SPAGHETTI WITH FRIED EGGS

Spaghetti With Fried Eggs image

Here's a quick and delicious pasta dish to make when you have little time, and even less food in the house. All you need is a box of spaghetti, four eggs, olive oil and garlic (Parmesan is a delicious, but optional, addition).

Provided by Mark Bittman

Categories     breakfast, easy, quick, weeknight, pastas, main course

Time 20m

Yield 2 or 3 servings

Number Of Ingredients 7

Salt
1/2 pound thin spaghetti
6 tablespoons extra virgin olive oil or lard
2 large cloves garlic, lightly smashed and peeled
4 eggs
Freshly ground black pepper
Freshly grated Parmesan or pecorino cheese, optional

Steps:

  • Bring a pot of salted water to the boil. Start the sauce in the next step, and start cooking the pasta when the water boils.
  • Combine garlic and 4 tablespoons of the oil in a small skillet over medium-low heat. Cook the garlic, pressing it into the oil occasionally to release its flavor; it should barely color on both sides. Remove the garlic, and add the remaining oil.
  • Fry the eggs gently in the oil, until the whites are just about set and the yolks still quite runny. Drain the pasta, and toss with the eggs and oil, breaking up the whites as you do. (The eggs will finish cooking in the heat of the pasta.) Season to taste, and serve immediately, with cheese if you like.

Number Of Ingredients 3

1 (1-pound) box bowtie pasta
Oil, for frying
Salt, to taste

Steps:

  • Cook the pasta according to package directions, but for only half of the cooking time. Drain the pasta. Heat the oil in a frying pan over medium high heat. You need enough oil to cover the pasta, depending on the size of your pan probably around a 1/2 cup. Working in batches, fry the pasta until golden, flip & then fry until both sides are light golden brown. Remove from the pan and immediately season with salt. Repeat the process until all of the pasta is fried.

Here's a great way to use up that extra cooked pasta. You can use sauced or plain, long or short pasta, as long as it is already cooked. Makes a great lunch dish, or a good side dish with your favorite meat for a quick summer dinner.

Provided by Terri F.

Categories     Lunch/Snacks

Time 20m

Yield 4 serving(s)

Number Of Ingredients 7

4 tablespoons butter
3 cups cooked spaghetti (or other pasta)
2 eggs (large)
1/3 cup milk
1/3 cup parmesan cheese (fresh is best, but packaged will do) or 1/3 cup romano cheese, shredded (fresh is best, but packaged will do)
2 tablespoons fresh parsley (or mix the two) or 2 tablespoons chives, minced (or mix the two)
fresh ground pepper (use a lot)

Steps:

  • Melt the butter in a heavy nonstick skillet.
  • Have the pasta out at room temperature in a large bowl.
  • In a small bowl, beat together the eggs, milk, cheese, fresh parsley and/or chives, and a lot of freshly ground black pepper.
  • Pour egg mixture over pasta and toss it well.
  • When butter has heated past the point of foaming, add pasta and flatten into a big pancake.
  • Cook over medium heat until the bottom forms a golden brown crust.
  • Flip the"pancake" over and continue to cook until that side also forms a golden brown crust.
  • Slide pancake out onto a hot plate; cut in wedges; serve hot.
  • Pass additional grated cheese!

FRIED GARLIC PASTA

Fried Garlic Pasta image

This is for garlic lovers! Tiny pieces of garlic are fried in olive oil and served over pasta, then topped with Parmesan cheese. Don't be scared off by the amount of garlic used, it caramelizes and sweetens as it fries in olive oil. It has become a favorite in my family, including my kids.

Time 28m

Yield 6

Number Of Ingredients 4

1 pound angel hair pasta
2 cups olive oil for frying
2 bulbs garlic, peeled and diced
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat olive oil in a saucepan over medium heat until a piece of garlic dropped into the oil slowly bubbles. Add the garlic, and cook and stir until golden brown, 5 to 7 minutes. Remove garlic from the oil with a slotted spoon and set aside; reserve oil.
  • To serve, place the pasta onto individual serving dishes and sprinkle with fried garlic. Drizzle with a little of the frying oil and sprinkle with Parmesan cheese. Reserve remaining garlic-flavored oil for another use.

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 12

Kosher salt
8 ounces bow-tie pasta
About 6 cups vegetable oil, for frying
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes
1/2 teaspoon freshly ground black pepper
1/4 cup finely grated fresh Parmesan
One 24-ounce jar marinara, heated, for serving

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook about a minute less than the recommended cooking time. Drain the pasta and spread it in a single layer on a baking sheet lined with parchment. Let cool and pat completely dry with paper towels.
  • Pour about 2 inches of oil into a large Dutch oven and heat over medium heat until a deep-fry thermometer reaches 375 degrees F.
  • Fry the pasta in 3 batches (about a cup each batch) until golden brown and crispy, 2 to 3 minutes.
  • Meanwhile, to a mini processor or spice grinder, add the basil, thyme, rosemary, oregano, garlic powder, red pepper flakes, black pepper and 1/2 teaspoon salt. Process until finely ground.
  • Remove the fried pasta from the oil, drain on paper towels, then sprinkle immediately with some of the seasoning mix. Repeat, working in batches, with the rest of the pasta and seasoning mix.
  • Put the fried pasta on a serving platter and sprinkle with the Parmesan. Serve alongside the warm marinara for dipping.

  • Pour some extra virgin olive oil into a nonstick frying pan, or wok, over medium high heat, and add the pasta (for this much pasta, use about 2 tbsp).
  • Add a little more oil over the top of the pasta, and let it begin to sizzle for a few minutes before stirring it. Every now and then, turn the pasta; depending on how crispy you want it, leave it longer without turning it for a crispier result.
  • It's ready when it's hot, so it's a matter of taste to decide when to stop cooking it. I love it very crispy, so I let it cook longer. (It is excellent most any kind of pasta.)
