Mac and Cheese Balls are CRISPY on the outside, CHEESY and CREAMY on the inside which makes them the ULTIMATE comfort food!

3 cups prepared macaroni and cheese (chilled)
1 cup shredded cheese (your favorite blend)
salt & pepper for seasoning
2 eggs
1 1/2 cups Panko breadcrumbs
2 cups oil for frying
Ranch, Marinara, or other sauce for dipping

Steps:

  • In a bowl, combine the leftover mac n cheese and the extra cheese.
  • Scoop into 1.5 inch balls and place on a baking sheet.
  • Freeze for 15 minutes.
  • While the balls are chilling, beat two eggs in a bowl with a little water.
  • In a separate bowl, add the Panko crumbs.
  • Remove the balls from the freezer, dip fully in egg wash, roll in Panko to completely coat, and place back on baking sheet. Repeat with remaining balls.
  • Return the balls to the freezer while you heat the oil to 375F.
  • When the oil is ready, fry the balls 3 to 4 at a time for 2 minutes or until golden brown.
  • Serve warm with your favorite dipping sauce!

This is a recipe from Paula Deen's magazine. Plan ahead, you will need to refrigerate the cheese sauce for 8 hours and the balls freeze for 2 hours. The chilling and freezing time is included in the prep time listed.

1 teaspoon salt, divided
2 cups uncooked elbow macaroni
1/2 cup milk
3 tablespoons milk
1 (12 ounce) package cheese spread, cubed
1 cup mozzarella cheese, shredded
1/4 teaspoon ground black pepper
4 large eggs
2 cups Italian seasoned breadcrumbs
1/2 cup yellow cornmeal
peanut oil, for frying

Steps:

  • Lightly grease a 13x9-inch baking dish. In large saucepan, bring water and 1/2 t salt to a boil over high heat. Add pasta, and cook 6-8 minutes, or until tender; drain well.
  • In a large bowl, combine hot cooked pasta, 1/2 cup milk, cheese spread, mozzarella cheese, 1/2 teaspoon salt and pepper; stir until cheeses are melted. Spoon into prepared baking dish; cover, and refrigerate 8 hours.
  • Roll macaroni and cheese into 1-inch balls; place on a baking sheet, and freeze 2 hours.
  • In a small bowl, whisk together eggs and remaining milk.
  • In a separate small bowl, combine breadcrumbs and cornmeal.
  • Dip balls into egg mixture, then dredge in breadcrumb mixture.
  • In a large Dutch oven, pour oil to a depth of 2 inches; heat to 350 degrees over medium heat.
  • Fry macaroni and cheese balls in batches, 3-4 minutes, or until golden brown. Drain on paper towels.

1 (7.25 ounce) package macaroni and cheese mix
2 tablespoons butter
¼ cup milk
1 cup shredded Cheddar cheese
¾ cup pimento cheese spread
1 cup shredded Italian cheese blend
2 cups Italian seasoned bread crumbs
½ teaspoon paprika
½ teaspoon chili powder
½ teaspoon ground black pepper
½ teaspoon white sugar

1 pinch cayenne pepper, or to taste

Steps:

  • Fill a pot with lightly salted water and bring to a rolling boil over high heat. Stir in the macaroni, and return to a boil. Cook, uncovered, stirring occasionally, until the macaroni is cooked through but still firm to the bite, about 7 minutes. Drain. Stir in the 2 tablespoons butter, the 1/4 cup milk, and the cheese packet from the package.
  • While the macaroni is still hot, stir in the Cheddar cheese, pimento cheese spread, and Italian cheese blend, and continue to stir until melted. Place the macaroni and cheese mixture in a container and refrigerate until firm, about 4 hours.
  • Line a baking sheet with parchment paper. Remove the macaroni mixture from the refrigerator, and, using a cookie scoop, scoop into balls. Place mac balls on the prepared baking sheet and freeze for at least 2 hours.
  • Heat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C).
  • Whisk the bread crumbs with the paprika, chili powder, black pepper, sugar, and cayenne in a shallow dish; set aside. Beat the eggs with the 3 tablespoons milk in a small bowl. Remove the mac balls from the freezer, coat in the egg wash, and then dredge in breading.
  • Fry the mac balls in small batches until golden brown, 3 to 5 minutes. Drain briefly on a paper towel-lined plate; serve hot.

1 (7.25 ounce) package macaroni and cheese dinner mix (such as Kraft®)
¼ cup milk
4 tablespoons margarine
¾ cup shredded sharp Cheddar cheese
nonstick cooking spray
½ cup panko bread crumbs
½ cup seasoned bread crumbs
½ teaspoon salt
½ teaspoon garlic powder
2 eggs, beaten

Steps:

  • Pour water into a bowl and bring to a boil over high heat. Stir in macaroni pasta from dinner package. Cook until tender, stirring occasionally, 7 to 8 minutes. Drain; do not rinse. Return to the pot and stir in included cheese sauce, milk, and margarine. Add Cheddar cheese and stir until well combined and cheese is melted.
  • Refrigerate macaroni and cheese until firm, 2 hours to overnight.
  • Scoop macaroni and cheese into 1 1/2-inch balls and place on a parchment paper-lined cookie sheet. Freeze for 1 hour.

