Virginia is known for its fresh Chesapeake Bay oysters, and this crispy Deep Fried Oysters recipe is the best way to prepare them!

Number Of Ingredients 13

1 pint fresh shucked oysters (about 18 oysters total)
Peanut oil, for frying
1 cup buttermilk
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon kosher salt
1 teaspoon Old Bay seasoning
½ teaspoon black pepper
1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon minced fresh dill or parsley, optional
1 ½ tablespoons freshly-squeezed lemon juice
Salt and pepper, to taste

Steps:

  • For the Tartar Sauce: Combine all of the ingredients in a small bowl. Cover and refrigerate until ready to use.
  • Heat oil in a deep fryer to 350°F, in a deep cast iron skillet, or in a Dutch oven over medium heat to a depth of about 2-3 inches, until it reaches 350°F. If you don't have a deep-fry thermometer, sprinkle a few drops of water on the hot oil. If it sizzles, the oil is hot enough.
  • Drain the oysters in a colander and pat dry with paper towels. Use a toothpick to poke a small hole in the large round part of each oyster.
  • Put the buttermilk in a shallow dish. In a separate shallow dish, combine the cornmeal, flour, salt, Old Bay seasoning and pepper.
  • Add the oysters to the buttermilk and soak for a few minutes. Remove the oysters from the buttermilk, gently shake off excess liquid, and dredge in cornmeal mixture to coat on all sides. Shake off excess breading and transfer to a wire rack.
  • Working in batches so that you don't overcrowd the pan, fry oysters until golden and crispy, about 2-3 minutes. Drain on paper towels, season with additional salt and pepper (if necessary) while they're still warm, and serve hot with tartar sauce or other dipping sauce.

Growing up in Maryland Oysters are a way of life and deep fried oysters are crispy golden nuggets from the sea!

2 pints Raw Shucked Oysters
2 tsp Seafood Seasoning
3/4 cup Milk
1 tbsp Hot Sauce
2 cups All-Purpose Flour
1/2 cup Cornstarch
1 tbsp Seafood Seasoning
2 Lemons (Sliced into wedges)
Fresh Parsley
2-3 Qt Canola Oil (For Frying)

Steps:

  • Remove shucked oysters from the jar or container and drain in a colander. Place oyters in a container and add milk, hot sauce and seafood seasoning. gentling fold the ingredients together then place in the fridge with a lid for a minimum of 30 minutes and no longer then 8-10 hours.
  • Prepare the dredge by combining all ingredients into a wide shallow container and set aside
  • Heat up your frying oil to a temperature of around 350 degrees F. Try to maintain this temperature as close as possible. the temperature will lower as you add the oysters. Let the oil temperature recover before adding your next batch.
  • While you're waiting for the oil to come up to temp drain off any liquid from the oysters and then begin tossing them into the dredge in small batches. Make sure to completely coat the oysters in the flour mixture. shake off any exsess flour and set oysters on a tray.
  • carfully drop the oysters into the oil making sure not to over crowd the pot and make sure the oysters dont stick together. Occasionally stir the oysters gently with a strainer to keep them seperated. the oysters are fully cooked as soon as they begin to float. Sould be about 3-5 minutes total frying time. You will need to work in batches depending on the size of your fryer.
  • Scoop fully cooked oysters out of the oil with a strainer onto a tray lined with paper towels and immediately season with seafood seasoning. Serve with lemon, fresh parsley and cocktail or remoulade sauce.

OYSTERS
3/4 c all purpose flour
1/2 c self rising cornmeal
1/2 tsp all purpose seasoning (i use everglades)
1/2 tsp paprika
salt and pepper to taste
3/4 c buttermilk
1 pt oysters, drained
cooking oil for frying
CHIPOTLE LIME DIPPING SAUCE
1/2 to 1 canned chipotle in adobo, finely chopped (depending on how hot you like it)
1/2 tsp adobo sauce from the chipotle can
1/2 c mayonnaise
1/2 tsp cilantro, dried
1 tsp lime juice
1 tsp ground cumin
salt to taste
COCKTAIL SAUCE
1/2 c ketchup
1/2 c chili sauce
2 Tbsp horseradish sauce, prepared
1 Tbsp fresh lemo juice
louisiana hot sauce to taste, couple dashes
salt to taste

