PAN FRIED BABY POTATOES RECIPE - PAN ROASTED MASALA POTATOES RECIPE
Indian style spiced pan fried baby potatoes make a simple and yummy side dish with rice for lunch or dinner.

Steps:
- Peel the onions & slice thinly, keep aside.
- Heat oil in a pan and add the mustard seeds.
- When the mustard seeds splutter, add the broken dried red chilies fry for a few seconds.
- Add the sliced onions to the pan, add little salt and saute the onions until they are lightly browned.
- While the onions are getting sauteed, slice the potatoes and keep aside.
- Once the onions are browned, add the diced baby potatoes and saute for 3 to 4 minutes.
- Add enough salt, crushed ginger & garlic and saute for another 2 to 3 minutes.
- Continue to saute the potatoes until they start to brown on sides.
- Meanwhile chop the tomatoes, keep aside separately.
- Once the potatoes are lightly browned on the sides, add the chopped tomatoes to the pan and saute for another 2 to 3 minutes.
- Close the pan with lid and cook in medium heat for about 7 to 8 minutes or until the potatoes are cooked and soft on inside.
- Once the potatoes are cooked enough, remove the lid of the pan and stir all the contents.
- Add the spices - turmeric powder, red chili powder and garam masala powder to the pan and mix everything well.
- Saute the contents in medium heat for another 3 to 4 minutes or until the mixture is dry and the potatoes are pan fried nicely with the onions, tomatoes & spices.
- Serve the pan fried potatoes for lunch or dinner along with rice or bread as you wish!

- Peel potatoes and cut into wedges. Slowly fry in the hot oil in a nonstick pan, about 15 minutes, until golden brown. Meanwhile, peel the onions and cut into wedges. Rinse and halve the tomatoes.
- Add the onions to the potatoes in the pan after about 5 minutes and the tomatoes after 10 minutes. Rinse the thyme, shake dry, pluck off the leaves, and mix in. Season with salt and pepper and serve immediately.

- Heat oil and butter in a skillet. Add the onions and cook until soft and lightly browned. Remove the onions from the pan and reserve.
- Slice the potatoes into 1/4 inch slices. Add them to the hot pan and brown on both sides.
- Return the onion to the pan, toss and season. Serve warm.

- Place potatoes in a medium or large saucepan and pour over enough water to cover by about 2 inches. Set pan over high heat and bring water to a boil. Boil 8 minutes, until potatoes are fork tender.
- Drain and transfer potatoes to a large bowl. While potatoes are still warm, add olives, tomatoes, onion, olive oil, vinegar, and thyme and toss to combine. Season, to taste, with salt and black pepper.

I remember my Grandmother making this marvelous dish over 65 years ago. We were the only vegetarians in our family and therefore Grandma cooked just to please me. A very easy, simple but tasty side dish. Young potatoes are especially good.

- Peel and slice potatoes about 1/8 inch thick or thinner.
- Slice onion thinly.
- In a large frying pan on medium-high heat, melt butter, add olive oil.
- Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatula, turn the potatoes and onions over so they do not break apart. If potatoes appear too dry, add some additional butter.
- Sprinkle with granulated garlic powder, dried dill weed, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
- Serve hot with your meal.
- Note: You may use 2 or 3 large garlic cloves (chopped small), instead of granulated garlic powder. Add to the potatoes after the first 10 minutes of cooking time.
STIR FRIED GREEN TOMATO WITH ONIONS & PEPPERS
Nearly all the Green tomato recipes are breded & fried in butter or even deep fried. I wanted something lighter so raided the garden and put this together- We enjoyed it so I decided to post it. Use whatever peppers you want in place of the banana pepper. Use your favorite BBQ sauce. Serve as a side dish with eggs or meat of your choice.
