- Prep crawfish and vegetables. Line a wire cooling rack with a couple layers of paper towels then place rack on a cooking sheet. Set aside. Heat about 2 inches vegetable oil in a medium pot to 350°. Combine Parmesan cheese and breadcrumbs in a shallow bowl. In another bowl, whisk the eggs. Dip raviolis in egg wash and then coat in bread crumb mixture. Place coated raviolis on a large platter until ready to fry. Preheat oven to 150° F. When oil is hot, start dropping in the coated raviolis, a few at a time, and deep fry until they float to the top and brown. As they are cooked, transfer them to the paper towel lined wire rack and place in the warm oven. Make the Crawfish Sauce: Melt the butter in a medium skillet or pot over medium heat and saute onion, bell pepper, and celery until soft but not browned, stirring constantly. Stir in garlic and cook and stir for another minute. Add crawfish tails and cook until heated through. (If crawfish produce much liquid, continue to cook until it is almost completely reduced). Stir in tomato sauce and season with salt, black pepper, and creole seasoning to taste. Sprinkle the flour over the top and cook and stir for a minute or two. Gradually, stir in the half-and-half and cook until thickened, stirring frequently. (Can stir in a little Parmesan at the end, if desired). Serve crawfish sauce over the fried raviolis. Garnish with parsley or green onion, if desired.

- Preheat the oil: Fill dutch oven or deep frying pan with two inches of oil- 3/4 vegetable oil, 1/4 olive oil. Preheat until a thermometer reads 325°F. Prep the sauce: In a medium sized saucepan, sautée the onion in olive oil over medium low heat for 8-10 minutes, until very soft. Stir in garlic and cook for about 1 minute, until fragrant. Add in the tomatoes, salt, and red pepper flake and cook over medium low heat, stirring occasionally, for 10 minutes. While the oil heats and sauce cooks, prep the ravioli. Place the buttermilk in a shallow bowl. Place the bread crumbs, oregano, salt, and pepper in another bowl. Line a baking sheet with parchment paper for the ravioli. Dip first in the buttermilk, shaking when lifting out of the bowl, then dredge in the bread crumbs. Place on the baking sheet while you coat the remaining ravioli. Set aside. Finish the sauce: Remove from the heat. Using an immersion blender, blend the sauce directly in the pot until mostly smooth. Fold in the grated cheese. When the oil is hot, fry the ravioli in batches, turning until golden brown- about 3 minutes. Using a slotted spoon, transfer the ravioli to paper towels to drain. Sprinkle with extra cheese and shredded basil and serve with warmed sauce.

- 2. Mix 3 Tbsp. of Parmesan cheese in with breadcrumbs for coating. Dip raviolis in egg wash & then in breadcrumb mixture. Fry until they float to the top & brown.
- 3. For sauce, melt butter & saute' onion, bell pepper, & garlic. Add crawfish with fat & let cook until they begin to let off liquids. Add cream & Parmesan to your liking & cook on medium til thickened.

I got this recipe off of "Everyday Italian" with Giada De Laurentiis. TALK about GOOD!! I made it for my husband (who is a ONLY meat and potatoes kind of guy) and he flipped! It's even better than cheese sticks...and who can top that?
