2 cups self-rising flour
Salt
1 teaspoon Old Bay seasoning
½ teaspoon black pepper
2 cups buttermilk
4 cups peanut oil or vegetable oil, for frying
2 pounds medium shrimp, peeled and deveined
Optional, for serving: tartar sauce (or other dipping sauce); lemon wedges; fresh parsley

Steps:

  • In a shallow bowl, whisk together flour, 1 tablespoon salt, Old Bay seasoning, and black pepper.
  • Place the buttermilk in a separate shallow bowl.
  • Pour the oil into a medium Dutch oven or cast iron skillet and warm over medium-high heat until it reaches 375 degrees F.
  • Meanwhile, pat the shrimp dry and dredge them in the flour mixture first, then coat with buttermilk, and dredge in the flour mixture again. Shake the shrimp after each coating to get off any excess flour or batter.
  • Working in batches, fry shrimp until golden brown (about 2-3 minutes). Use a slotted spoon to transfer the shrimp to a paper towel-lined tray. Season with additional salt, to taste. You may need to increase the heat to keep the oil at a steady temperature between 350 degrees F and 375 degrees F as the shrimp fry.
  • Keep the fried shrimp warm in a 200 degree F oven while you fry the remaining batches.

1 lb shrimp (16-20 count, peeled and cleaned)
¼ cup butter milk (or regular milk)
2 large eggs (whipped to make egg wash with milk added)
2 cups seasoned bread crumbs
corn oil for frying (or vegetable oil of your choice)
¼ cup mayonnaise
1 tbsp sweet pickle relish
squeeze of lemon juice
¼ cup ketchup
½ tsp Worchestershire sauce
1 tbsp prepared horseradish (*more or less as to your tastes)
squeeze of lemon juice

Steps:

  • Preheat cooking oil to 350 -375 degrees F.
  • Peel and clean the shrimp, rinsing under cold running water.**this is when you can butterfly the shrimp if you like. Cut through the shrimp to open it up without completely cutting through the flesh.
  • Place the shrimp in the prepared egg wash completely covering. Remove and allow to drain briefly.
  • Place the egg-washed shrimp into the bread crumbs. Lightly pat bread crumbs onto the shrimp to completely coat.
  • Fry the shrimp until golden brown. Depending upon your frying method this could be 2-4 minutes
  • Allow shrimp to drain on a rack or paper towels before serving
  • Serve with Cocktail and tartar sauce

2 pounds jumbo shrimp (devein and peel but leave tails on)
1/2 cup all purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
3 eggs (beaten)
1 3/4 cups panko breadcrumbs
oil for frying
lemon wedges and parsley for garnish (optional)
cocktail sauce for serving

Steps:

  • Place the flour in a medium size bowl along with the salt, pepper and garlic powder. Stir to combine.
  • Place the eggs in a second bowl. Place the breadcrumbs in a third bowl.
  • Dip each shrimp first into the flour, then into the egg, then roll in the breadcrumbs to coat evenly. Place each breaded shrimp on a sheet pan. Repeat the process until all shrimp are breaded.
  • Heat 3 inches of oil in a deep large pot to 350 degrees F.
  • Add 6 shrimp at a time and cook for 3-4 minutes or until golden brown. Drain on paper towels.
  • Repeat the process with the remaining shrimp.
  • Place the shrimp on a plate. Serve immediately with cocktail sauce. Garnish with lemon wedges and parsley if desired.

This recipe is a skinnier version of Nobu's famous fried rock shrimp appetizer that's typically fried and doused in a creamy spicy mayo-based sauce. My version is baked and uses Greek yogurt, sriracha and sesame oil to create a healthier, yet still drool-worthy copycat!

1 lb. frozen rock shrimp (I used pre-coated "Boom Boom Shrimp" by Royal Asia, found at Whole Foods)
1 tsp. paprika
1 tsp. kosher salt
1 tsp. pepper
cooking spray
½ cup greek yogurt (I used 2%)
2 tsp. sriracha sauce (or chili garlic sauce)
1 tbsp. sesame oil
¼ lemon (juice only)
1 egg yolk
¾ cup iced water
½ cup all purpose or gluten free all purpose flour
1 cup panko bread crumbs

Steps:

  • Preheat oven to 400 degrees.
  • If making tempura batter, whisk all ingredients together well.
  • For tempura shrimp: In a bowl, place dethawed rock shrimp and toss with paprika, salt and pepper. Then place shrimp into tempura batter and toss. In another bowl, place panko bread crumbs. With tongs, take a few battered rock shrimp and place into the crumbs to coat. On a sheet pan sprayed well with cooking spray, arrange shrimp into one even layer.For pre-coated shrimp: In a bowl, spray frozen shrimp well with cooking spray. Toss coated rock shrimp with paprika, salt and pepper. On a sheet pan sprayed well with cooking spray, arrange shrimp into one even layer.
  • Meanwhile, in a large bowl mix together ingredients for the creamy spicy sauce, whisking in the sesame oil. Set aside.
  • After 10 minutes in the oven, remove sheet pan and using tongs, flip over each shrimp. Bake for another 10 minutes.
  • After another 10 minutes in the oven, remove shrimp from pan and gently place into the large bowl with the creamy sauce. Toss carefully to coat. Top with green onions and serve immediately!

