It's downright fun to make and serve this potato recipe. The fresh herbs, butter and cheeses are just what a good potato needs. -Susan Curry, West Hills, California

HERBED GREEK ROASTED POTATOES WITH FETA CHEESE
These potatoes have a nice Mediterranean flair to them, with the lemon, garlic, and herbs. These are so delicious out of the oven topped with plenty of feta cheese.

Steps:
- Soak the sliced potato in cold water for anywhere up to an hour. Drain and dry well.
- Melt butter in medium saute pan over medium heat. Place potato slices in pan in a single layer as soon as contact with the butter creates a sizzle.
- Cover pan and let potatoes sizzle for about 20 minutes. Check potatoes at this time to make sure they are browning. If they are looking golden and crispy, turn the slices over, cover and sizzle for another 20 to 30 minutes.
- At this point, you should be hearing a sound that is somewhere between a sizzle and a balloon with a leak. This is the water cooking out of the potatoes. It is a good thing. Remove the cover. Turn heat down a bit if it looks like the taters are likely to burn.
- It will take about 15 minutes for the potatoes to get rid of their water content.
- Remove from heat and sprinkle cheese over crispy slices. Turn taters and cheese so they mix up together.
- Turn all out onto a plate, sprinkle with herbs and pepper.
- Serve.

- Dice the potatoes into evenly sized and fairly small (although not super tiny) dice. You want them small enough so they more or less fit in a single layer in an 8-inch nonstick skillet and will cook quickly. Aim for about 1/2-inch dice—no larger.
- Place the potatoes in the skillet and add the water, oil, and salt and crank the heat to medium-high. Cover and bring to a boil. Reduce the heat slightly, cover, and set a timer for 5 minutes. Let the potatoes cook, stirring once or twice if you think of it, while you prep the rest of your ingredients. By the end of the 5 minutes, the water should have just evaporated, and the potatoes should be barely tender and maybe even have started to brown a little.
- Uncover the potatoes and use a spatula to loosen them from the skillet. Cover again and cook over medium to medium-high heat, stirring occasionally, until lightly browned, 2 to 5 minutes. If using dried herbs/spices, sprinkle them over the potatoes now.

- Add the butter and garlic to a large frying pan and once the butter has melted cook for about 1 minute until the garlic has started to cook.
- Add the potatoes so that they are in a single layer (you may need to do the potatoes in 2 batches). Sprinkle the mixed herbs over the potatoes (only 1 tsp if doing the potatoes in 2 batches) and add salt to taste. Fry for 10-15 minutes over a medium/high heat, stirring occasionally until the potatoes are starting to go golden brown.
- Add the grated parmesan cheese and fry for a further 3-5 minutes, stirring occasionally until the cheese has melted and has gone golden.
