SWEET AND SAVORY FRIED PLANTAINS

Sweet and Savory Fried Plantains image

Fried plantains are a traditional treat in many parts of the world. Try them once and you'll be hooked. Yellow (ripe) work best. Serve this as a sweet and savory side dish to a meal, as a dessert, or as a snack. They are also delicious atop a dark, leafy, and green spinach or kale salad with goat cheese.

Time 10m

Yield 3

Number Of Ingredients 8

1 large yellow plantain, peeled
⅛ teaspoon garlic powder
1 tablespoon canola oil
½ teaspoon reduced-fat margarine (such as Smart Balance®)
⅛ teaspoon ground black pepper
1 teaspoon agave nectar
⅓ teaspoon light brown sugar
1 pinch ground cinnamon, or more to taste

Steps:

  • Cut plantain into three sections. Quarter each section so you have twelve pieces. Season plantain pieces with garlic powder.
  • Heat oil and margarine together in a small skillet over medium heat. Cook plantains in hot oil until lightly browned, 2 to 3 minutes per side; season with black pepper and continue to cook until slightly darker in color, 2 to 3 minutes more. Remove skillet from heat and drizzle agave syrup over the plantain pieces. Sprinkle brown sugar and cinnamon over the plantains.

SWEET PLANTAINS

Sweet Plantains image

Recipe courtesy Tyler Florence. This is a lovely dessert or sweet accompaniment to Arroz Con Pollo or another savory latin dish! I love to eat it with Lechon Asado and Black beans and rice; I think it offsets the garlic well.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 5

2 -3 ripe black plantains
5 tablespoons unsalted butter, divided
1 teaspoon ground cinnamon
1 teaspoon natural vanilla extract
2 tablespoons brown sugar

Steps:

  • To peel the plantains, cut off ends and discard. With a paring knife, make 3 shallow slits lengthwise along the seams of the skin and peel away. Split the plantains lengthwise.
  • Heat 4 tablespoons butter in a large skillet and place over medium low heat (plantains have a high sugar content and will burn if the heat is too high.)
  • Fry the plantains in a single layer, until golden on the bottom then turn over with a spatula.
  • Add the cinnamon, vanilla, and sugar and let cook a few more seconds, just to begin caramelizing the sugar.
  • Just before serving, melt remaining tablespoon of butter to finish the sauce. Serve immediately.

Time 24m

Yield 4 servings

Number Of Ingredients 8

Vegetable oil, for shallow frying
2 firm-ripe plantains (about 1 pound)
Kosher salt
1 cup sugar
1 1/2 teaspoons ground cinnamon
Rum Whipped Cream, recipe follows, or ice cream
3/4 cups heavy cream, chilled
1 tablespoon dark rum

Steps:

  • Heat about 1-inch of oil in heavy-bottomed saucepan over medium heat until a deep-fry thermometer inserted in the oil registers 340 degrees F. Line a large plate with paper towels.
  • Peel the plantains and discard the skins. Slice into 1/4-inch thick pieces. Fry the plantains in oil, turning occasionally, until a golden brown color, about 2 to 4 minutes. FRIED PLANTAINS WITH POWDERED SUGAR...AND RUM

Fried Plantains With Powdered Sugar...and Rum image

You will probably purchase green plantains, let them ripen to the yellow/brown/black stage. Rum is optional, but very delicious in the recipe and served with the recipe. (They look like huge fat long green bananas)

Provided by Montana Heart Song

Categories     Breakfast

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 8

3 ripe plantains, peeled, sliced 5 long slices each plantain
3 -4 tablespoons olive oil
powdered sugar
3 -4 tablespoons dark puerto rican rum (optional)
nutmeg
salt
toothpick
whipped cream (optional) or Cool Whip (optional)

Steps:

  • In large fry pan, add 1 tblsp oil. Heat oil to medium stage and lay each strip in the pan.(Fry 1 plantain in each batch). When the strips start to turn a golden brown, flip then over and add a little more oil.Fry the other side until golden and brown.
  • There will not be much oil left in the pan.
  • Sprinkle a little rum over the strips if desired.
  • Sprinkle a little nutmeg on one side.
  • A dash of salt on the strips.
  • Take out the strips and place on a warm plate. Keep warm in a 250° oven.
  • Fry the second batch. Follow the steps.
  • Fry the third batch. Follow the steps.
  • When the frying is completed, take out the plates. Cut the strips in half of the length. Roll up and secure with toothpick.
  • Place back on plate.
  • Let the strips cool, then take out the toothpicks. The plantains will hold the rolled shape.
  • Sprinkle with powdered sugar right before serving. You can serve warm or cold, but if you serve warm the powdered sugar will soak in and you have have to pass separate powdered sugar, I pass a separate sifter after serving and each person can sift their own sugar on their serving.

10 SWEET PLANTAIN DESSERTS - INSANELY GOOD

From insanelygoodrecipes.com

Category Desserts, Recipe Roundup
  • Plantain Bread. You can think of plantain bread as a lighter, moister, and slightly less sweet banana bread. The two breads share similar ingredients, and both make use of nutmeg, sugar, and vanilla.
  • Sweet Fried Plantains. If you’re looking for a super sweet plantain dessert, sweet fried plantains are pretty much the go-to. Made with brown sugar, maple syrup, vanilla extract, and coconut oil, these can’t help but be incredibly sweet.
  • Plantain Cake. Whether you serve it as a breakfast pastry or for dessert, plantain cake will be a hit with everyone. It’s dense but moist and sweet, but not overwhelmingly so.
  • Plantain Brownies. These vegan-friendly brownies are some of the fudgiest you’ll ever eat. They contain only six ingredients – overripe plantains, oat flour, cacao powder, coconut sugar, baking powder, and non-dairy milk – and take only 10 minutes to prepare.
  • Chocolate Chip Plantain Cookies. These chocolate chip plantain cookies are vegan-friendly, paleo-compliant, and take less than 30 minutes to prepare and bake.
  • Plantains Foster. You’ve likely heard of bananas foster, and this is the tropical island version of that. Bananas grow on islands, too! But somehow, plantains seem more tropical to me.
  • Plantain Muffins. These chewy, crumbly muffins combine the flavors of plantains, cranberries, cinnamon, and more for lightly sweet, mostly tart muffins that are unlike anything you’ve ever tried.
  • Sweet Plantain Fritters. These filling fritters are softer than most people think of when they hear the word “fritters.” They’re more like fluffy pancakes than crunchy potato fritters.
  • Plátanos Asados con Coco (Coconut-Baked Plantains) This five-ingredient dish is hugely popular in Colombia, where people usually serve it as a side dish instead of a dessert.
  • Sweet Caramel Cinnamon Baked Plantains. Here’s yet another recipe for a paleo-compliant, vegan-friendly way to cook plantains. Making these sweet plantains takes only 35 minutes and is incredibly easy to do.