Steps:

  • 1. OYSTERS: In a heavy pot, over medium heat, add 3 to 4 inches of vegetable oil and heat to 350 degrees F. NOTE: I use an electric deep fryer.
  • 2. In a shallow bowl, combine the flour and cornmeal with the all purpose seasoning, paprika, salt, and pepper.
  • 3. Drain oysters well. In a medium bowl, pour the buttermilk over the oysters. Lift the oysters out of the buttermilk, letting any excess drip off, and dredge them in the seasoned flour mixture.
  • 4. Fry them in batches, turning them often, until golden, about 1 to 1 1/2 minutes. Transfer to a paper towel lined plate to drain.
  • 5. CHIPOTLE LIME DIPPING SAUCE: In a small bowl, mix together chipotle, adobo sauce, mayonnaise, cilantro lime juice, and cumin. Taste and add salt, and adjust seasonings. Refrigerate until ready to serve.
  • 6. COCKTAIL SAUCE: Mix all ingredients together.

1 tablespoon Creole mustard
1 tablespoon paprika

Steps:

  • Heat oil in a deep fryer to 350 degrees F.
  • Whisk together the buttermilk, garlic powder, paprika and hot sauce in a casserole dish. Whisk together the flour, cornmeal, salt and pepper together in a separate casserole dish.
  • Add the oysters to the buttermilk and let soak. Then remove, letting the excess drip off, and dredge through the cornmeal mixture, tapping off the excess. Fry in the hot oil in batches, until golden and crisp, about 2 minutes. Remove to a paper towel-lined plate and sprinkle with salt and pepper. Serve hot with the Remoulade Sauce.
  • Mix together the mayonnaise, mustard, paprika, vinegar, Worcestershire sauce and hot sauce in a small bowl until well combined. Season with salt and pepper. Serve immediately or cover with plastic wrap and refrigerate until serving.

1 large egg, beaten
1/4 cup buttermilk
1 cup finely crushed saltines
1/2 cup cornmeal
Kosher salt
Black pepper
Cayenne
Oil for frying
Sliced limes for serving
1 canned chipotle in adobo, finely chopped
1/2 teaspoon adobo sauce from the chipotle can
1/2 cup mayonnaise
1 teaspoon chopped cilantro
1 teaspoon lime juice
1/4 teaspoon ground cumin
1 teaspoon lime juice
Kosher salt

Steps:

  • Drain the oysters, reserving 1/4 cup of the liquid. Pat the oysters dry.
  • In a bowl, mix together the egg, buttermilk and reserved oyster liquid. In another bowl or a plate, stir together the crushed saltines and the cornmeal. Add to both the egg mixture and the breading mixture a sprinkle of salt, black pepper and cayenne, to taste.
  • In batches, dip the oysters into the breading, then into the eggs and then back into the breading again. Place breaded oysters on a large plate or sheet. Repeat until all the oysters are coated.
  • In a large, heavy skillet heat 1/2 inch of oil on medium heat until it reaches 350 degrees. Cook the oysters for 2 to 3 minutes, turning once, until the fried oysters are light brown. Depending on the size of your skillet, you will probably have to do in several batches. Drain on paper towels.
  • To make the chipotle-lime dipping sauce, mix together the finely chopped chipotle, adobo sauce, mayonnaise, cilantro lime juice, and cumin. Taste and add salt, and adjust seasonings.
  • Serve the oysters with the sauce and sliced limes.

1 teaspoon cayenne pepper

2 eggs
2 tablespoons milk
2 cups fresh bread crumbs
1/2 cup vegetable oil
1 cup homemade or prepared mayonnaise
1 teaspoon Dijon mustard
1 1/2 tablespoons capers
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh tarragon
2 teaspoons paprika
1 teaspoon cayenne pepper
Juice of 1/2 lemon
1 clove garlic
2 anchovy fillets
1 dash Worcestershire sauce
3 oven roasted tomatoes
Salt and pepper

Steps:

  • Season flour with cayenne and salt and pepper. Combine the eggs and milk.Toss shucked, drained oysters in the seasoned flour, then dip in egg/milk mixture followed by the bread crumbs. In saute pan over medium high heat gently fry on both sides until crisp. Do not crowd pan, fry approximately 6 oysters at a time. Drain on clean paper towels. Mix all ingredients for remoulade sauce in food processor and serve oysters on cleaned half shell with remoulade sauce on bottom and garnished with fresh herbs.

