SOUTHERN FRIED PICKLES
Southern-style fried pickles seasoned to perfection! Paired with a sweet and tangy dipping sauce.

Steps:
- Heat oil to 375 F.
- Line a baking tray or cutting board with parchment paper. Set aside.
- In a bowl, mix together flour and spices. Set aside.
- In another bowl combine buttermilk and egg. Set aside.
- Dip pickle into buttermilk mixture, shake off excess.
- Next, coat the pickles in flour and shake off excess flour.
- Place pickles on the prepared baking tray.
- When all pickles have been coated with flour, coat them again. (Some of the flour from the first coating will be absorbed)
- Quickly place the pickles in the hot oil (I did 2 batches)
- Cook until golden brown and then remove with a slotted spoon.
- Place pickles on paper towels to drain.
- To make the sauce, stir together sauce ingredients. Taste and adjust seasonings.
- Serve the fried pickles immediately with the sauce.
FRIED ONION RINGS
These are very delicate and the best I have had. My ex was a fanatic when it came to onion rings, and thought this recipe to be the best he ever had. Have also made other veggies in this batter. Can be refrigerated or frozen, then reheated in oven or microwave. Carbonated water can be substituted for beer in this recipe.

- In a medium bowl, combine flour, beer, salt, and pepper. Mix until smooth. Dredge onion slices in the batter, until evenly coated. Deep fry in the hot oil until golden brown. Drain on paper towels.

- Slice the onions into 1cm-thick rings and set aside. Tip the vinegar, sugar, 50ml water and 1 tsp salt into a pan, bring to the boil, then remove from the heat. Add the onions to the pan, cover with cling film and leave to cool. You can do this up to a day ahead.
- Fill a large saucepan half full with oil and heat until the temperature reaches 180C on a frying thermometer. Mix the flour, cayenne pepper, coriander and 1 tsp salt in a bowl, and set aside.
- To make the batter, combine the flours and bicarb in a bowl, then slowly whisk in the beer. Drain the onion rings and coat them in the spiced flour. One at a time, dip them in the batter and fry in the hot oil for 2-3 mins until golden and crisp. Drain on kitchen paper and season with smoked paprika and flaky sea salt.

- Heat a dutch oven over medium heat with 1" of oil (or enough to cover the onion rings). You can use a deep fryer if you have one.
- In a medium bowl, whisk together 1 cup milk with 1 Tbsp vinegar and let sit 5 minutes. Whisk in 1/2 cup sour cream.
- In a separate bowl, whisk together: 1 cup flour, 1/2 Tbsp salt, 1/4 tsp black pepper, and 1 tsp garlic powder.
- Separate the onion rings and dip each ring in the milk mixture, then dredge with flour. (I used a fork to transfer from the wet bowl to the dry bowl so my hands didn't get as gunky). Repeat by dipping in milk mixture a second time and dredging again in flour. Place the finished onion rings on a plate until ready to fry.
- Once the oil is at 375˚F on a thermometer, or hot enough for the onion rings to sizzle, place 3-4 double battered onion rings in a single layer in the hot oil and cook for about 3 minutes, flipping halfway and fry until exterior is crisp and light golden brown. Let onion rings cool on paper towels so soak up any excess oil.

- Heat oven to 450° F. Place 1-1/2 cups Dixie Fry Mix in shallow baking dish. Beat egg and buttermilk together in bowl. Whisk remaining 1/2 cup Dixie Fry Mix into buttermilk mixture.
- Working one at a time, dredge each onion ring in Dixie Fry Mix, shaking off excess. Dip rings in buttermilk mixture, allowing excess to drip back into bowl, then drop into Dixie Fry Mix, turning rings to coat evenly. Transfer coated rings to large plate or tray.
- Pour 3 tbsp oil onto rimmed baking sheet. Place baking sheets in oven and heat until just smoking, about 8 minutes. Carefully tilt heated sheets to coat evenly with oil, then arrange onion rings on sheets. Baking, flipping onion rings and switching and rotating position of baking sheets halfway through baking, until golden brown on both sides, about 15 minutes.
FRIED PICKLES AND ONION RINGS
Steps:
- In a large, heavy saucepot fitted with a deep-frying thermometer, heat the oil to 350 degrees F. Line one baking sheet with paper towels; line a second baking sheet with parchment; and set a rack over a third baking sheet.
- Cut the ends off the onions and peel the skin. Slice the onions crosswise into three rounds, then separate into rings.
- Place the dill pickle chips on the paper-towel-lined baking sheet, cover with more paper towels and dry well.
- Whisk the eggs in a medium bowl. Add the buttermilk and whisk to combine. In another medium bowl, whisk together the flour, 1 tablespoon salt and 1/2 teaspoon pepper. Place the breadcrumbs in a shallow dish.
- Toss the onions rings in the seasoned flour; coat well. Then dip the onion rings in the buttermilk mixture. Dredge the onion rings a second time in the flour and again in the buttermilk (for a double dredge). Toss the onion rings in the breadcrumbs and place on the parchment-lined baking sheet.
- Use the same double-dredge process--flour, buttermilk, flour, buttermilk, panko--for the pickle chips.
- In batches, fry the onion rings until golden brown, 1 to 1 1/2 minutes. Remove to the rack to rest. Sprinkle immediately with salt.
- Fry the pickle chips until golden brown, 1 to 2 minutes. Remove to the rack and sprinkle with salt. Serve immediately.
