FRIED CHEESE BALLS RECIPE
What's better than cheese? Fried cheese balls! Only three ingredients in this easy, cheesy appetizer that's crunchy on the outside while melted and gooey on the inside.

- With an electric mixer or by hand, mix the cheese, egg and cornstarch (or flour) in a large bowl until a soft dough forms. Scoop 2 teaspoons of dough and roll into a ball. If desired, roll balls in cracker crumbs for an extra crispy coating. Refrigerate cheese balls until thoroughly chilled, about 30 minutes. In a medium frying pan, heat oil over high heat (350°F for deep frying). Fry cheese balls until golden brown, turning once, about 30-60 seconds per side. Drain on paper towels. Serve hot with your favorite sauce for dipping.

FRIED CHEESE STICKS
Just about everyone loves fried cheese sticks. Recipes.com's version gets a punch of heat from ground red pepper and cheese spiced with jalapeños. To tame heat, use plain Monterey Jack (without the peppers), mozzarella or Swiss cheese, and either omit the red pepper or use less of it. Recipe from 2009.

- 1. Cut cheese crosswise into 3/4 inch slices. Lay slices flat and cut in half lengthwise. Combine flour and red pepper; stir well. Combine bread crumbs and parsley in another bowl; stir well. Dip cheese sticks in beaten eggs. Dredge in flour mixture. Dip coated cheese in egg again; dredge in bread crumb mixture, pressing firmly so that crumbs adhere. Place cheese sticks on a wax paper-lined baking sheet and freeze for 30 minutes. Fry cheese sticks in 375^ deep oil until golden brown. Drain on paper towels. Serve immediately with marinara sauce or Ranch dressing. --- Note: If you like cream cheese it is awesome fried this way. Use cream cheese cold ,cut in strips. Prepare as above. Freeze as above and fry up. I like to dip these in orange marmalade. OMG this is to die for.

Steps:
- In a small bowl, beat the egg with 1-tablespoon of the bread crumbs.
- Dip the cheese cubes into the egg mixture and then roll in the bread crumbs to coat well.
- In a large skillet, melt just enough oil to make a 3-inch depth.
- Heat to 380-degrees.
- Fry the cheese cubes, a few at a time, for 1 minute or until crisp and golden.
- Lift out with a slotted spoon and drain on a paper towel.
- Keep warm until ready to serve.
- Serve with toothpicks.
- Makes: about 1 dozen.
- (*Can substitute cheddar, mozzarella, co-jack, pepper jack or one of your own favorites).
- Serve plain or with dipping sauces such as spaghetti, pizza, marinara, ranch or bbq.
