- Whisk soy sauce, sesame oil, ground ginger, and white pepper together in a bowl; set aside.
- Heat olive oil in a large skillet or wok over medium-high heat. Add onion and cook, stirring often, until soft and translucent, 3 to 4 minutes. Add garlic and cook for an additional 30 seconds. Stir in carrots, corn, and peas and stir-fry until vegetables are tender, 3 to 4 minutes.
- Stir in brown rice, pineapple, ham, green onions, and soy sauce mixture. Cook, stirring constantly, until heated through, about 2 minutes. Serve immediately.

- Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom. Add white onion, chopped ham, peas and carrots and fry until tender.
- Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
- Add the rice to the veggie, ham and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

- In med saucean bring butter and water to a boil over high heat.
- Stir in rice.
- Reduce heat to med low and partially cover the pan, simmering until most of the liquid is absorbed, about 5 minutes.
- Stir the rice with a fork.
- Reduce heat to low and cover and continue cooking until tender, about 15 minutes.
- In a large skillet heat 1 TBS oil over med high, coating the pan.
- In a small bowl beat eggs.
- Add the eggs to the skillet and fry until set, turning once.
- Transfer to plate and cut into 1/2 inch by 2 inch strips, then set aside.
- In the same skillet heat another TBS oil.
- Add ham and cook until lightly browned.
- Transfer ham to eggs and set aside.
- In same skillet, add final TBS oil.
- Add onion and stir fry for 1 minute.
- Stir in peas, cover and cook til tender 2-3 minutes.
- Gently stir in the rice, eggs, ham, soy sauce and sesame oil.
- Cook til heated through.
- Serve immediately.

SECRET INGREDIENT HAM FRIED RICE RECIPE
Day old rice, rice that's cooked the day before and refrigerated overnight makes the best fried rice. If it's freshly made, you may get mushy results. There are ways around it if you want to make fried rice the same day you make the rice. Omit ham or sub with crispy fried tofu to make this dish vegetarian or feel free to sub with shrimp or chicken!

- Cook rice. If you didn't make it the day before. As soon as it's done, lay it out on a 9x13 baking dish or a baking sheet. Allow to cool. Mix and spread out several times. Place in the refrigerator for at least 30 to 60 minutes.
- Add 1 tablespoon of grape seed oil into a wok or a large skillet, heat on medium for at least 3 minutes. Swirl the oil to cover the pan. Pour in beaten eggs and allow to cook for 2 to 3 minutes and flip and cook for another minute. Remove from skillet and allow to cool. Cut into strips and then into smaller pieces, set aside.
- Add 2 Tablespoons of grape seed oil to the wok and add the rice and cook for 2 minutes. Add soy sauce and sesame oil and mix the rice thoroughly. Season with salt and pepper. Increase heat to medium high and cook for 5 to 8 minutes, until rice is completely heated through, be sure to mix occasionally so the rice does not burn.

- Leftover cooked and cooled rice works best, and could be made earlier in the day and refrigerated until cold. Use wet fingers to separate the rice grains.
- Heat 1 Tablespoon of oil in a wok or frying pan. Beat the eggs in a small bowl and add to the pan when the oil is hot.
- Stir gently with a wooden spoon just until cooked. Transfer to a bowl and set aside.
- Add another tablespoon of oil to the pan. Add peas, carrots and ham and saute for several minutes. Remove to the bowl with the eggs.
- Add another tablespoon of oil to the pan over medium high heat. When the oil is hot, add the rice and toss every 30 seconds until it's lightly browned, about 5 minutes.

HAM AND EGG FRIED RICE

- Heat a wok or a small, heavy skillet over high heat. Add 1 1/2 tablespoons oil, swirl to coat the pan. Add eggs and scramble them. As soon as there is no more freely running egg, turn them out into a bowl and break them into small bits. They should be soft and a bit runny -- not brown.

- Put 3 tbs oil in a large pan and heat up.
- Once heated add in cold rice and let sizzle and brown, stirring occasionally. This usually takes about 10 minutes.

- The rice should be smoothed out to get rid of any lumps.
- Day old, cold rice works best.
- If using eggs (recommended), lightly beat them with a pinch of salt.
- Heat a little oil in your wok, pour eggs in and tilt the wok back and forth to spread evenly.
- Lift the edges to let the uncooked portion come in contact with the hot pan so it cooks evenly.
- After the eggs set up a little, lightly scramble them so you have medium small pieces.
- Remove eggs to a bowl.
- Wipe out wok.
- If adding raw shrimp, heat a little more oil and stir fry them to just cook.
- Remove to a bowl.
- Wipe out wok again.
- Heat a little more oil.
- Add the onions& stir fry until they start to darken.
- Stir in the rice, breaking up any lumps you missed.
- Drizzle a little dry sherry down the sides of the wok.
- (The surface of the wok should be slick with oil. If too dry looking, drizzle a little more oil down the sides of the wok).
- If you want the rice to look brown, drizzle in a little light soy sauce.
- Stir in all of the other ingredients and season to taste with salt and white pepper.
- Continue to stir and cook until heated through.

- Beat eggs in a small bowl with a large pinch of salt and pepper to taste. Set aside.
- Add the canola oil and 1 teaspoon sesame oil to a large non-stick skillet or wok and place over MEDIUM heat. Add the beaten egg to the hot skillet and cook, stirring, until it begins to form soft curds, about 30 seconds. Transfer the soft-cooked eggs to a plate and set aside.
