SAUTéED YELLOW SQUASH WITH ONIONS
We enjoy this dish all year long and it goes well with any entrée! It is one of the ways my mother liked to prepare yellow squash for our family. The yellow color helps make a pretty plate. I have found that a combination of butter and olive oil is great for sautéing (Paula Deen agrees). Purchase small fresh squash.

Steps:
- Cut squash into thin slices. Spread slices out onto paper towels. Salt and allow to "sweat". After 10 minutes blot with paper towel. Flip slices over and repeat with salt and blot after 10 minutes. This allows salt to flavor squash and releases water for better sautéing.
- In a 10 inch saucepan combine olive oil and butter. Lightly sauté onion first and set aside into small bowl.
- In same saucepan sauté squash on low heat until tender. Before removing from heat add sautéed onions and sprinkle with Lawry's seasoned salt, garlic powder and black pepper.
- Note: For best flavor use a sweet onion.

- Fry bacon until crisp, remove from skillet.
- Add chopped onion, cook until translucent.
- Add sliced squash fry stirring frequently until squash is tender.
- Season with salt and pepper.
- Crush bacon and add back to pan.
- Either yellow zucchini or crookneck squash work well in this dish.

I've been cooking Brussels sprouts this way for years. I'm not sure where I got the recipe. Using fresh Brussels sprouts is preferred naturally, but if not readily available, frozen Brussels sprouts may be used instead. If using frozen Brussels sprouts, you may have to drain any excess liquid that is rendered while cooking the sprouts.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels, retaining grease in the skillet. Crumble bacon.

- 1. Clean and slice squash, dice up your onions and chop up bacon into bitesize squares.
- 2. Fry up bacon, first, using a large skillet, pot or on a cookie sheet in the oven. Save bacon grease to add into the pot.
- 3. Put saved bacon grease in heated pot (your not frying in deep bacon grease, just enough drippings from the bacon you cooked to use for sauteing and browning, even browning your squash some when you put them in to cook), add in onions and let them saute'. You want them good and brown.
- 4. Once the onions are done, add in the sliced squash, along with 2 tbsp of EVOO (Extra Virgin Olive Oil). Add 1 tsp of sugar, some salt and pepper to taste. Cook on Medium heat.
- 5. Let cook until they start to tenderize and turn a slight golden brown, then add in bacon and let cook until squash is completely tender, browned and done. Serve with Baked Pork Chops or any of your favorite meats. Enjoy!!!
