FRISEE AND FENNEL WITH DRIED APRICOTS AND CRUMBLED ROQUEFORT
Roquefort and frisee is one of our favorite combinations. The addition of shaved fennel and dried apricots adds complexity to the mixture.

Steps:
- Discard outer leaves of frisee. Tear remaining frisee into bite-size pieces, and place in serving bowl.
- Using a mandoline or very sharp knife, shave fennel as thin as possible. Transfer to the serving bowl.
- Scatter apricots over salad. Crumble Roquefort directly into serving bowl. Just before serving, drizzle with olive oil, season with salt and pepper; toss, and serve.
AUTUMN FRUIT AND FRISEE SALAD WITH PANETTONE CROUTONS

- Preheat the oven to 250 degrees. Scatter the panettone cubes on a baking sheet and bake, tossing occasionally, until crisp and brown, about 1 hour. Be careful that they do not burn. Set aside. Put the cherries, apricots, and raisins in a medium bowl. Measure the honey and vinegar into a small pan or microwave safe bowl. Heat together just until warm. Whisk in 4 tablespoons olive oil and taste for balance. Add the remaining 1 tablespoon oil, if necessary. Pour over the dried fruits. Add the pear, fennel, and salt and pepper to taste. Pour the fruits and dressing over the greens in a salad bowl and toss well. Add the croutons and toss again. Serve immediately.
TRUFFLED FRENCH FRIES
During dinner at the W. Fort Lauderdale Hotel, truffled french fries came with our meal. After asking the ingredients, I came home to make them myself. A fun, very delicious, yet high caloric treat! Be sure to buy high quality truffle oil at an Italian or specialty market. My recipe calls for red potatoes, but frozen (shoestring-size) fries do cut down on time and taste almost as good.

- Cut potatoes to desired size, but not too thick. Try to ensure fries are as close to the same size as possible.
- Place fries into a microwave-safe container and microwave for 4 minutes.
- Place oil into a frying pan and heat to 375 degrees F (190 degrees C).
- Place 1 to 2 handfuls of fries in the frying pan and fry until browned and soft, 4 to 5 minutes, turning and tossing frequently to cook evenly.
- Preheat the oven to 225 degrees F (110 degrees C).
- Drain fries in a bowl lined with a paper towel. Toss fries in the bowl to get rid of excess oil; remove paper towel.
- Combine cilantro, Parmesan cheese, garlic, salt, and pepper in a bowl. Toss fries in the mixture until well mixed. Drizzle fries with truffle oil and toss again until well mixed. Transfer fries to an oven-safe container.
- Bake in the preheated oven to allow truffle oil to settle and reheat fries, 5 to 7 minutes. Serve fries while hot.

HOMEMADE CRISPY SEASONED FRENCH FRIES
My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

Steps:
- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.
