Steps:
- Slice the zucchini into ½ cm/ 0.2 inch thick slices. Place the flour on a plate. Beat the eggs in a shallow bowl. Coat the zucchini slices lightly with flour and pat the pieces with your hands to remove the excess flour.
- Heat 2-3 tablespoons oil or lard in a non-stick or cast iron pan. The oil should be enough to cover the bottom of the pan in a thin layer.
- Drag each zucchini slice through the beaten eggs just before placing it in the pan.
- Fry on medium-low heat for about 3 minutes until golden brown. Flip and fry for another 2-3 minutes until golden brown. If they turn too dark too soon, turn the heat even lower.
- Next batch: Remove from the pan and fry the next batch adding more fat if necessary. Place the fried zucchini slices on kitchen paper to help absorb the excess fat.
- Serve: Only salt the zucchini before serving. Serve warm with garlic sauce, tomatoes, feta cheese, and bread. Or cold in sandwiches.

This quick side dish has an Asian flair, and is also good with sliced mushrooms thrown in! For the teriyaki sauce, I like to use the honey & pineapple variety.

FRIED ZUCCHINI & ONIONS
I came across this recipe somewhere and wrote it down on paper during my mission to find a zucchini recipe that my oldest son (who hates zucchini) would like. I'm sorry to say I haven't found that recipe yet, but for my husband and I, who like zucchini, this was the best fried zucchini recipe we've ever tried!

ZUCCHINI WITH PARMESAN
Steps:
- Remove the ends of the zucchini and, if they are large, cut in half lengthwise. Slice the zucchini diagonally in 1/2-inch slices. Heat 2 tablespoons of olive oil in a large (12-inch) saute pan and add the onions. Cook for 10 minutes on medium-low heat, until they start to brown. Add half the zucchini, 1 teaspoon salt, and 1/4 teaspoon pepper to the pan and cook, tossing occasionally, for 10 to 15 minutes, until just cooked through. Sprinkle with Parmesan and cook for 30 seconds more. Remove to a serving platter and repeat with the rest of the zucchini. Serve immediately.
- Note: If you cook too much zucchini in one pan, you end up steaming rather than sauteing it. I prefer to cook it in 2 batches.

- Chop the almonds roughly. Heat a large skillet or non-stick pan without adding any fat and roast the almonds until golden and fragrant. Stand by the pan and shake it often to avoid the almonds from burning. Transfer the almonds to a large plate and leave to cool while you continue with the recipe. Pine nuts can be used instead and roasted in the same way.
- If using medium zucchini slice them into rounds about 3 mm/ 0.10 inch thick. If using large zucchini, halve them, remove the seeds with the help of a teaspoon and slice the halves.
- Heat 1 tablespoon olive oil in the skillet or nonstick pan you used for roasting the almonds. Add about half of the zucchini and fry until golden on the underside. Flip with a spatula and continue frying them until golden on the other side as well.
