CHOCOLATE FRIED PIES (AS MADE IN TN.)
I make good fried pies and a lot of people have ask for chocolate ones like their Granny made years ago ....This is updated a bit but very good ...I hope you enjoy it.

- 1. Place the sugar ,cocoa powder, salt ,and butter into a large zipper topped bag . Squeeze the bag to mix and combine the ingredients.Cut a hole in one corner of the bag . Squeeze or pipe one or two tablespoons of the mixture into the dough center and proceed as for other fried pies. Yield 10 to 15 pies
- 2. PASTRY.... Combine the flour ,baking powder and salt in the food processer bowl . Pulse for a few seconds and then pour into a LARGE mixing bowl. Add the shortening and knead into the flour with your hands until it is crumbly.Add the milk all at once. Mix with a spatula until it begins to come together . Lightly flour your hands and the countertop and turn the dough out on to the countertop . Knead the dough ball ,folding over 10 or 20 times. Use a rolling pin roll out the dough to 1/3 to1/2 thickness , then cut into rounds with a 2 1/4 inch ring cutter or you can use a cup or a glass that is approximatly that size . Roll each round as thin as you can till it is about 5 inches in diameter. Spoon in the filling ,1 or 2 spoonfulls,( or squeeze in if making Chocolate pies) onto the dough circles , brush the edges of half the circle lightly with egg wash ,fold over and seal the edges together by pressing together with the prongs of a fork . Dip in flour if you need to. . Press down softly to flatten and spread the filling out a little . Pan fry the pies in skillet or saute pan in 1 or 2 tablespoons oil use low heat ...once heated place 2 or 3 pies in a time into the pan and saute until golden brown on both sides ...about 4 minutes per side till done. Allow to cool 4 or 5 min. before you serve them. This pastry works with other filling quite well even canned pie filling.
LELA'S FRIED PEACH PIES
There are many ways to make fried pies nowadays and many shortcuts, but the traditional southern fried pie requires dried fruit and handmade dough, usually a form of biscuit dough rather than real pie pastry. Take these to your next BBQ or Potluck and see how fast they disappear!

Steps:
- Place dried fruit in a pot and add water. Bring to a boil and reduce heat to simmer until fruit is tender.
- Add other ingredients and mash together with a potato masher or fork. Set aside while dough is prepared.
- In medium bowl, place flour and salt. Stir together. Cut in shortening with a long tined fork. Add in milk and stir until dough sticks together.
- Divide into ten portions. Roll each portion out on a floured surface into a five or six inch circle.
- Place two tablespoons of filling in each. Wet the edges and fold over, crimping with a fork.
- Cook in oil which has been heated on medium heat, until browned on both sides, turning as needed. Remove to paper towel lined plate.
PEACH FRIED PIES
My Grandmother always used dried fruit for the filling. Since I couldn't find the dried fruit at the supermarket, I decided to used canned peaches. Fortunately, it worked out well.

- Drain the peaches, reserving the syrup. Using a fork or potato masher, mash the peaches; set aside. In a heavy medium saucepan, combine sugars, cornstarch, cinnamon and nutmeg. Add the reserved syrup; mix well. Cook over medium heat, stirring constantly until mixture is thickened. Add the butter and lemon juice; then the peaches. Refrigerate until the filling is chilled or overnight.
- Dough: Combine flour, sugar, baking powder and salt in a medium bowl. Using a fork or pastry blender, cut in butter. Add the milk and stir until a soft dough forms.
- The dough can be made into balls and then rolled out on a floured surface to make 5-6" circles. Also, on a floured surface, the dough can be rolled out to 1/8" thick and then cut out 5-6" circles. (My Grandmother used a saucer to cut out the circles).
- Spoon 2 generous tablespoons of filling in the center of the dough, fold and crimp the edges. Be sure the edges are sealed so the filling won't leak. Fill a heavy skillet with about an inch of oil and heat to 360 degrees. Place two or three pies in the hot oil; but do not overcrowd it. Fry until golden brown on each side. Drain the pies on paper towels. Place warm pies on wire rack and glaze.
- Combine powdered sugar, milk and almond extract. Drizzle over warm pies. Then combine cinnamon chips and shortening in a microwave safe bowl. Melt the mixture stirring at 15 second intervals. Drizzle over the powdered sugar glaze, if desired.
LISA'S FRIED PIES
My family loves my fried pies and they are so delicious and moist and fruity. I make with apple, cherry, blueberry, blackberry and peach. I make them all the time.