1/2 cup all-purpose flour
3 large eggs
1 cup panko breadcrumbs
1/2 cup seasoned breadcrumbs
1 1/2 pounds peeled and deveined jumbo shrimp, butterflied
Vegetable oil, for shallow frying
Kosher salt and freshly ground black pepper
Cocktail Sauce, recipe follows
2 cups ketchup
2 heaping tablespoons prepared horseradish

Steps:

  • Combine the cornstarch and flour in one bowl, then beat the eggs and 1/2 cup water in a second bowl. In a third bowl, combine the panko and seasoned breadcrumbs. Bread the shrimp by dipping them first in the flour mix, then the egg wash, then the breadcrumbs.
  • Heat about 1/2 inch of oil in a nonstick skillet over medium heat to 350 degrees F.
  • Fry the shrimp in batches until golden and crispy, approximately 2 minutes per side. Drain on a paper towel-lined plate and season with salt and pepper. Serve with Cocktail Sauce.
  • Stir together the ketchup and horseradish in a bowl. Chill until ready to serve.

1 pound raw shrimp, peeled and deveined
¼ cup all-purpose flour, or as needed
2 eggs
2 tablespoons water
2 (4 ounce) packets saltine crackers
½ cup vegetable oil for frying

Steps:

  • Insert a knife 3/4 of the way below the head of 1 shrimp and cut down the center of the shrimp's back to the tail. Open shrimp with your fingers so it lies flat. Repeat with remaining shrimp.
  • Pour flour onto a shallow plate. Whisk eggs and water together in a small bowl to make egg wash.
  • Place saltine crackers in a large resealable bag. Crush into fine crumbs using a rolling pin. Pour crumbs onto a plate.
  • Coat each shrimp with flour. Dip in egg wash; roll in cracker crumbs on both sides. Transfer to a large plate. Refrigerate shrimp for 2 hours.
  • Heat 1 inch vegetable oil in a large skillet over medium-high heat. Cook shrimp until golden brown, 1 1/2 to 2 minutes per side. Drain on a paper-towel lined plate.

When Bang Bang Shrimp first hit the menu at Bonefish Grill eight years ago, it was a flop. The dish - crunchy fried shrimp in Thai chili sauce - wasn't the problem. The name was. After chain founder Tim Curci changed the name from Creamy Spicy Shrimp to Bang Bang Shrimp, the appetizer became the restaurant's best-selling dish. And as the shrimp exploded in popularity, so did Bonefish Grill. The chain now has more than 150 locations across the country. Regulars everywhere have a nickname for the signature snack: They just order a "Bang." Many of these fans, including Lori Piscopo from Valley Township, PA, wrote to us asking for the recipe, and while Curci remained tight-lipped on the details, Food Network Kitchens managed to create this perfect imitation.

24 ounces large raw shrimp, peeled and deveined
2 large eggs
1 cup buttermilk (or milk)
1/2 tsp. kosher salt

1/2 tsp. black pepper
2 tsp. garlic powder
2 tsp. onion powder

1 lb raw shrimp (peeled and deveined, thawed)
2 tablespoons sriracha (add more if desired)
¼ cup honey
4 cloves garlic (minced)
2 tablespoons soy sauce
1 ½ tablespoons rice vinegar
1 tablespoon vegetable oil

Steps:

  • Thaw shrimp under running water if necessary.
  • In a medium bowl, mix together srirach sauce, honey, garlic, soy sauce and vinegar.
  • Add shrimp and half of the marinade into a zip-lock bag or container to marinate.
  • In a large skillet over medium-high heat, add oil. Once hot add shrimp (discard the marinade) in a single layer and add the rest of the sauce.
  • Stir fry 3-4 minutes until pink and opaque (flip half way, about 2 minutes each side).
  • Transfer shrimp to a serving plate.
  • Thicken the sauce and remove from heat. Add the shrimp back and coat thoroughly.
  • Garnish with green onion. Enjoy!
