4 strips thick cut bacon, diced
3 tbsp butter
1 onion, diced
6 cloves garlic, diced
1 head cabbage, diced
2 tsp fresh cracked black pepper
1 tsp celtic sea salt

Steps:

  • Cut bacon into thick chunks, pan fry until crunchy. Remove from pan and set aside.
  • Drain off most of the bacon fat - leave a little if desired for taste, but too much will give an oily texture.
  • Heat butter in large pan on medium-high heat until melted and foamy.
  • Add diced onions to pan, cook until soft and transparent, about 4 minutes. Stir to prevent sticking or burning.
  • Add garlic and cabbage to the pan, tossing evenly to coat in butter.
  • Generously season with salt and pepper.
  • Let cabbage reduce by half, about 8 minutes, stirring occasionally as it cooks down to prevent burning and allow it to cook evenly. Add bacon back to pan.
  • When cabbage has lost much of it's volume and started to turn shiny, slightly translucent, and has lovely browned bits, it is ready to serve.
  • Serve immediately.
  • Leftovers can be stored in an airtight container in the refrigerator for up to four days, three months in the freezer.

3 lbs cabbage, quartered, core removed, and cut into a large 1-inch dice
1/2 lb sliced bacon
1/2 of medium onion, sliced thinly
1/2 cup water
1 tablespoon sugar
1 tablespoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
  • Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
  • Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
  • Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
  • Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
  • Crumble the cooked bacon into the cabbage and serve hot.

1 teaspoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 pounds diced cabbage

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, stirring occasionally, until browned and crispy, 7 to 10 minutes. Drain bacon slices on paper towels and remove most of the bacon grease from the skillet.
  • Add oil to the skillet and heat over medium heat. Add onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. 2 1/2 tablespoons extra-virgin olive oil (, divided)
1 head green cabbage ((about 1 3/4 pounds))
1 shallot (, roughly diced)
3 cloves garlic (, minced)
salt and pepper (, to taste)
6 slices bacon

Steps:

  • Preheat oven to 425 degrees F. Lightly coat a 15x10-inch roasting pan with 1/2 tablespoon of the olive oil.
  • Slice the cabbage into 1-inch thick steaks, lengthwise, keeping the core intact.
  • Brush both sides of each cabbage steak with the remaining olive oil. Sprinkle the shallot, garlic, salt, and pepper over each one. Arrange cabbage steaks on the roasting pan (overlapping slightly is fine, if necessary.)
  • Transfer to the oven and roast for 20 minutes. Gently turn each steak over and roast for an additional 15 minutes, until the cabbage is tender and a little charred around the edges.
  • In the meantime, cook your bacon! You can either:1. Cook it in the oven with the cabbage - line a rimmed baking sheet with foil coated with cooking spray. 2 tablespoons butter
1 small white onion, slice very thin
1 small cabbage
2 tablespoons cider vinegar
1 bay leaf (optional)

  • Cut bacon into 1 inch pices.
  • Place in large frying pan and cook until ready to turn.

6 slices thin or thick cut bacon
salt and pepper to taste
1 medium cabbage head with the core removed, shredded, then cut into small pieces
1 large onion, diced
1 Teaspoon white sugar

Steps:

  • Place the 6 slices of bacon into a large frying pan over medium heat. Fry the bacon until it's fully cooked through. Remove the cooked bacon from the frying pan , reserving the bacon grease in the pan. When the bacon has cooled, crumble it and set it to the side. Add the shredded cabbage , diced onion and sugar to the pan with the bacon grease. Cook the cabbage and onions in the pan, turning the cabbage with a spatula until it wilts down and becomes soft. Continue cooking if you like until it browns slightly. Add the crumbled bacon to the pan and mix it in by folding it into the cabbage with a spatula. Salt and pepper the cabbage to taste before serving.