- 1. Sift flour and salt together. Cut in the shortening.
- 2. Add water and mix with fork. Roll out to about 1/8 inch thick on a floured board.
- 3. Cut with a large cookie cutter (4 inches in a diameter). In each round, place 1 heaping tablespoon fruit filling.
- 4. Moisten edges with cold water, fold and press edge with a fork.
- 5. Heat oil in deep fryer, fry pies, a few at a time, 2 to 3 minutes on each side; cook until golden brown.
- 6. Drain on paper towels. Drizzle glaze over fried pies while warm.
FRIED PIES
You've seen those little pies that come in a box(used in lunch boxes)Do youself a favor,make your own.I'm not much on sweets,but fresh is always better.And they freeze very well.

- Sift dry igredients into a bowl,then cut in shortening.
- Add milk gradually,
- Press into a ball.Roll out to 1/8 inch thick.
- Cut into rounds or rectangles or squares,in size desired. When filled & folded over you will get half moons or squares or triangles.
- Place 2 Tablespoons or so in center,moisten edges with water. Fold over and seal edges with tines of a fork.
- Deep fry at 350* until golden brown.Drain on paper towel and glaze or dust with cinnamon or powdered sugar.
- Cool well before storing in an air tight container in fridge.
OLD FASHIONED FRIED APPLE PIES
I used to dry apples in the fall for fried pies in the Winter. My husband and I built an apple drying cage with me telling him how..LOL 2 pieces of tin nailed together on a sheet of plywood. A 12 inch high frame around it made from screen wire, re enforced at the corners and around edges. The top would lift back then fasten back...

- 1. TO PREPARE DRY APPLES: Place water in a medium size sauce pan. Bring to a boil. Add dried apples, cover and cook on medium heat, stirring occasionally until apples are soft - 15 - 20 minutes (make sure they are soft)Add a little more water if you need to but cook it out.
- 2. When apples are cooked soft and water is cooked out, Add: unsalted butter, lemon juice, and sugar to apples. Cook on medium/ high heat, stirring, until butter melts.
- 3. Have spices and brown sugar mixed and ready to add to apples. Add the cinnamon, nutmeg, and brown sugar to apples, stir gently and remove from heat.
- 4. TO PREPARE THE PIE DOUGH: Place flour in medium bowl, add the 1/2 cup of lard to flour (or vegetable Shortening). Old Fashioned Pies called for good old Lard !!
- 5. Mix the flour and lard with your dry fingers to break the lard into small pea size pieces; do this quickly so the heat from your fingers does not melt the lard.(Shortening). Pour Very Cool water, 1 tsp at a time to the flour mixture as you continue mixing it with your hands until you have added enough liquid to form a ball of dough. Chill the bowl of dough in the refrigerator for 30 minutes.
- 6. TO ROLL OUT PIE CRUST: Sprinkle some flour over a dry surface. Place the ball of dough in center of floured area, lightly dust your rolling pin with flour. Roll the dough into a 1/4 inch thickness.
- 7. Use a 7 inch wide at the rim cerial bowl to cut out circles from the dough. (SPRINKLE SOME ADDITIONAL FLOUR ON A SHEET OF WAX OR PARCHMENT PAPER TO RUB 7 INCH BOWL IN BEFORE USING IT TO CUT CIRCLES.) You should be able to make about 12 circles. Gently lift them and slide to the side. Roll remaining scraps of dough to 1/4 inch thickness and cut out more circles of dough.
- 8. FRY THE PIES: Add lard or vegetable Shortening to a Large, cast iron, skillet. You will need enough to make it 2 inches deep in skillet. As you fry the pies and use up some of the lard you will have to add more as needed. HEAT the grease on medium-high until it is melted. You will need to begin frying the pies quickly so that the grease does not overheat.
- 9. TO PLACE APPLES IN DOUGH CIRCLES: Spoon 1-2 tablespoons of cooked apples into the center of the seven inch circle of dough. Fold the circle over to form a semi circle so that the edges are lined up. Press a fork 1/4 of an inch from the edges to seal the two sides of the dough together. THIS IS IMPORTANT TO KEEP THE FILLING FROM SPILLING OUT WHILE THE PIES ARE FRYING.
- 10. LINE A PLATE WITH PAPER TOWELS AND SET ASIDE TO PLACE COOKED PIES ON.
- 11. Gently place a sealed pie into the hot grease. Fry each side about 5 minutes on each side or until the crust turns golden brown. YOU CAN COOK ABOUT 3 PIES AT A TIME, NOT ALL AT ONCE But, Don't crowd them !!
- 12. Drain on paper towel lined plate and continue cooking until all are cooked. ALLOW PIES TO COOL BEFORE SERVING !! TOP WITH A SCOOP OF VANILLA ICE CREAM. Your Family Will Love You for These pies.