32 ounces shucked oysters
1 cup plus 1 tablespoon milk
1 tablespoon water
1/4 teaspoon cayenne pepper
2 eggs
1 cup all-purpose flour
1/2 cup cornmeal (recommended: Indian Head)
1/2 teaspoon freshly ground black pepper
Kosher salt
Vegetable oil, for frying
Four 6-inch hoagie loaves
Remoulade Sauce, recipe follows
4 leaves romaine lettuce
1 to 2 lemons
1 1/4 cups mayonnaise
1/4 cup stone-ground mustard
1 clove garlic clove, smashed
1 tablespoon pickle juice
1 tablespoon capers
1 teaspoon prepared horseradish
1/4 teaspoon cayenne pepper
1/4 teaspoon hot paprika
1/2 teaspoon hot sauce (recommended: Frank's Red Hot)

Steps:

  • Drain the oysters and place in a small bowl. Cover with 1 cup milk and let soak for 15 minutes. In a medium bowl, whisk together remaining milk, water, cayenne and eggs. Place the flour, cornmeal, black pepper, and salt into a brown paper bag, close and shake to mix.
  • In a large heavy-bottomed pot, pour enough oil to fill the pan halfway. Heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F.
  • Drain the oysters from the milk. In batches dip oysters in the egg mixture then drop in the paper bag. Close and shake. Remove to a plate and repeat with the rest of the oysters. When oil is at 360 degrees F, fry oysters in batches. Do not overcrowd. Cook turning once until golden brown and cooked through, about 3 minutes. Remove to a paper towel. Repeat with remaining oysters.
  • To serve, cut sandwich loaves in half horizontally. Slather a generous amount of Spicy Remoulade Sauce on the inside. Place a lettuce leaf inside and fill generously with oysters. Squeeze fresh lemon juice over oysters just before serving.
  • Place all ingredients into a food processor and blend until smooth. Chill until ready to serve.

12 large oysters (shucked)
2 cups flour
1 teaspoon salt
1/2 teaspoon pepper
3 large eggs (whipped)
2 tablespoons half and half
1 cup cornmeal
3 cups peanut oil (for frying)
1/2 cup mayonnaise
1/4 cup sour cream
2 teaspoons dijon mustard
1 teaspoon whole grain mustard
1 tablespoon ketchup
1 teaspoon tarragon vinegar
1/2 teaspoon tabasco
2 teaspoons capers (chopped)
1 scallion (white and pale green parts, thinly sliced)
salt & pepper (to taste)

Steps:

  • Combine the mayonnaise, sour cream, dijon, whole grain mustard, ketchup, vinegar, tabasco, capers and scallion in a bowl. Whisk to combine. Taste for seasoning and add salt and pepper as needed. Set aside.
  • Set up a dredging station with 3 shallow bowls. The first bowl is flour, salt and pepper, mixed together to combine. 2nd bowl is whipped eggs & half and half. 3rd bowl is cornmeal.
  • Place several layers of paper towels on a baking sheet and set aside.
  • Heat oil in a fryer or dutch oven to 350-375°. Test oil by dropping a grain of rice into the oil. If it immediately comes to the surface and starts to cook, it's perfect.
  • Pat oysters lightly with a paper towel. Dip one oyster into the flour mixture to lightly coat, transfer to the eggs and coat, then dip in cornmeal. Transfer the oysters to the hot skillet, cooking no more than 3-4 at a time. Cook for 2-3 minutes, flipping halfway through. Transfer oysters to the prepared pan and continue with the rest of the batch.
  • Serve oysters with the remoulade sauce.

Jah Sang Ho - Oysters are one of those three fruits of the sea permissible to Buddhists and were therefore insisted upon for New Year lunch by my grandmother. Cooking them with a batter is traditional. Their name, ho see, sounds like the Chinese words for good business.

