An easy to throw together side dish with inexpensive cabbage!

1/4 medium green cabbage
2 tablespoons butter (or more if you are feeling decadent)
salt and pepper

Steps:

  • Core and very thinly slice the cabbage.
  • Melt the butter in a large skillet (I use non-stick) over medium heat. When it is bubbling, add the cabbage. Salt and pepper the cabbage.
  • Stir occasionally and cook until mostly wilted, about 10 minutes.
  • Turn the heat down to medium-low and let cook, stirring frequently, until cabbage is starting to caramelize (brown), about 10 minutes. Do not let burn.

1/4 teaspoon crushed red pepper flakes

Steps:

  • In a large skillet, melt butter over medium heat. Stir in the sugar, salt, pepper flakes and pepper. Add the cabbage and water. Cook for 5-6 minutes or until tender, stirring occasionally.

1 (15 ounce) can chicken broth
1 head cabbage, cored and coarsely chopped
1 pinch salt and pepper to taste

Steps:

  • Bring the butter and chicken broth to a boil in a large skillet. Reduce heat to low and add the cabbage. Cover and cook over low heat to steam the cabbage for about 45 minutes, stirring frequently, or until cabbage is tender and sweet. Season with salt and pepper and serve.

Frizzled cabbage with an Asian flavor. Easy to make with packaged slaw mix. Makes a nice side dish with steamed rice and Asian chicken wings.

1 (16 ounce) bag coleslaw mix
2 slices bacon, diced
soy sauce or teriyaki sauce

Steps:

  • Fry bacon in medium hot skillet until crisp.
  • Remove bacon from pan and pour off all but about 2 tablespoons of the drippings.
  • Add the cabbage to hot skillet and a bit of water to de-glaze the pan.
  • Reduce heat and cover pan.
  • Stir occasionally and cook until mostly wilted.
  • Turn the heat down to medium-low and let cook, stirring frequently, until cabbage is starting to caramelize (brown), about 10 minutes.
  • Do not let burn.
  • Add preferred sauce to taste, return bacon to cabbage and serve.
