Steps:
- Thinly slice leeks. Use white and light green parts of leeks. Separate rings and place in colander. Rinse well and drain well. Try to get leeks as dry as possible.
- Heat olive oil and butter on med-high in frying pan large enough for all the leeks. Remember that they will wilt down!
- Add leeks to frying pan. Stir until all the leeks are coated with oil and butter. At this time, add tarragon, coriander and salt and pepper.
- Reduce heat to medium.
- Stirring frequently, cook until leeks are close to caramelized, approximately 25 minutes.
- Serve and enjoy.
BUTTERED LEEKS

- The day before you want to serve this dish, cut the leeks from top to root and wash thoroughly under cold running water. Thinly slice them on the diagonal and put into plastic bags and chill until ready to cook.
- To serve, put a large pan over a medium heat, add the butter and let it melt over the base of the pan. Add the leeks and plenty of seasoning and stir to coat in the butter. Turn the heat down to low, cover the pan and cook the leeks gently for about 15 minutes, stirring half way through until they are tender. Serve with extra butter and a sprinkling of thyme leaves.

FRIED LEEKS (GARNISH)
We like these on all kinds of burgers and fried or baked fish. And potatoes. And garlic bread. And beef. And mushrooms and other veggies. Or atop a salad. (OKAY, already, Sandi!) I have to make at least twice as much as I need to garnish a dish since I eat half of what I make while cooking. And why shouldn't I? I'm cooking! Be sure to stay close when frying leeks because they will burn quickly just to tick you off. The repercussions of an angry leek is just not something you really get over, you know?

- In a medium sauce pot heat oil to 350 degrees F. Sift cornstarch and flour together.
- Dust leeks in flour/cornstarch and fry until golden brown, about 30 seconds. Drain on a paper towel, season with sea salt.

- In a large saucepan or electric deep-fryer, heat oil to 365 degree F. Meanwhile, place leeks in a large bowl filled with ice water.
- In a medium bowl or shallow dish, stir together the flour, salt, and paprika. Using a slotted spoon, remove some of the leeks (about 3/4 cup) from water, allowing water to drip off (do not pat dry). Place in flour mixture and toss to coat.
- Add coated leeks to oil and cook for 1-1/2 to 2 minutes or until golden. Transfer with a slotted spoon to a tray lined with paper towels. Repeat with remaining leeks and flour mixture. Cover fried leeks with paper towels and let stand at room temperature up to 4 hours. Use as a garnish on grilled steaks. Makes 8 cups.
RECIPE: PAN FRIED CHICKEN AND BRAISED LEEKS | CBC LIFE

- Season chicken breasts generously on both sides with salt and pepper. Heat a non-stick frying pan over medium high heat and add 2 tbsp of olive oil. Place chicken breasts skin side down and cook for 6-8 minutes. If you try and flip the chicken and the skin sticks, it’s telling you it needs more time. Flip the chicken when ready and cook on the other side for another 6-8 minutes. Internal temperature should reach 165F. Remove chicken from pan and let rest on a plate sealed with tin foil to keep heat and moisture in.
- While the chicken cooks, prepare your leeks. Remove outer leaves, trim off dark green tops and root ends but make sure leek stays intact. Clean leeks thoroughly under running water. Slice leeks in half lengthwise, dry and set aside. Thinly slice dark green discarded part of leek and soak in ice cold water for 5-10 minutes until they start to curl. Use this as a garnish.
- To the pan with chicken drippings, add remaining olive oil, white balsamic vinegar, honey and stir. Place leeks cut side down in chicken pan and season with salt and pepper. Let sear for about 3-5 minutes until browned and caramelized. Flip leeks cut side up and add white wine. Simmer on medium high for 15 minutes or until leeks are tender. Add water as needed if wine evaporates before leeks are tender.
- To test if leeks are done, pierce with a paring knife. If leeks are very tender and knife pierces easily they are ready. Next add butter to leeks in pan and gently toss so it melts and coats them.
