FRIJOLES CHARROS | MEXICAN CHARRO BEANS RECIPE



Frijoles Charros | Mexican Charro Beans Recipe image

These frijoles charros are another level of beans. Serve as a main dish or as a side dish. Perfect for cookouts too.

Number Of Ingredients 15

1 Tablespoon olive oil or vegetable
1 small white onion (finely chopped)
3 whole garlic cloves (finely minced)
3/4 cups vegan chorizo
2 whole vegan hot dogs
3 strips vegan bacon
2 whole Serrano or jalapenos (to taste)
1 large Poblano pepper (or chile guero)
2 medium Roma tomatoes (chopped)
1.5 cups dry pinto (or other beans (can soak overnight if desired))
1 teaspoon salt (to taste)
1/4 teaspoon ground black pepper (to taste)
1 teaspoon ground cumin (adjust to taste)
4 cups low sodium vegetable broth
1 cup chopped cilantro

Steps:

  • Select the Sauté function on the pressure cooker or Instant Pot and wait until it warms up. Then add the oil and the onion. Sauté until the onion is soft and translucent, then add the garlic and sauté a couple of minutes.
  • Add the chorizo and hot dogs and sauté another few minutes. Now add the chilies, tomato, stir until well combined then add the dried beans and mix until well combined. Add the seasonings and broth and mix until well combined.
  • Cancel the Saute function and carefully place the lid on the pressure cooker. Set valve to Sealing then set to High Pressure and time to 50 Minutes.
  • Once finished cooking do a natural release for 10 minutes then a forced release of any leftover steam - be very careful and stand away from the pot.
  • Allow to cool slightly before serving topped with some roughly chopped cilantro. You can also serve with lime wedges. Enjoy!

Easy Cowboy Beans (Frijoles Charros) image

This is a tasty, zesty side dish that can easily become a main meal. Serve soupy with warm flour tortillas or crusty bread, crumble corn bread on top, or scoop up with tortilla chips. Like mac and cheese, it's a great comfort food. It is easy to make because it doesn't require constant attention and is good for everything from a family meal to a football party. It can easily be doubled. Check flavor before serving and alter seasonings to taste if necessary. Top with more onion and cilantro as desired. If there are any leftovers, they hold up well and taste great the next day.

2 (15.5 ounce) cans pinto beans, undrained
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), drained
1 cup cubed cooked ham
¼ cup finely chopped fresh cilantro
¼ cup finely chopped red onion
2 cloves garlic, minced
ground black pepper to taste
1 dash hot sauce, or to taste

Steps:

  • Combine pinto beans, tomatoes with green chile peppers, ham, cilantro, red onion, garlic, black pepper, and hot sauce in a saucepan; bring to a boil. Reduce heat and simmer for about 1 hour.

  • Place the beans in a large bowl with enough water to cover them by 2-inches. Let soak overnight.
  • Fry the bacon until all of the fat has rendered and it has become crispy. About 10 minutes over medium heat. Transfer to a paper-towel lined plate and place in the refrigerator. Pour off all but 2 tbsp. of the bacon grease (reserve for another dish). Add the onion and cook until translucent. About 8 minutes. Add serrano, garlic, oregano, and cumin. Cook an additional minute.
  • Add in the chicken stock, scraping the bottom of the pot to remove any stuck-on bits. Add the beans. Bring to a gentle simmer and cook for about 1 1/2 hours, or until tender.
  • Add cilantro, tomatoes, and bacon. Taste for salt and add more, if necessary. Cook an additional 15 minutes.