2 cups vegetable oil, or more, as needed
2 large eggs, beaten
1 1/2 cups Panko
2 tablespoons chopped fresh chives

Steps:

  • Place macaroni and cheese into the refrigerator until firm, about 3-4 hours. Heat vegetable oil in a large stockpot or Dutch oven over medium high heat. Using a small cookie scoop, roll macaroni and cheese into 1 1/4-to-1 1/2-inch balls, forming about 12. Working one at a time, dip balls into eggs, then dredge in Panko, pressing to coat. 1 egg, or 2 egg whites
2 tablespoons cornstarch, or all-purpose flour
1/2 cup cracker crumbs, for dredging (optional)
vegetable oil, for frying
your favorite sauce, for dipping

Steps:

  • With an electric mixer or by hand, mix the cheese, egg and cornstarch (or flour) in a large bowl until a soft dough forms. Scoop 2 teaspoons of dough and roll into a ball. If desired, roll balls in cracker crumbs for an extra crispy coating. Refrigerate cheese balls until thoroughly chilled, about 30 minutes. In a medium frying pan, heat oil over high heat (350°F for deep frying). Fry cheese balls until golden brown, turning once, about 30-60 seconds per side. Drain on paper towels. 1 cup flour
1 teaspoon black pepper
1 teaspoon cayenne pepper

1 egg
1 cup breadcrumbs
1/4 cup wheat bran

Steps:

  • The night before you would like to make this dish, cook the box mix of mac and cheese according to the directions on the box. Pour the mac and cheese into an 8 x8, 9x9 or and flat pan in the refrigerator to set overnight.
  • Preheat oven to 350.
  • Line three bowls on the counter.
  • In the first bowl, combine flour, black pepper, cayenne pepper, garlic powder, and onion powder.
  • In the second bowl, break the egg and slightly scramble it.

1 pound grated Cheddar

3 cups seasoned bread crumbs
Vegetable oil, for frying
Marinara or Alfredo sauce, to serve

Steps:

  • Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Drain again and set aside.
  • In a saucepan, melt the butter over medium heat. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk the warmed milk into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. 1 tbsp. butter

1 1/4 c. whole milk

1 4 oz. jar diced pimentos, drained, rinsed and patted dry
1 tsp. kosher salt
1/4 tsp. cayenne pepper
3 large eggs
12 oz. kettle cooked potato chips
Vegetable oil, for frying

Steps:

  • Cook the macaroni according to the package directions. Drain and rinse the macaroni and set aside.
  • Melt the butter in a medium saucepan over medium heat. Add 1 tablespoon of the flour and cook 1 minute, stirring with a whisk. Whisk in the milk and cook 3-4 minutes until the mixture reaches a low boil and thickens. Reduce the heat to low and stir in the cheeses and mix until melted. Add the pimientos, salt, and red pepper and stir to combine. Fold in the macaroni. (The mixture will be very thick.)
  • Spread the macaroni mixture evenly into a 9-inch by 13-inch pan. Cover with plastic wrap and refrigerate for 2 hours or until cold.
  • Shape the cold macaroni mixture into 2-inch sized balls and place on a parchment lined sheet tray.
  • Place the potato chips in a gallon-sized zip-top bag. Using a rolling pin, gently roll over the bag to finely crush the chips. Pour the crushed chips into a shallow dish. Place the remaining 1 cup of flour in a shallow dish. Whisk the eggs in a small bowl. Roll each ball around in the flour, then dip in the eggs letting any excess egg drip off.   • Melt butter in a saucepan over medium heat. Sprinkle in flour and stir with a whisk. Cook for 2 minutes. Whisk in warm milk, working out any lumps. Cook for about 2 minutes until sauce has thickened. Remove from heat. Add both cheeses and stir until melted and smooth. Season with salt and pepper. Fold in macaroni noodles and pour into a shallow pan and refrigerate for at least 2 hours, until macaroni is cold.
  • Shape the cold mac and cheese into meatball-sized balls and place them onto a waxed paper-lined tray. Freeze overnight.
  • Beat together your eggs with your 2 tablespoons milk and pour it into a shallow bowl. Pour your bread crumbs into another shallow bowl. Remove the mac and cheese balls from the freezer. Dip the frozen balls into the egg wash then into the bread crumbs. Repeat these steps twice for each ball. This will give it a nice thick coat. Put back into the freezer until you are ready to fry.
