NO-FUSS HAM PATTIES
Folks always want more whenever I make these ham patties. They're fast and easy to make, too.

Steps:
- In a large bowl, combine the egg, pickle relish, 6 tablespoons bread crumbs and mustard. Crumble ham over mixture and mix well. Gradually add milk if mixture is too thick. Shape into four patties. Sprinkle each side with remaining bread crumbs. , In a large skillet, cook patties over medium heat in butter for 4-5 minutes on each side or until a thermometer reaches 160°.

MARINATED PORK FRIED RICE RECIPE
Steps:
- Heat wok or very large cast iron skillet over high heat. Add 1 tbsp. oil. When oil smokes, add 1/3 of the pork, stirring constantly until it is just under done. (about 2 minutes.) Transfer pork to a plate or bowl and continue cooling the rest in batches.
- Add another tbsp oil to wok or skillet. Add rice, garlic and peppers one at a time, stirring each for a few seconds over high heat. Add oil as necessary.
- Add eggs and toss to coat rice. continue stir-frying until eggs appear slightly dry and mixture is completely coated.
- Add remaining ingredients and toss to combine.
- Add pork, stir thoroughly and serve immediately.

Steps:
- 1. Cut ham steak (or ham that has been sliced between 1/4 to 1/2-inch thick) into 2 to 3 pieces.
- 2. Heat a large skillet that has been drizzled with olive oil on medium heat till hot.
- 3. Dredge each ham slice in milk and then in flour, coating both sides.
- 4. Fry until golden brown then turn to other side and fry till golden brown. You may have to drizzle more olive oil in the skillet when you turn the ham.
- 5. Serve hot and enjoy.

- In a shallow bowl, beat eggs and milk. In another bowl, combine the bread crumbs, cheese and parsley. Dip ham cubes in egg mixture, then roll in crumb mixture. , In an electric skillet, heat 1/4 in. of oil to 375°. Fry ham cubes, a few at a time, for 2 minutes on each side or until golden brown. Drain on paper towels., In a small saucepan, heat cheese and milk over medium heat for 3-4 minutes or until cheese is melted. Remove from the heat; stir in salsa. Serve with ham cubes.

- For the Glaze:
- (1½ cups glaze. 12-15 minutes.)
- Bring all ingredients to a boil in a small saucepan over medium-high heat. Reduce the heat and simmer over medium-low heat until mixture is syrupy (220F) and has reduced to 1½ cups. (12-15 minutes). If the sauce thickens too much before ready to use, reheat over low heat until desired consistency.
- Prepare steak while glaze is cooking.
- Remove cloves before serving.

- For the Ham:
- (8 minutes, Serves 2)
- Heat butter and oil on medium-high heat until butter foam hot, but not burned (right after butter foam has subsided).
- Place ham steak in skillet and cook, without moving, 3-4 minutes until browned.
- Flip steak over to brown steak on other side, 3-4 minutes.
- Transfer steak to serving dish.
- Serve with Apple Cider, Brown Sugar & Ginger Glaze.
- This dish works well for any meal of the day.

FRIED MINCED HAM, MARK'S
Mark's Polish family recipes were translated so I could share them. This was one he must have had at home with his mom in PA.

- 1. Take a large frying pan and bring to medium heat Heat the butter (or better yet, bacon grease) and sautee the onion and peppers Remove and put aside when finished (about 12-15 minutes), leaving the drippings in the pan. Put the bologna slices into the pan and fry in the drippings until the centers brown and the edges of the slices curl. Sprinkle with salt and pepper. Add the pepper and onion mix, stir and serve.
- 2. Notes: Green peppers can be substituted - the reds give a slightly sweeter flavor overall. Why is bologna referred to as "minced ham" here? It appears to be a regionalism from Pennsylvania, and occurs even in supermarket labelling.

- Warm a tablespoon of bacon grease, or oil, in a large skillet over medium heat. Swirl the oil to coat the surface of the pan. Pour the eggs into the pan and tilt as needed to spread across the skillet. Let the eggs cook for 2-3 minutes and then flip. Cook one more minute. Slide the egg out of the skillet onto a cutting board and allow it to cool. Cut into 1/2-inch wide strips and then and cut into small pieces.
- Add a tablespoon of grease, or oil, to the skillet. Add the mushrooms and toss to coat. Spread them across the skillet and let them cook for 2-3 minutes until lightly browned. Stir and cook until slightly softened, about 2 more minutes. Transfer the mushrooms to the plate with the chopped eggs.
- Add the remaining tablespoon of grease, or oil, to the skillet and increase heat to medium high. Add the rice and stir to coat. Continue stirring and cooking for about 2 minutes. Add the soy sauce and sesame oil. Stir well, to distribute the sauce throughout the rice. Cook for 5 minutes, stirring frequently, until the rice is heated through.
- Add the ham, corn, and peas. Stir and cook an additional 3-4 minutes, until everything is hot. Add the eggs, mushrooms, and green onions to the skillet. Sprinkle with pepper. Stir gently to mix. Push the rice out of the center of the skillet and add the butter. Allow it to melt and stir to distribute the melted butter throughout the rice. Taste the rice and add salt, only if needed. Enjoy!

- Put 2 teaspoons of the oil in a large skillet set over high hear. When hot, add the onion, carrot and bell pepper and cook, stirring occasionally, until they soften and begin to brown, 5 to 10 minutes. Lower the heat if the mixture begins to scorch. Transfer the vegetables to a bowl and toss in the ham.
- Put the remaining 2 teaspoons oil in the skillet and then the garlic and ginger. Stir once or twice and after about 20 seconds, begin to add the rice a little at a time, breaking up any clumps with your fingers and stirring well to combine everything. Add the peas and cook for 1 - 2 minutes, stirring often.
- Make a well in the center and more the lightly beaten eggs into it. Scramble them a little, then when they are almost done, incorporate them into the rice.
