5-6 whole red potatoes
3-4 tablespoons avocado oil
1/2 teaspoon sea salt
1/2 teaspoon pepper

Steps:

  • In the Instant Pot: Put about a cup of water in the bottom of the pot. Set a wire rack inside and place red potatoes on the rack. Close and seal the lid, then cook on STEAM for 5 minutes.
  • In the oven: Place red potatoes directly on the oven rack. Turn oven on to 350 and bake for 30-40 minutes. Test with a fork; remove potatoes from the oven when a fork can pierce the potatoes somewhat easily.
  • Set cast iron frying pan on high heat to warm.
  • Cut potatoes into 1/2 - 3/4 inch cubes.
  • Pour oil into frying pan, allowing it to heat up for a minute or so.
  • Slide cubed potatoes into the hot frying pan. Use caution as the oil may splatter.
  • Shake frying pan back and forth so the potatoes slide in the oil. Repeat several times. Sprinkle with salt and pepper.
  • Allow potatoes to cook for about 10 minutes without disturbing them, then use a spatula to flip them. Cook for another 10 minutes, or until red potatoes are fried to a crispiness you like.

1 lbs baby potatoes
2 small sized onions
2 small tomatoes
salt (as required)
1 teaspoon turmeric powder
1 teaspoon red chili powder
2 teaspoons garam masala powder
1 tablespoon crushed ginger
2 cloves garlic (peeled and crushed)
3 tablespoons oil (may adjust as needed)
1 teaspoon brown mustard seeds
5 red chilies dry (broken)

Steps:

  • Peel the onions & slice thinly, keep aside.
  • Heat oil in a pan and add the mustard seeds.
  • When the mustard seeds splutter, add the broken dried red chilies fry for a few seconds.
  • Add the sliced onions to the pan, add little salt and saute the onions until they are lightly browned.
  • While the onions are getting sauteed, slice the potatoes and keep aside.
  • Once the onions are browned, add the diced baby potatoes and saute for 3 to 4 minutes.
  • Add enough salt, crushed ginger & garlic and saute for another 2 to 3 minutes.
  • Continue to saute the potatoes until they start to brown on sides.
  • Meanwhile chop the tomatoes, keep aside separately.
  • Once the potatoes are lightly browned on the sides, add the chopped tomatoes to the pan and saute for another 2 to 3 minutes.
  • Close the pan with lid and cook in medium heat for about 7 to 8 minutes or until the potatoes are cooked and soft on inside.
  • Once the potatoes are cooked enough, remove the lid of the pan and stir all the contents.
  • Add the spices - turmeric powder, red chili powder and garam masala powder to the pan and mix everything well.
  • Saute the contents in medium heat for another 3 to 4 minutes or until the mixture is dry and the potatoes are pan fried nicely with the onions, tomatoes & spices.
  • Serve the pan fried potatoes for lunch or dinner along with rice or bread as you wish!

1 1/2 lbs small red potatoes (cut in half or quartered to make 3/4-inch thick pieces)
1 Tbsp unsalted butter
2 Tbsp olive oil
Salt (preferably kosher or sea salt, to taste)
Black pepper (freshly ground, to taste)
2 Tbsp chives or green onion (chopped, plus more to garnish)

Steps:

  • Heat a large skillet over medium heat and add 1 Tbsp butter and 2 Tbsp olive oil. Once butter is melted and hot, arrange potatoes in the skillet, cut-side-down in one layer. Cook uncovered and undisturbed 8-10 minutes or until golden brown crust forms on the bottoms.
  • Turn potatoes then cover and cook another 5 minutes or until golden brown on the second side, you'll hear it spit and splatter under the lid; just be careful when you first lift of the lid as juices from the lid can dribble into the pan and splatter. Keep the wee ones away from the stove. In hind sight, a dutch oven with taller walls might have been a better choice to cook these.
  • Turn the potatoes again, cover and cook another 5 minutes or until you can easily pierce potatoes with a knife. Remove from heat and sprinkle with salt & pepper (I used about 3/4 tsp salt and 1/8 tsp pepper), toss with 2 Tbsp chives. Sprinkle with more fresh chives just before serving and enjoy.

  • Clean potatoes and cook them in the microwave until soft (about three minutes).
  • Meanwhile, melt the butter in a frying pan.

½ cup shredded asiago (optional)
1 teaspoons Kosher salt
1 teaspoons rosemary

1/8 teaspoons nutmeg
