This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

2 TBSP Duck Fat or Rendered Bacon Fat
1 Cup Onion,, diced (Approx ½ onion, Spanish)
1 Pinch Kosher Salt
2-3 Strips Cooked Bacon, diced
1 LB Sauerkraut, (from a bag), drained and rinsed
1 Dollop Sour Cream, (optional) to serve with

Steps:

  • In a large saute pan, heat the duck fat at the highest setting. When the fat shimmers and is really hot, carefully add in the onions and a good pinch of salt. Stir and allow to brown, then stir occasionally for another 5 minutes.
  • Add in the chopped bacon, mix well.
  • Add in the sauerkraut and mix well. Cook for 5 minutes on high, then reduce the heat to medium.
  • The sauerkraut is ready when it is golden brown and smells delicious.
  • Serve hot and enjoy!

This recipe has to be the best tasting sauerkraut I've ever had. Traditionally, my family serves pork and sauerkraut every New Year's Day for luck in the coming year. I love cabbage as a general rule and like most sauerkraut recipes, but they can be quite sour depending on how it is prepared. Sadly I don't remember who gave me this recipe and who deserves the credit, since it was pulled from a collection of hand-written recipes I've kept for years. I made it as a side dish for New Year's Day dinner and it was a complete hit! This is certainly not your typical 'sour' sauerkraut recipe.

1 tablespoon bacon drippings
1 cup finely chopped onion
2 (16 ounce) packages sauerkraut, undrained
1 tablespoon packed brown sugar
1 teaspoon caraway seeds
½ cup chicken stock
½ cup cooking sherry

Steps:

  • Heat bacon drippings in a large skillet over medium heat; cook and stir onion until soft and translucent, about 5 minutes.
  • Place sauerkraut with juice into a large bowl and cover with water. Stir and use your hands to squeeze out as much of the water and juice as possible. Add squeezed sauerkraut to onion.
  • Stir brown sugar, caraway seeds, chicken stock, and cooking sherry into the sauerkraut mixture. Reduce heat to low and simmer until almost all the liquid has evaporated, 30 to 40 minutes, stirring occasionally.

1 (1-pound) package sauerkraut (not canned), rinsed and drained well (2 3/4 cups)
2 large eggs, lightly beaten
1/3 cup all-purpose flour
1/2 cup chopped scallion greens
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 to 3/4 cup vegetable oil
1 pound smoked beef and pork kielbasa, cut crosswise into 1/2-inch slices
Accompaniment: warm applesauce

Steps:

  • Preheat oven to 250°F.
  • Pat sauerkraut dry between paper towels to remove as much moisture as possible, then transfer to a bowl and stir in eggs, flour, scallion greens, salt, and pepper until combined.
  • Heat 1/4 inch oil in a 12-inch heavy skillet over moderate heat until hot but not smoking. Fill a 1/4-cup measure three-fourths full with sauerkraut mixture, then turn out into oil, using a fork to release, and flatten to 3 1/2 inches in diameter with fork. Form 2 more cakes in skillet, then fry, turning over once, until golden, about 4 minutes total. Transfer cakes with a slotted spatula to paper towels to drain. Keep cakes warm on a rack set in a shallow baking pan in oven. Fry more cakes in same manner with remaining mixture.
  • Brown kielbasa in 2 batches in oil remaining in skillet over moderate heat, turning, 2 minutes per batch, then transfer to paper towels to drain. Serve cakes topped with kielbasa.

1 large red Sweet potato (about 400 grams)
2 red onions (about 100 grams)
500 grams Sauerkraut
40 grams Almond slivers
1 Tbsp Corn oil
100 milliliters Vegetable broth
70 grams raisins
1 bunch flat-leaf parsley
300 grams Quark
salt
cayenne pepper
liquid Sweetener (to taste)

Steps:

  • Rinse sweet potatoes, peel and slice on a mandoline into long, very thin strips.
  • Peel onions, halve and slice into strips.
  • Drain sauerkraut in a colander. Toast almonds in a small dry pan until golden brown and let cool.
  • Coat a large skillet or wok with oil, add onion strips and fry briefly.
  • Add sweet potato and cook over low heat for 5 minutes, turning frequently. Gradually pour in vegetable broth.
  • Add sauerkraut and raisins to the vegetables. Cook, turning occasionally, over low heat for 15 minutes.
  • Meanwhile, rinse parsley, shake dry and pluck leaves. Put some aside and finely chop the rest.
  • In a small bowl, combine quark with chopped parsley, then season with salt and cayenne pepper.
  • Season sauerkraut with salt, cayenne pepper and a few drops of sweetener. Sprinkle with slivered almonds, garnish with remaining parsley and serve with parsley sauce.
