AKROTIRI: FRIED HALLOUMI

This recipe is from week three of my food blog, "Travel by Stove." I am attempting to cook one meal from every country on Earth, and Akrotiri is my third stop. This very simple recipe requires a Halloumi cheese, which is made on the Island of Cyprus from a blend of goat and sheep's milk. It can usually be found in gourmet cheese shops.

1 (8 ounce) package halloumi cheese
1/2 teaspoon olive oil

Steps:

  • Slice the cheese about 3/8th inch thick, brush with olive oil on both sides and sear in a hot pan.
  • The cheese should be a golden color on each side. If you pan is hot enough, it should only take one to two minutes per side.

There's something irresistible about the salty, slightly rubbery texture of halloumi cheese. In this very simple recipe, the cheese is simply sliced and fried with caraway seeds. It's great with salad, or as part of a meze table.

225 g halloumi cheese (a standard block)
1 tablespoon olive oil
1 -2 teaspoon caraway seed
1/2 lemon

Steps:

  • Heat the olive oil in a frying pan.
  • Meanwhile, slice the halloumi into six even slices.
  • When the oil is hot, lay the halloumi slices in a single layer and scatter on the caraway seeds.
  • Cook until the halloumi is brown, then turn over and continue cooking until brown on the other side.
  • Remove from the pan and put on a serving plate, squeezing a little lemon juice over the cheese. Serve hot.