Batter
1 1/2 cups bleached all-purpose, high-gluten flour
10 ounces cold water
3/4 teaspoon salt
2 tablespoons baking powder
2 tablespoons peanut oil
5 cups peanut oil
20 medium-size fresh oysters, opened, removed from shells, patted dry, dusted with flour

Steps:

  • Combine all batter ingredients in a bowl and reserve.
  • Heat wok over high heat for 1 minute. Pour in peanut oil, heat to 375°F. Dip each oyster into the batter until well coated. When a wisp of white smoke appears, lower oysters into oil. Deep-fry 5 at a time until light brown, about 3 minutes. Remove oysters, place in strainer, drain over a bowl.
  • Deep-fry last batch to a golden brown, about 4 minutes. Place cooked oysters back in oil for 2 minutes more so they become golden brown. During frying, always control heat. You may need to lower if oysters brown too much, or raise if they cook too slowly.

FRIED OYSTERS RéMOULADE



Fried Oysters Rémoulade image

Yield Makes 2 servings

Number Of Ingredients 10

2 dozen oysters (such as Belon) on the half shell
1/4 cup cornichons or dill pickles
1 cup mayonnaise
3 tablespoons chopped fresh parsley leaves
1 1/2 tablespoons minced shallot
1 1/2 tablespoons tomato paste
1 tablespoon Tabasco sauce
1 tablespoon fresh lemon juice
2 quarts vegetable oil for deep-frying
1/2 cup cornmeal

Steps:

  • Transfer oysters to a bowl and chill, covered. Clean and dry oyster shells. Line a shallow baking pan with a double layer of paper towels.
  • Finely chop cornichons or dill pickles and in a bowl whisk together with remaining rémoulade ingredients and salt to taste until combined well. Transfer rémoulade to a serving bowl.
  • In a 4-quart heavy saucepan heat oil over moderate heat until a deep-fat thermometer registers 375°F.
  • Preheat oven to 200°F.
  • In a blender blend cornmeal 30 seconds, or until it is powdery, and in a bowl season cornmeal with salt. Drain oysters in a colander and dip each in cornmeal to lightly coat, transferring to a plate. Working in batches of 6, fry oysters, until golden, about 2 minutes. With a slotted spoon transfer oysters as fried to baking pan and keep warm in oven. Return oil to 375°F. between batches.
  • Serve oysters on shells with rémoulade.

Butter-Fried Oysters image

There are easier ways to fry oysters, and faster ways, too, but if you're going to bother to make them at home, you might as well have the best way. I won't pretend it's not a little bit of a project. There are bread crumbs to make, from a day-old French loaf. It's easy if you have a blender or food processor - just remove the crust and pulse the cubes into fluffy crumbs. My recipe also calls for clarified butter. It can be made ahead, it keeps, and it really makes a difference.

1 pound unsalted butter
1 large, day-old French loaf or other hearth-style white loaf
1 cup all-purpose flour
Salt
pepper
24 shucked oysters, drained
3 eggs, lightly beaten
Red-pepper mayonnaise, optional
Lemon wedges, optional
Watercress or arugula, optional

Steps:

  • Melt the butter in a small saucepan over low heat, then raise the heat a little and cook at a bare simmer for about 10 minutes. Allow to cool slightly, then pour through a fine-meshed strainer. (Save any milky juices, solids or foam left behind to add to rice or vegetables.) The clarified butter can be kept in a covered jar in the refrigerator for several weeks.
  • Remove the crusts from the French loaf. Tear the bread into chunks and pulse in a food processor or blender to make about 4 cups of crumbs. The crumbs will keep in the refrigerator, loosely covered, for several days, or for longer in the freezer, tightly wrapped.
  • Season the flour generously with salt and pepper. Dip the oysters in the flour and then in the beaten eggs. Spread a layer of bread crumbs on a baking sheet. Place the oysters on the sheet and sprinkle with more crumbs. Roll the oysters in the crumbs so that they are well coated, adding more if necessary.
  • Heat a wide cast-iron skillet over a medium-high flame. Add clarified butter to a depth of 1/2 inch. Toss in a bread crumb - if it browns quickly the butter is hot enough. Carefully slip in breaded oysters in a single layer, frying in batches if needed to avoid crowding. Adjust the heat to keep the oysters gently bubbling in the butter. It should take about 2 minutes to get a golden, crisp coating. Turn the oysters and brown the other side, then drain on kitchen towels. Serve hot with red-pepper mayonnaise, lemon wedges and arugula or watercress, if you like.
