Frisee and Apple Salad image

Frisee's natural bitterness becomes mellow when you toss bite-sized pieces with crisp and sweet apples in a creamy-sweet dressing.

1/4 cup sour cream or creme fraiche
4 teaspoons champagne or white-wine vinegar
1/2 teaspoon honey
Coarse salt and ground pepper
1 large head frisee (about 7 ounces), cut into bite-size pieces
1 apple, such as Honeycrisp, Pink Lady, or Gala, cored and thinly sliced

Steps:

  • In a small bowl, whisk together sour cream or creme fraiche, champagne or white-wine vinegar, and honey. Season with salt and pepper.
  • In a large bowl, toss frisee and apple with enough dressing to coat. Season with salt and pepper and serve immediately.

Frisee and Green-Apple Salad with Goat-Cheese Toasts image

This bistro-inspired first course of bitter greens, tart apple, and toasted walnuts is enhanced with bubbling Bucheron cheese and toasted baguette. It's both impressive and perfectly suited to last-minute assembly.

1 tablespoon white-wine vinegar
1 heaping tablespoon minced shallot
1 teaspoon Dijon mustard
1/4 teaspoon coarse salt, plus more to taste
Freshly ground pepper, to taste
3 tablespoons extra-virgin olive oil
1 baguette, cut into 1/2-inch slices
4 cups frisee (3 to 4 ounces)
1 cup walnut halves (3 ounces), toasted
1 Granny Smith apple, thinly sliced
Coarse salt and freshly ground pepper, to taste
8 ounces Bucheron or other soft goat cheese
Extra-virgin olive oil, for drizzling

Steps:

  • Make the dressing: Whisk together vinegar, shallot, mustard, salt, and pepper in a bowl. Add oil in a slow, steady stream, whisking until emulsified.
  • Make the salad: Preheat oven to 350 degrees. Place baguette slices on a baking sheet, and toast until golden, 8 to 10 minutes.
  • Meanwhile, toss together frisee, walnuts, and apple in a large bowl. Add dressing, and toss. Season with salt and pepper. Transfer to a serving platter.
  • Preheat broiler. Place cheese, cut side up, on a second baking sheet, and drizzle with oil. Broil until top is browned and bubbling, 3 to 4 minutes. Place on platter. Serve with baguette toasts.

Crisp curly endive and thin slices of apple in a honey dressing topped with roasted walnuts. Original recipe included 1/2 cup of dried cherries in the dressing but I have omitted them because I have never seen them to buy - perhaps cranberries could be tried. Made it without them anyway and loved it

2 tablespoons apple cider vinegar
2 tablespoons minced shallots
1 tablespoon honey
1 large head frisee, torn into bite-size pieces (about 6 cups)
1 medium gala apples, cored, thinly sliced
1/2 cup coarsely chopped toasted walnuts

Steps:

  • Whisk first 4 ingredients in small bowl to blend.
  • Season dressing to taste with salt and pepper.
  • Toss frisée and apple slices in large bowl. Add honey dressing and toss to coat.
  • Sprinkle with walnuts and freshly ground black pepper and serve.

4 1/2 tablespoons fresh lemon juice

2 3 -to 4-ounce heads of frisée, coarsely torn
2 small heads of Belgian endive, cut crosswise into thin strips
2 small Pink Lady or Jazz apples, quartered, cored, cut into matchstick-size strips
9 radishes, trimmed, thinly sliced
3 tablespoons coarsely chopped fresh Italian parsley

Steps:

  • Combine lemon juice, chopped shallots, and grated lemon peel in small bowl. Gradually whisk in oil. Season dressing to taste with salt and pepper. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature. Rewhisk before using.
  • Combine frisée, endive, apples, radishes, and parsley in large bowl. Toss salad with dressing and serve.
