CRISP BANANA AND PINEAPPLE FRITTERS



Crisp Banana and Pineapple Fritters image

2 eggs
1/8 teaspoon cinnamon
2 cups panko (Japanese) bread crumbs
2 bananas, cut into 1-inch pieces
1/2 pineapple, cut into 1-inch pieces
Canola oil, for frying
1/4 cup organic honey, optional

Steps:

  • In a shallow bowl, whisk the eggs with the cinnamon using a fork. Place the panko bread crumbs on another plate. Toss the fruit in the egg, then into the crumbs. Repeat this 1 more time to make a second coating.
  • In a 6 to 8-quart pan heat canola oil, filled just 3 inches from top of the pan, to 365 degrees F. Drop the fruit into the oil and cook until brown on all sides. Drain on paper towels.
  • Serve immediately, drizzled with honey, if desired.

1 1/2 cups sifted flour
2 tablespoons sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup milk
2 eggs
1/2 cup fresh blueberries, washed or 1/2 cup diced pineapple

Steps:

  • Put into mixing bowl the flour, sugar, salt and baking powder. Set aside.
  • Put into another container milk, eggs, and your choice of fruit.
  • Mix together until fruit is mixed as you prefer.
  • Cover.
  • Pour liquid mixture over dry ingredients in mixing bowl Stir wellDrop batter from spoon into deep fat at 375° and fry for 5 mins or until golden brown.
  • Drain each fritter on paper. Sprinkle with Confectioners sugar. You can make vegetable fritters by substituting in the recipe 1/2 cup of your favorite vegetable for the fruit.
  • Corn fritters are terrific.

oil for frying
1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
1 cup self-rising flour
½ cup milk
1 egg
2 cups white sugar
2 tablespoons confectioners' sugar for dusting, or as needed

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Whisk pineapple, flour, milk, and egg together to form a light and fluffy batter.
  • Bring reserved pineapple juice to a boil in a small saucepan. Add white sugar and stir to dissolve; lower heat. Simmer until thickened glaze forms, about 10 minutes. Remove from heat and cool to room temperature, about 15 minutes.
  • Drop spoonfuls of batter in the hot oil, 2 to 3 pieces at a time, and fry until golden brown, 3 to 4 minutes. Drain on paper towels.
  • Drizzle glaze over fritters and dust with confectioners' sugar.

1 1/3 cups all-purpose flour
1 1/2 teaspoons double-acting baking powder
3 tablespoons granulated sugar
1 teaspoon ground ginger
3/4 cup chopped fresh pineapple, drained
3/4 cup chopped banana
1/2 cup milk
1 large egg, beaten lightly
vegetable oil for deep-frying
confectioners' sugar for dusting the fritters

Steps:

  • In a small bowl sift together the flour, the baking powder, the granulated sugar, the ginger, and a pinch of salt. In a bowl combine well the pineapple, the banana, the milk, and the egg, add the flour mixture, and stir the batter until it is combined. In a kettle heat 1 1/2 inches of the oil until it registers 375°F. on a deep-fat thermometer, drop the batter by tablespoonfuls into the oil in batches, and fry the fritters, turning them, for 1 to 1 1/2 minutes, or until they are golden. Transfer the fritters with slotted spoon to paper towels to drain and sift the confectioners' sugar over them.
