MOM'S BEST FRIEND BROWNIES
We know that some kids would be happy to eat an all-sweets lunch. With these you won't have to stress quite so much. They're lower in fat and sugar than most other brownies, and baking them in mini-muffin tins keeps the portion size just right.

- Position rack in the lower third of the oven and heat oven to 325 degrees F. Use an 8 by 8-inch silicone baking pan or line a similar sized metal or glass baking dish with foil or parchment paper so it hangs over the edges by about 1 inch. For mini brownie bites, line mini muffin tins with 36 mini muffin liners. Spray the prepared pan.
- Put the butter, oil and chocolate in a microwave-safe bowl, and heat at 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. (Alternatively put the chocolate and butter in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl over, not touching, the water, and stir occasionally until melted and smooth.)
- Stir the brown and white sugars, vanilla and salt into the chocolate mixture with a wooden spoon. Add the eggs and beat vigorously until fully incorporated and the batter is thick and glossy. Add the cocoa, flour and baking soda and stir just until it disappears.
- Pour the batter into the pan and bake until the top is crispy and a toothpick inserted into the middle comes out with a few crumbs, about 30 minutes (40 minutes if not using silicone) for pan brownies, and 14 to 15 minutes for mini brownie bites.
- Cool the brownies in the pan on the counter. Lift brownies out of the pan by the foil, if needed. Peel off the foil and cut into squares, sticks or shapes using a cookie cutter. Serve. Store extra brownies in a tightly sealed container at room temperature for up to 3 days.

Steps:
- Heat oven to 325°F with rack in middle. Lightly grease or butter pan and line with crisscrossed sheets of parchment or foil, leaving a 1-inch overhang.
- Melt chocolate with butter in a large metal bowl set over a pan of simmering water, stirring occasionally, until smooth. Remove bowl from pan and let cool 5 minutes.
- Add sugar and whisk well.
- Add eggs, 1 at a time, whisking well after each addition, and whisk mixture vigorously until smooth and cohesive.
- Whisk in vanilla and salt.
- Add flour and cocoa and stir with whisk until incorporated and batter is smooth.
- Fold in nuts with a rubber spatula.
- Spread batter evenly in pan and bake until a wooden pick comes out clean, about 40 minutes.
- Cool brownies completely in pan on a rack.
- To remove them easily from the pan, use the parchment overhangs to lift the brownies, still on the parchment, from the pan. Cut brownies into serving pieces.

- 1. Pre heat oven to 325 degrees. Mix brownie ingredients as listed and bring together with an electric mixer until combined
- 2. Butter and flour a 9x13 baking pan (I like using half flour half coco mix) pour batter into prepared baking pan bake at 325 for 1 hour until brownies start to pull from side of pan and a toothpick comes out semi clean. """"Important""" Let cool completely!!!!!
- 3. Glaze recipe: In a small sauce pan bring butter, water and sugar to a boil over med heat, continue to boil for 5 min stiring constantly. Remove from heat and add Baileys, stir till combined, drizzle over cake, serve with tall glass of cold milk! Enjoy

Steps:
- 1. Mix dry ingredients (flour, sugars, salt, baking powder, cocoa and chocolate chips) well.
- 2. In separate bowl, mix remaining ingredients well. Add to dry ingredients.
- 3. Pour into greased 9 x 13in pan. Bake at 350 degrees for 25 minutes. Do not overbake, as brownies will dry out fast. Cover tightly when cool.
