-10 more minutes or until cooked through.
- To freeze: Refrigerate patties until completely cool then transfer to a Ziplock freezer bag and freeze. To reheat, place patties on a plate then cover with a paper towel. Microwave at 50% power for 2-4 minutes, or until heated through.

- In a medium sized bowl, combine all the ingredients except vegetable oil. Mix thoroughly. Cover the bowl; refrigerate for 15 minutes.
- To make the patties: Rinse your hands in really cold water (this helps to make it easier to make the patties without it sticking as much). Divide the meat into 8 patties. Shape each patty into a 2 1/2 inch wide disk.
- If you don't want to cook all the patties at once, you can refrigerate the patties or freeze them until you want to use them.
- If cooking immediately, heat a large skillet or griddle over high heat. Add the vegetable oil and continue heating. Place the sausages in hot skillet or griddle. Fry them about 4 minutes on each side until golden brown. Carefully turn patties over and repeat until cooked through and lightly browned on both sides.
